These delicious and decadent mint-chocolate cookies are perfect for your next gathering.

1 pouch (1 lb 5 oz) Betty Crocker™ double chocolate chunk cookie mix
1/4 cup vegetable oil
2 tablespoons water
1 egg
1 package (4.67 oz) Andes crème de menthe thins

Steps:

  • Heat oven to 350°F. In medium bowl, stir cookie mix, oil, water and egg until soft dough forms. If dough is too stiff, stir in additional 1 to 2 teaspoons water.
  • Drop dough by rounded tablespoonfuls 2 inches apart on ungreased cookie sheets. Using thumb or handle of wooden spoon, make indentation in center of each cookie.
  • Bake 11 to 13 minutes or until edges are set. Remove from oven.
  • Unwrap candy pieces and place on center of each cookie. Bake an additional 1 to 2 minutes, or until candy is slightly melted. Let cool 1 minute before removing from cookie sheet to wire rack. Cool completely; store in airtight container.

This was a cookie recently shared at my friend Donna's annual cookie exchange. Kelly is our friend who brought the cookie that had everyone asking "Who made this?" "Can I have the recipe?" "Are there anymore???". I looked on the Zaar and didn't see any quite like this one. Hope you enjoy this delight. I would caution that you keep these separate from your other cookies otherwise everything will taste minty.

1 cup butter
1 cup powdered sugar
1 1/2 teaspoons peppermint extract
2 egg yolks
16 drops green food coloring
2 1/4 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup dark chocolate
3 tablespoons whipping cream
3 tablespoons butter
18 Andes mints candies, cut in half diagonally

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl, beat 1 cup butter and powdered sugar on medium speed until fluffy. Beat in peppermint extract, egg yolks and food coloring until blended. On low speed beat in flour, baking powder and salt.
  • Shape dough into 1-inch balls, place 2 inches apart on cookie sheets. Using end of handle of wooden spoon, press a deep well into center of each cookie.
  • Bake 10-12 minutes until set. Reshape wells with end of wooden spoon.
  • Cool completely-15 minutes.
  • In medium microwavable bowl, place chocolate chips, cream and butter on high 1 minute or until mixture looks melted but not too hot.
  • Fill each well with about 1 teaspoon mixture-wait about 10 minutes until chocolate mixture is slightly cooled down then garnish w/candy piece-you may need to test candy before inserting all of them.
  • Let stand 1 hour until chocolate is set.

1/2 cup sugar
1 cup butter, softened
1 teaspoon vanilla
1 egg yolk
1 1/2 cups flour
1/4 cup baking cocoa
1/4 cup butter, softened
1 cup powdered sugar
1 tablespoon milk
1/4 teaspoon peppermint extract
2 drops green food coloring
1/4 cup semi-sweet chocolate chips
1/4 teaspoon shortening

Steps:

  • Heat oven to 375. In large bowl, beat sugar, 1 cup butter and the vanilla with electric mixer on medium speed until fluffy. Beat in egg yolk until smooth. Beat in flour and cocoa.
  • Shape dough by rounded teaspoonfuls into 1 inch balls. On ungreased cookie sheet, place balls 1 inch apart. With inxes finger or thumb, make indentation in center of each ball.
  • Bake 7-9 minutes or until set. Immediately remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
  • In small bowl, beat 1/4 cup butter and the powdered sugar on low speed until smooth. Beat in milk, peppermint extract and enough food color for desired color. Spoon about 1/2 t. filling into each cookie.
  • Melt the chocolate chips and shortening, and drizzle over the tops of each cookie.

1/4 cup granulated sugar

1/2 cup nuts, chopped

Steps:

  • Preheat oven to 375°F.
  • Melt over hot (not boiling) water, 3/4 cup of the mint-chocolate chips; stir until smooth.
  • Remove from heat; cool to room temperature.
  • In a small bowl, combine flour, baking soda and salt; set aside.
  • In a large bowl, combine butter, brown sugar, sugar, and vanilla extract; beat until creamy.
  • Add melted chips and egg; beat well.

These are chocolate cookies with just the right amount of mint! These cookies usually pleasantly surprise people when they have never had them before. I can only find the green bags of Andes mint baking chips at Wal Mart, and I usually stock up on them, because this is fast becoming our friends' and is already one of my husband's favorite type of cookies. This recipe also doubles well.

2 1/4 cups all-purpose flour
2/3 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup shortening
3/4 cup granulated sugar
2/3 cup brown sugar, packed
1 teaspoon vanilla extract
2 large eggs
1 (10 ounce) package Andes mint baking chips

Steps:

  • Preheat oven to 350°F
  • Combine flour, cocoa, baking soda, and salt in a small bowl; set aside.
  • Cream butter, shortening, granulated sugar, and brown sugar in a large mixing bowl.
  • Add vanilla extract and eggs, beating well.
  • Switch from an electric mixer to a sturdy spoon, and gradually mix in the flour mixture.
  • Stir in mint chips. The dough will be VERY stiff.
  • Drop by well-rounded teaspoons (I use a cookie scoop) onto parchment-lined baking sheets.
  • Bake for 10 minutes, until centers are set.

  • With the mixer on low, slowly add the flour, until all combined. Once combined, cover, and refrigerate for 4 hours.
  • When ready to bake, remove from the fridge, preheat the oven to 350 degrees. Using a tablespoon of dough, shape the dough into balls, and place on a baking sheet. Using your thumb or the large rounded handle of a wooden spoon (or the lid to an essential oil bottle, which is what I used) create an indention into the top of the dough. Be careful to keep from having cracks, and if there are any, simply use your fingers to smooth the dough back together. Bake for 13 to 14 minutes.
