1 cup white sugar, or to taste
¼ cup freshly squeezed lemon juice, or to taste
1 tablespoon orange juice, or as needed
8 sprigs fresh mint, or as needed

Steps:

  • Place frozen peaches, separating any that have stuck together, into a food processor with sugar and lemon juice. Blend to the consistency of applesauce, adding orange juice as needed. Taste and adjust flavor with sugar and lemon juice. Serve immediately, garnished with mint sprigs.

Steps:

  • Combine sugar and water in a saucepan over medium-high heat and bring to a boil, 3 to 5 minutes. Boil for 1 minute, stirring occasionally. Add basil sprigs, lemon juice, and lemon zest. Remove from heat and allow to cool for about 20 minutes.
  • Pour into a 9x13-inch metal baking pan or two 8-inch metal cake pans.
  • Place in the freezer for about 30 minutes. Remove basil leaves and stir. Freeze for 6 to 8 hours, stirring sorbet with a fork about once per hour until all the liquid is frozen.
  • Scoop sorbet into individual serving dishes and garnish with lemon slices and fresh basil leaves.

2 cups heavy cream
1 (14 ounce) can condensed milk
1/4 teaspoon vanilla extract
1 tablespoon light brown sugar (optional)
1 cup fresh raspberry
1 cup diced fresh peach

Steps:

  • Place the heavy cream into a large bowl or the bowl of your stand mixer and whisk on a medium speed until soft peak. (You want the cream to just hold shape for 5 seconds when you pull the whisk out).
  • Add in the condensed milk and vanilla extract and mix on slow until combined. Taste and if required, add 1tbsp light brown sugar.
  • Add in the raspberries and peaches and fold in by hand, just until they're all covered, don't be tempted to over mix.
  • Pour into a 2lb loaf tin, cover with cling film and place in the freezer for 6-8 hours, until frozen through.
  • Ice cream will keep, covered, in the freezer for 1 month.

Steps:

  • INSTRUCTIONS: Place unopened can of peaches in freezer until solid (about 24 hours). Submerge unopened frozen can in very hot tap water for 1 minute. Open bottom side of can with can opener.
  • Pour any thawed syrup into food processor bowl. Remove fruit from can; carefully cut into 10 chunks. Place into food processor with sweetener, lemon juice, vanilla extract and almond extract (blender or mini-processors not recommended). Process until smooth, scraping blade as needed.
  • Serve immediately or freeze until ready to serve. Garnish with fresh mint, if desired.
