GRILLED TEXAS QUAIL
Steps:
- Marinate the quail in olive oil, garlic and fresh herbs in the refrigerator overnight.
- Remove from the refrigerator and sprinkle Creole seasoning blend on both sides. Grill on high heat over mesquite wood until done (about 4 to 5 minutes per side).
MISO MARINATED TOFU STEAK
Steps:
- Miso marinade:
- Put the sake, lemongrass, ginger, and garlic in saucepot and bring to boil. Continue to boil for one minute to cook out alcohol. Whisk in sugar and miso paste. Cook over low heat for five minutes. Remove from pot and cool.
- Tofu Steak:
- Place the tofu steak in (cooled) marinade and set aside. Let marinate for at least one hour.
- Stir Fry Sauce:
- Prepare the stir fry sauce by combining all ingredients in a mixing bowl. Whisk together and set aside.
- Edamame Puree:
- Place cooked edamame beans in a blender with vegetable stock and puree until smooth. Pass through a fine meshed sieve and finish with salt and pepper.
- Tofu Steak Preparation:
- Remove the tofu steak from marinade and bread in Japanese panko breadcrumbs. Place the breaded tofu in a fryer set at 350 and fry for approximately two minutes, or until golden-brown. Set aside.
- Stir Fry:
- Over high heat in a medium saute pan add the soy oil. Next add the mushrooms and shishito peppers to the pan and saute until golden. Add 3 oz of stir fry sauce to pan and cook briefly until sauce reduces slightly and coats the mushrooms and peppers. Be careful not to over-reduce the sauce and burn it. Remove from heat.

- Stir together the miso, mirin, sugar and sake, if using. Place the salmon fillets on a plate or in a medium food bag and cover with the miso marinade. Leave in the fridge for at least 30 mins or, better still, overnight.
- Heat oven to 200C/fan 180C/gas 6. Lightly oil a baking tray. Use kitchen paper to wipe off the marinade (don't be tempted to wash it off as you will lose some of the flavour). Place the fillets on the baking tray, skin side down. Cook in the oven for 15 mins until the fish flakes easily and is cooked through.
- Meanwhile, make the cucumber salad. Using a vegetable peeler, shave the cucumber into long, thin ribbons. Whisk together the rice wine vinegar, oil and sugar. Toss the cucumber ribbons in the dressing, then curl them up on two plates. Serve with the salmon and some plain white rice sprinkled with toasted sesame seeds.

ACHIOTE MARINATED QUAIL
Steps:
- Whisk all marinade ingredients together and marinate quail for at least one hour or up to 12 hours. Grill over hot coals or in grill pan. May be browned and baked in a preheated 350 degree oven for 20 to 30 minutes. Pull thigh away from breast of bird to check doneness?.no red should be visible or pierce breast with fork or toothpick ?.juices should run clear. These are small birds and will dry out if overcooked.

- In a small bowl, combine miso, sugar, sake and mirin.
- In a shallow container, combine the marinade and salmon. Marinate at least 30 minutes in the fridge.
- Heat the pan over medium low heat. place a parchment paper in a pan. Place salmon on top of the parchment paper so salmon doesn't burn. Cook 6-7 minutes both side or salmon gets the nice grill mark and color becomes opaque.

- Use poultry shears to snip off the wingtips from each quail. Cut along one side of the backbone from the tail end to the neck, then turn the quail around and cut along the other side of the backbone to detach it completely. Turn the bird over so the skin side is down. From the cavity, pull out the wishbones, shoulder bones and ribs – on quail, these bones are thin and detach easily. By the time you finish, each quail will have only the bones in the leg (thigh and drumstick), the breast, and those in the middle and drumette portion of the wings. Dry the fleshy parts of the quails with paper towels. Very lightly sprinkle salt over the birds. (The bones can be used to make poultry stock.)
- Roughly chop the nashi pear, ginger and garlic. Put the hatcho miso, nashi pear, sake, ginger and garlic in a blender or food processor (or use an immersion blender) and purée to a thick, rough paste. Cut the butter into small chunks, add it to the ingredients and purée again. Mix in the yuzu zest. Smear the paste over the entire surface of the quails then put them in bowl, cover with clingfilm and refrigerate for several hours.
- Heat the oven grill (broiler) to high. Lay the quails skin-side down on a lightly oiled grill rack. Slide the rack into the oven so the quails are about 2.5cm (1in) away from the heat element. Cook the quails for five minutes, then flip them over and cook another five minutes, or until done – the flesh will still be slightly pink at the centre, and the skin will be charred in spots. If the skin and meat get too dark before the birds are done, put them a little further away from the heat. Cut the quails into halves or quarters and serve hot or warm.
