1 tablespoon canola oil
5 pounds pork butt (shoulder roast) cut into 2-inch slices
2 tablespoons minced garlic
1 teaspoon minced ginger
2 cups water, more if needed
⅓ cup soy sauce
⅓ cup brown sugar
¾ cup white (shiro) miso

Steps:

  • Heat canola oil in a large Dutch oven over medium-high heat until hot. Sear pork slices until well browned on both sides, then remove. Stir in the garlic and ginger, cook until fragrant, about 30 seconds. Add the water, soy sauce, brown sugar, and miso; bring to a simmer, scraping the bottom of the pan to dissolve the caramelized juices.
  • Place pork into pot, add additional water if needed to cover pork with the sauce. Then, reduce heat to medium-low, cover, and simmer for 3 hours until the pork is tender, and the sauce has thickened.

2 garlic cloves, mashed
3/4 cup miso
1 1/2 cups sugar
3/4 cup shoyu

Steps:

  • Mix miso, sugar and shoyu thoroughly in a large pot.
  • Add ginger and garlic; mix well.
  • Place pork butt in pot and simmer for 2-1/2 to 3 hours until done and well soaked.
  • Slice and serve hot!

Japanese-Style Chasu Pork Belly for Spicy Miso Ramen image

Pork belly comes in many preparations across Asia. Like ramen, the origins of chasu pork belly are actually Chinese. This braised meat is sliced thinly and tops many ramen dishes.

1 cup sake
1 cup water
1/2 cup low-sodium Japanese soy sauce
1/4 cup granulated sugar
2 green onions, cut in half
One 2-inch knob fresh ginger, sliced
One 3 1/2-pound piece pork belly, skin removed (about 11 by 4 inches)

Steps:

  • Mix together the sake, water, soy sauce, sugar, green onions and ginger in a large pot.
  • Halve or quarter the pork belly into large, manageable pieces.
  • Transfer the pork belly pieces to the pot. Bring to just under a boil, but do not boil. Reduce the heat to a simmer poach slowly on the stove (alternatively, you can use an oven at 300 degrees F) until tender, about 2 hours 30 minutes.
  • Check for tenderness by piercing the middle of each piece. When tender, allow to cool in the liquid for 2 hours off the heat, then transfer to the refrigerator to completely rest overnight in the liquid.
  • The next day, remove the pork belly from the liquid and cut into 1/2-inch-thick slices. Warm the pork belly with a bit of sauce and serve as a topping for Spicy Miso Ramen with the various garnishes. Serve 2 slices per person.

4 racks St. Louis-style pork spareribs (8-10 lb. total)
2 dried shiitake mushrooms, finely ground in a spice mill, or 2 Tbsp. shiitake mushroom powder
½ cup red miso
¼ cup sunflower oil or other neutral oil
2 Tbsp. coarsely chopped oil-packed Calabrian chiles or 2 tsp. crushed red pepper flakes
½ medium onion, finely chopped
½ tsp. kosher salt
3 garlic cloves, finely chopped
1 (2-inch) piece ginger, peeled, finely grated
⅓ cup gochujang (Korean hot pepper paste)
¼ cup tamari or low-sodium soy sauce
¼ cup unseasoned rice vinegar
⅓ cup honey
Nonstick vegetable oil spray or vegetable oil (for foil)
6 scallions, thinly sliced
Fried shallots (optional; for topping)

Steps:

  • Place racks in upper and lower thirds of oven; preheat to 300°F. Pat ribs dry with paper towels. Sprinkle evenly on all sides with mushroom powder, patting to adhere, then rub miso all over to lightly and evenly coat. Wrap each rack in a double layer of foil, crimping edges to seal. Divide foil packets between 2 rimmed baking sheets (2 packets per sheet) and bake until meat is fork-tender at the thickest part but not falling off the bones, 2-2½ hours. Let cool slightly, then unwrap.
  • While the ribs are baking, heat oil and chiles in a medium saucepan over medium-low, stirring often, until chiles darken in color a few shades and are fragrant, about 3 minutes. Add onion and salt and continue to cook, stirring occasionally, until onion is softened and translucent, about 5 minutes. Add garlic and ginger and cook, stirring, until fragrant, about 1 minute. Add gochujang, tamari, and vinegar and cook until thickened slightly, about 5 minutes. Remove pan from heat and stir in honey.
  • Transfer mixture to a blender and purée until smooth and slightly glossy. Pour glaze into a small bowl or airtight container and let cool.
  • Heat broiler. Line a clean rimmed baking sheet with foil and lightly coat with nonstick spray. Cut each rack in half (this will allow you to puzzle all the ribs onto the sheet) and arrange, meaty side up, in a single layer on prepared baking sheet; brush with glaze. Broil ribs until glaze is set and slightly darkened in color (watch them closely so that the glaze doesn't burn), about 4 minutes.
  • Transfer ribs to a platter and top with scallions and fried shallots (if using).
  • Do Ahead: Sauce can be made 5 days ahead; cover and chill. Ribs can be baked 2 days ahead; let cool, then wrap tightly in plastic and place in an airtight container. Cover and chill.

2 pork chops (about 140g/5oz each)
2 tsp sesame oil
200g green beans , trimmed
2 tsp black or white sesame seeds , or a mix of both, plus extra to serve
2 tbsp miso paste
1 tbsp mirin
2 tbsp yuzu juice (or 1 tbsp each lime and grapefruit juice)
1 tbsp golden caster sugar
1 tsp English mustard

Steps:

  • Mix the sauce ingredients together in a small bowl. Rub a spoonful of the sauce over each pork chop. Reserve the rest to serve alongside.
  • Heat a griddle pan until hot and bring a pan of water to the boil. Drizzle the chops with 1 tsp of the sesame oil. Cook in the griddle pan for 5 mins each side, or until cooked through.
  • Meanwhile, cook the beans in the boiling water for 2 mins, then drain. Heat the remaining oil in the same pan, add the beans and sesame seeds, and cook for 2 mins. Serve the chops with the beans, the remaining miso sauce and an extra sprinkling of sesame seeds.

  • Stir together miso, oil, sugar, and fish pepper flakes in a small bowl. Rub mixture all over pork shoulder. Using kitchen twine, tie pork shoulder to shape into a uniform size. Wrap tightly in plastic wrap, and chill 8 hours or overnight.
  • Preheat oven to 300°F. Arrange onion slices in a single layer in a large cast-iron skillet. Unwrap pork shoulder; place on top of onions. Tent pork with a piece of parchment paper; cover with aluminum foil. Roast 2 hours. Uncover pork, and roast until internal temperature registers 150°F, about 30 minutes.
  • Toss apples with butter, salt, and black pepper. Scatter apples around pork, and roast until a thermometer inserted in pork registers 180°F and apples are crisp-tender, about 45 minutes, stirring apples halfway through roasting time. (Tent pork with another piece of foil if meat is getting too dark.) Transfer pork to a cutting board, and let rest 10 minutes before slicing. Serve pork with apples and onions.
