1/2 cup medium or coarsely cracked bulgur
1 1/2 cups boiling water
3/4 cup baby arugula leaves
2 large green onions, thinly sliced
3 tablespoons finely chopped fresh mint, plus fresh mint leaves for garnish
1/4 cup fresh lemon or lime juice
1 clove garlic, chopped to a paste
1/4 cup olive oil
Salt and freshly ground black pepper
Grilled shrimp, recipe follows
1/4 cup fresh lemon juice
3 tablespoons chopped fresh mint
1/4 cup canola oil
1/4 teaspoon ground black pepper
1 pound shrimp (20 to 24 size), shelled and deveined
Salt

Steps:

  • Place bulgur in a bowl and pour the boiling water over. Cover with plastic wrap and let stand until bulgur is tender and most of the water is absorbed, about 1 to 2 hours.
  • Drain off any excess liquid from the bulgur and stir in the arugula, green onions and mint.
  • Whisk together the lemon juice, garlic and oil and season with salt and pepper. Pour the mixture over the bulgur and season with salt and pepper.
  • Transfer tabbouleh to a platter and top with the grilled shrimp. Garnish with fresh mint leaves.
  • Combine juice, mint, oil and pepper in a blender and blend until smooth. Place shrimp in a bowl, pour marinade over and stir to coat evenly in the marinade. Marinate for 10 minutes.
  • Heat grill to high. Season shrimp with salt and grill for 1 to 2 minutes per side or until slightly charred and just cooked through.

1 pound large shrimp (about 36), peeled and deveined
3 tablespoons canola oil
Salt and freshly ground pepper
12 leaves green curly leaf lettuce
Serrano-Mint Sauce, recipe follows
Chili oil, for drizzling, optional
Fresh cilantro leaves
1 cup tightly packed mint leaves, plus more for garnish
2 serrano chiles, chopped
4 cloves garlic, chopped
One 1-inch piece fresh ginger, peeled and chopped
2 teaspoons sugar
1/4 cup white wine vinegar
2 tablespoons fish sauce
Salt

Steps:

  • Preheat the grill to medium-high. In a large bowl, toss shrimp in oil and season with salt and pepper. Grill the shrimp for 1 to 2 minutes on each side or until just cooked through. Be careful not to overcook the shrimp, or they will be tough and rubbery. Remove from the grill.
  • Place about 3 shrimp in each lettuce leaf. Drizzle with the Serrano-Mint Sauce and with a little chili oil, if desired. Sprinkle with a few cilantro leaves. Roll up the lettuce leaves, and eat immediately.
  • Place all ingredients, except for salt, in a blender. Pulse until smooth. Season, to taste.

The flecks of mint against the charred pink flesh of the shrimp creates a stunning presentation-and it's delicious. Ajwain seed-not exactly a seed, despite the name-is reminiscent of oregano. We've included it in the recipe in case you're close to an Asian market, but the dish works just as well without it. Similarly, curry leaves just happen to smell like curry; they aren't the reason why most curries taste the way they do, so they too can be left out. This would be a great main course with the Peas Pulao.

For the marinade
1 1/2 teaspoons (7.5 mL) roughly chopped garlic
1 Spanish onion, coarsely chopped
2 cups (500 mL) loosely packed fresh mint leaves
2 cups (500 mL) loosely packed fresh cilantro leaves
2 fresh or dried curry leaves 3 tablespoons (45 mL) chopped green serrano or bird's eye chili
1 1/4 cups (310 mL) plain yogurt (not low-fat)
1 tablespoon (15 mL) chickpea flour (also sold as gram flour or besan)
1 teaspoon (5 mL) crushed black peppercorns
1 teaspoon (5 mL) ground cinnamon
1 teaspoon (5 mL) ajwain seeds
Pinch of ground allspice
1 1/2 teaspoons (7.5 mL) finely chopped fresh ginger
4 teaspoons (20 mL) fresh lemon juice
For the shrimp
2 1/4 pounds (1 kg) shrimp (21/25 count), peeled and deveined
2 tablespoons (30 mL) vegetable oil
Melted ghee, for final basting
15 bamboo skewers, soaked in cold water for 15 minuteS

Steps:

  • Pound the garlic in a mortar and pestle to make a paste, and set aside. Place the onions, mint, cilantro, curry leaves, chilies, and yogurt into a blender and process until smooth. Transfer the mixture to a bowl, and add the reserved garlic paste and the rest of the marinade ingredients (chickpea flour, black pepper, cinnamon, ajwain, allspice, ginger, and lemon juice).
  • Place the shrimp in a shallow dish, and coat in the marinade. Cover with plastic wrap, and leave to marinate in the fridge for 30minutes.
  • Preheat the grill to medium-high heat, then clean and oil the grill grates to prevent sticking. Have read a wire rack placed on top of plate or baking sheet.
  • Remove the shrimp from the marinade, brushing off the excess. Thread 2to 3shrimp on skewers. Drizzle with the vegetable oil and season with salt and freshly ground pepper.
  • Place the shrimp on the grill, sliding a piece of aluminum foil under the exposed part of the skewers to prevent burning. Turn over after 2minutes, and cook until shrimp is tender and pink.

Steps:

  • Mix brown sugar, 2 tablespoons lemon juice, 2 tablespoons oil, lemon peel, cayenne pepper, and salt in medium bowl to blend. Add shrimp and stir to coat. Let marinate 30 minutes or up to 1 hour.
  • Meanwhile, place mint, remaining 1 1/2 tablespoons lemon juice, and remaining 1/2 cup oil in processor. Blend until mint is finely chopped and mixture is smooth, scraping down sides occasionally. Season mint dipping sauce with salt.
