GLAZED SALMON MISO SOUP RICE BOWL



Glazed Salmon Miso Soup Rice Bowl image

Stretch just half a pound of salmon to feed four people in this satisfying miso-based soup. At only two ounces of fish per person, you may be able to spring for the ocean-friendly wild caught variety.

Number Of Ingredients 13

3 tablespoons soy sauce
2 teaspoons brown sugar
1 teaspoon lemon juice
8 ounces skin-on salmon fillet (preferably wild-caught)
3 coins ginger, smashed
2 scallions, green tops thinly sliced and white bottoms halved
1/3 cup yellow miso
8 shiitake mushrooms, stems removed and caps sliced
2 heads baby bok choy, cut into 1/2-inch pieces
4 cups cooked rice, hot
6 sheets roasted seaweed snack, cut into thin strips with shears
Toasted sesame seeds, for garnish
Sambal or other hot chili sauce, for serving, optional

Steps:

  • Preheat a broiler with a rack set 4 inches from the heating element. Line a baking sheet with foil.
  • Whisk together 2 tablespoons of the soy sauce, the sugar and lemon juice in a medium bowl. Add the salmon and coat on all sides. Marinate at room temperature for 10 minutes, turning the salmon periodically. Place the salmon skin-side down on the prepared baking sheet. Broil until just cooked through, 4 to 8 minutes, depending on the thickness of the fillet. Cool enough to handle, then flake off bite-size pieces of salmon with a fork.
  • Combine 6 cups water, the remaining 1 tablespoon soy sauce, the ginger and scallion whites in a large saucepan. Bring to a boil and reduce to a simmer. Simmer for 10 minutes. Remove the ginger and scallions with a slotted spoon and discard. Whisk in the miso. Add the mushrooms and bok choy, and cook until the mushrooms are tender and the bok choy leaves wilt, about 2 minutes.
  • Mound 1 cup of the hot rice into four bowls. Ladle the vegetables and miso broth around the rice. Top each with some flaked salmon, sliced scallion greens, seaweed and a generous sprinkling of sesame seeds. Serve with sambal on the side if using.

Once you have the broth -- my recipe for salmon stock is here -- this comes together quickly. You can also use a basic Japanese dashi instead.

2 quarts salmon stock or dashi ((see headnotes))
1 pound soba noodles
1/2 pound cooked salmon scraps, (or diced salmon)
1/2 cup red or white miso
1/4 cup sliced green onions

Steps:

  • Get your salmon stock or dashi warm in a pot. Cook your soba noodles according to the instructions on the package. Drain and set some in each person's bowl.
  • Add some salmon to each bowl, along with some green onions.
  • Mix the miso with the stock -- you can double the amount of miso if you'd like -- and pour into each person's bowl. Serve at once.

2 garlic cloves, large, peeled, minced, divided
1/3 cup green onion, chopped
1/4 cup soy sauce (I like Tamari)
1 tablespoon dry sherry (Chinese rice wine works well too)
2 teaspoons sugar
1 teaspoon sesame oil, Asian
3/4 teaspoon chili-garlic sauce
4 salmon fillets, skinless (approx. 6 ounces each)
1 tablespoon olive oil
1 bok choy, large, cut crosswise into 1/2 inch wide strips
4 ounces shiitake mushrooms, stemmed, caps sliced

Steps:

  • Using a food processor combine 1 garlic clove, green onion, soy sauce, sherry, sugar, sesame oil, and chili-garlic sauce.
  • In a glass baking dish, arrange salmon and coat with marinade. Let sit for approximately 5 minutes.
  • Preheat your oven to 500 degrees.
  • On a rimmed baking sheet, arrange salmon, with some marinade still clinging. (Transfer the remaining marinade from the glass dish into a small sauce pan.).
  • In the oven, roast the fish for about 8 minutes, or until just opaque in center.
  • On the stove top over medium-high heat, bring the sauce to a boil and set aside to use a a glaze for the fish.
  • Over a high flame, heat olive oil in a large nonstick pan.
  • Add bok choy and mushrooms and remaining garlic.
  • Stir fry veggies until bok choy is wilted and the mushrooms are tender (approx. 4 minutes). Season, to taste, with salt and pepper.
  • Divide vegetables among four plates. Top with salmon and brush with glaze.

One 4-inch square dried kombu, cleaned with a damp cloth
2/3 cup bonito flakes (fish flakes)
1/3 pound (1 package) enoki mushrooms, a few reserved for garnish
2 tablespoons miso
2 scallions, finely sliced

Steps:

  • In a pot, combine the kombu and water to cover and bring to a boil. Remove the kelp and discard. Add the bonito flakes, stir well, and remove from the heat. Let the flakes settle to the bottom of the pot. Strain the stock through a fine sieve, discarding the bonito flakes. Return the stock to the pot and add the mushrooms.
  • Cook over moderate heat for about 3 minutes, or until the mushrooms have softened. In a small bowl, stir together a ladle of stock with the miso and stir the mixture into soup. Divide the soup among 4 bowls and sprinkle with the reserved enoki and the scallions.

½ cup miso
⅓ cup mirin (Japanese sweet rice wine)
¼ cup sake (Japanese rice wine)
3 tablespoons firmly packed brown sugar
2 tablespoons soy sauce
1 ½ pounds salmon fillets
2 heads baby bok choy, halved lengthwise, or more to taste

Steps:

  • Stir miso, mirin, sake, brown sugar, and soy sauce in a shallow dish. Add salmon fillets; turn to coat. Marinate at room temperature, 10 to 15 minutes, or in the refrigerator for up to 2 days.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Line a baking sheet with aluminum foil. Transfer fillets onto the baking sheet, reserving marinade.
  • Place bok choy in the marinade; turn to coat. Arrange bok choy next to salmon on the baking sheet, reserving marinade.
  • Broil in the preheated oven until salmon is lightly charred on the edges, about 4 minutes. Flip salmon and bok choy; brush with reserved marinade. Continue cooking until salmon is browned and flakes easily with a fork, about 3 minutes. Transfer salmon to serving plates. Continue cooking bok choy until it is tender-crisp, 3 to 4 minutes more.

2 tablespoons white miso
2 teaspoons toasted sesame oil
2 teaspoons rice wine vinegar
1 tablespoon tamari soy sauce
1 teaspoon tamari soy sauce

1 tablespoon olive oil
4 (6 ounce) salmon fillets, skin removed
12 asparagus spears, tough ends removed
4 bunches baby bok choy, rinsed well and cut lengthwise into quarters

Steps:

  • Preheat the oven to 450°F.
  • 1. Whisk together the first 6 ingredients in a large bowl.
  • 2. Spread a rimmed (18×13-inch) half sheet pan with the tablespoon of olive oil.
  • 3. Dunk the salmon in the miso glaze and arrange along one edge of the baking sheet.
  • 4. Next, toss the asparagus in the glaze and arrange in one even layer in another corner of the baking sheet.
  • 5. Finally, toss the bok choy with the remaining glaze and arrange in a pile in the open space on the baking sheet (don't worry about piling it up a little-it will help them steam and cook through).
  • 6. Roast in the oven for 12 to 15 minutes, or until the fish is firm to the touch (if you'd like a little more color on the salmon, broil it for 2 minutes at this point).
  • 7. Remove from the oven, garnish with sliced scallions and sesame seeds, and serve.
