A speedy guacamole-style purée that's ready in minutes and perfect for snacking or lunchboxes

400g frozen pea , defrosted
100g fat-free natural yogurt
juice 1 lemon
1 tsp ground cumin
small handful mint leaves
1 small red chilli , chopped
4 wholemeal pitta breads
500g carrot , cut into batons

Steps:

  • Whizz the peas, yogurt, lemon juice, cumin, mint and chilli together in a food processor to a texture you like. Divide between plastic tubs to pack into lunchboxes, or tip into a serving bowl. Lightly toast the pittas, then cut into wedges and serve with the dip and carrots.

This mint green dip can be whipped up within minutes. It's perfect with lightly salted potato chips.

Number Of Ingredients 7

1 cup frozen peas, thawed
1 tablespoon fresh mint (about 6 leaves; chopped if mashing by hand)
1/2 cup canned or cooked cannellini beans, drained and rinsed
1/4 cup extra-virgin olive oil
Juice of 1/2 lemon (about 1 tablespoon)
Pinch of flaky sea salt
Lightly salted potato chips, for serving

Steps:

  • Blitz all the ingredients together in a food processor so there is still a little texture to the dip, about 15 seconds, or longer if you prefer a smoother dip. (Alternatively, place the ingredients in a bowl and mash with a potato masher.)
  • Spoon the dip into a serving bowl. Serve with potato chips.

Great with veggies if you are feeling healthy or crisps if you are not. I use both petit pois or garden peas for this depending on whats around. I also use either fresh or frozen, just defrost the frozen ones first. The best way to serve this is to put the dip into a bowl and have a big board next to it with your veggies on. And have some salt and pepper to hand in case you need it. It's a good sociable way to start a meal. Remember this will only ever be as good as what you serve with it, for veg I like oval radishes and baby carrots, cos or romaine lettuce, celery etc. Try to get freshest you can, if they still have leafy bits on (carrots radishes etc - leave 'em on, they make great handles) Edit - I just made this and had no fresh mint. I subbed a generous tsp of mint sauce and forewent the lemon juice and it was great!

1 (200 ml) container yoghurt
1 -2 bunch of fresh mint, leaves picked
3/4 cup fresh peas
1/4 cup of freshly grated parmesan cheese
1/2 lemon, juice of

Steps:

  • Whiz the yoghurt and mint up in a food processor for half a minute or so.
  • Add the peas and the Parmesan and whiz again - the peas will break down and the yoghurt will become green.
  • Put into a bowl, correcting the seasoning with extra salt and pepper and a good squeeze of lemon juice.
  • Note: When you add the lemon juice and peas to the yoghurt, quite often it splits and turns into a kind of cheese, but this is absolutely fine. It depends on the type of yoghurt you use and how acidic your lemon is. Just pour away any excess water. Usually, though, it doesn't split and is more like a puree, but both ways are good.

SPICED PEA & COURGETTE FRITTERS WITH MINTY YOGURT DIP

These spiced pea and coriander fritters are easy to make ahead of time. Scatter with crunchy spring onions and serve with the cool minty yogurt dip

Number Of Ingredients 18

120ml Greek yogurt
½ garlic clove , crushed
1 tbsp good-quality extra virgin olive oil
3 tsp mint sauce (or 2 tbsp freshly chopped mint leaves)
100g gluten-free plain white flour
3 medium eggs
2 courgettes , grated and the moisture squeezed out
60g peas (thawed if frozen)
2 tbsp finely chopped mint leaves
2 spring onions , finely sliced
1 green chilli , deseeded and finely chopped
1 lemon , zested
1 ½ tsp ground coriander
1 ½ tsp ground cumin
¼ tsp baking powder
4 tbsp vegetable oil , for frying
100g feta , crumbled
3 spring onions , thinly sliced on a diagonal

Steps:

  • In a large bowl, mix together all the fritter ingredients, except the oil, until combined. For the yogurt dip, simply mix all the ingredients together in a small bowl with plenty of freshly ground black pepper and 1 tsp salt. The dip can be made in the morning and chilled.
  • When you're ready to cook the fritters, heat the oil over a high heat (you want to make sure the oil is really hot, so be brave!). Carefully drop 1 tbsp of batter into the pan - add only 4-5 tbsp at a time so you don't overcrowd the pan - and fry for about 2 mins each side until nicely crisp and golden. Remove from the pan and place on kitchen paper to absorb the excess oil. The fritters can be fried a couple of hours before serving, then reheated in the oven.
  • To reheat the fritters ready for serving, heat oven to 220C/200C fan/gas 7. Put the fritters on a baking tray and bake for 10 mins or until crispy and hot. Serve on a platter with the feta and spring onions scattered over, with the minty yogurt dip on the side.

  • Cook peas in salted boiling water until tender, 1 minute. Transfer to an ice-water bath; drain.
  • Pulse peas in a food processor with mint, lemon zest and juice, garlic, 2 tablespoons olive oil, and tahini.
  • Season with salt and pepper; drizzle with oil.
