HALLOUMI SALAD WITH ORANGE & MINT

A vegetarian favourite, we've given this salad an extra zing to really tantalise those taste buds

3 medium oranges , segments and juice
1 small bunch mint , leaves chopped
4 tsp white wine vinegar
3 tbsp olive oil
2 x 250g packs halloumi cheese , drained
50g walnut pieces, toasted
145g rocket , watercress and spinach

Steps:

  • Heat a large griddle or frying pan over a high heat. In a large bowl, combine the orange segments and juice, mint leaves, vinegar and olive oil. Season, then gently toss together.
  • Slice each block of halloumi into 8-10 pieces, then griddle or fry for 1-2 mins on each side until charred and beginning to melt.
  • Add the walnuts and salad leaves to the orange and mint, then toss together. Top with the griddled halloumi slices and season with some black pepper.

Halloumi is the hot new cheese! Well, really, it's ancient, not new--but it is best fried or grilled, so "hot" is fair, isn't it? This fresh salad combines halloumi with tomatoes, mint, and chickpeas, Mediterranean-style.

1 (14 ounce) can chickpeas, drained
2 large tomatoes, chopped
3 medium green onions, sliced
12 leaves fresh mint, chopped
1 medium lemon, juiced
2 tablespoons extra-virgin olive oil
salt and freshly ground black pepper to taste
7 ounces halloumi cheese, sliced

Steps:

  • Stir chickpeas, tomatoes, green onions, mint, lemon juice, and olive oil in a salad bowl. Season with salt and pepper; set aside.
  • Heat a dry nonstick skillet over medium-high heat. Add halloumi to the hot pan and cook, turning once, until deeply browned, 1 to 2 minutes per side. Remove to a cutting board and chop into 1/2-inch chunks.
  • Stir halloumi into the salad and serve immediately.

Found this in the NZ Sunday Star Times. Sounds like a nice light meal which I'm looking forward to trying.

1 1/2 cups quinoa
2 cups vegetable stock
12 cherry tomatoes
425 g chickpeas, drained and rinsed
120 g halloumi cheese, in chunks
4 cups fresh rocket
1/2 cup of fresh mint, chopped
1 lemon, zest and juice
1 tablespoon olive oil

Steps:

  • Cook Quinoa following packet directions and set aside.
  • Heat a non-stick frying pan. Add Haloumi and fry until golden brown. Set aside to cool.
  • In a large bowl combine the remaining ingredients. Add the Quinoa and Haloumi. Sprinkle over lemon zest and drizzle with lemon juice.
  • Mix well.
  • Serve with extra chopped mint.

Serve this halloumi, carrot, orange and watercress salad with a mustard and honey dressing for an easy lunch or starter. It takes just 20 minutes to make and delivers one of your 5-a-day

2 large oranges
1½ tbsp wholegrain mustard
1½ tsp honey
1 tbsp white wine vinegar
3 tbsp rapeseed or olive oil, plus extra for frying
2 large carrots, peeled
225g block halloumi, sliced
100g bag watercress or baby spinach

Steps:

  • Cut the peel and pith away from the oranges. Use a small serrated knife to segment the orange, catching any juices in a bowl, then squeeze any excess juice from the off-cut pith into the bowl as well. Add the mustard, honey, vinegar, oil and some seasoning to the bowl and mix well.
  • Using a vegetable peeler, peel carrot ribbons into the dressing bowl and toss gently. Heat a drizzle of oil in a frying pan and cook the halloumi for a few mins until golden on both sides. Toss the watercress through the dressed carrots. Arrange the watercress mixture on plates and top with the halloumi and oranges.

750g pack new potatoes , halved
200g frozen peas
250g pack halloumi , thickly sliced
juice 1 lemon
2 tbsp olive oil
small pack mint , chopped
75g pack pea shoots

Steps:

  • Cook the potatoes in a pan of boiling water for 15-20 mins or until tender, then add the frozen peas for the final 2 mins, drain and tip into a large serving bowl.
  • In a large, non-stick frying pan over a high heat, sear the halloumi until golden on both sides, then set aside.
  • Meanwhile, pour the lemon juice into a small bowl, whisk in the olive oil and mint, and pour over the peas and potatoes. Mix everything together, season, then fold in the pea shoots and halloumi. Serve immediately.

1 medium red onion, halved and thinly sliced
2 tbsp apple cider vinegar
2 oranges
4 handfuls rocket leaves
2 cooked beetroots, chopped
drop rapeseed oil, for frying
80g thinly sliced halloumi, slices halved
80g pomegranate seeds
2 tbsp pumpkin seeds
handful mint leaves
few sprigs dill, chopped

Steps:

  • Put the sliced onion in a bowl, add the vinegar and toss well. Cut the peel and pith from the orange then segment over the onion bowl to make sure that you catch any juice.
  • Pile the rocket onto plates and dot over the beetroot and orange. Rub a drop of oil around a non-stick frying pan then fry the halloumi in the pan for about 30 seconds each side until golden.
  • Stir the pomegranate into the onions and spoon this and all the dressing, over the rocket, then top with the halloumi and scatter with the pumpkin seeds, mint and dill.

This is a Delia Smith recipe and one of my favorite starters or lunch dish. It is supposed to serve four but in our house it serves two! The only thing I have changed over the years is that I leave out the salt from the flour, to season the flour I use some ground pepper and I have added some oregano to it. If you don't like coriander, use parsley instead and serve this with some toasted pita or bread of your own choice.

1 halloumi cheese
2 tablespoons seasoned flour
2 tablespoons olive oil
1 lime, juice and zest of
1 tablespoon white wine vinegar
1 1/2 tablespoons small capers, drained
1 clove crushed garlic
1 1/2 teaspoons grain mustard
1 1/2 tablespoons chopped coriander
2 tablespoons of a good quality olive oil
salt, to taste
milled pepper, to taste
some coriander, to serve

Steps:

  • Unwrap the cheese and pat dry with kitchen paper.
  • Using a sharp knife try to slice the cheese in 8 slices, halloumi tends to split.
  • Whisk together all the ingredients for the dressing.
  • Heat the oil in a frying pan; press each slice of cheese in the flour, coat on both sides.
  • When the oil is really hot, add the slices to the pan, fry them approx one minute on each side, they have turn a deep golden color.
  • Serve them with the dressing poured over and garnished with the coriander.

250g pack halloumi cheese , thinly sliced
flesh from 1kg/2lb 4oz chunk watermelon , sliced
200g pack fine green beans
small bunch mint , finely shredded
juice 1 lemon
1 tbsp olive oil , plus extra to drizzle
toasted pitta breads , to serve

Steps:

  • Heat grill to high. Lay the cheese on a baking tray in a single layer, then grill for 2 mins on each side until golden. Toss the watermelon, beans and mint together with the lemon juice and olive oil, season well, then layer on plates with the slices of halloumi.
  • Drizzle with a little more oil if you like, and then serve with warm pittas.

  • Break halloumi cheese into small pieces. Heat olive oil in a skillet over medium heat. Add halloumi and cook and stir until golden, about 3 minutes.
