HABANERO SAUCE
A milder sweet-spicy habanero sauce, but can be made hotter by adding more habaneros. I chop the peppers and garlic in a mini food processor to ensure there are no large chunks in the sauce. It goes great on anything, but mostly we eat it as a dip/salsa with tortilla chips.

- Place the habanero peppers and garlic into a blender. Puree until the peppers are finely chopped. Add the peaches, molasses, honey, brown sugar, vinegar, mustard, paprika, salt, black pepper, cumin, coriander, ginger, allspice, and liquid smoke. Continue to puree until smooth.

MINT HABANERO SAUCE
I had this as a side "jelly" at a restaurant, went home and played with the flavors until I arrived at this recipe. It is a real favorite with my friends and family! You can make it as hot as you like. Super with lamb and goat meat! Works well with a meat injector, too!

- In a nonreactive saucepan cook vinegars and sugar over medium-high heat until sugar is completely melted and mixture is reduced by at least half and is thick. Finely chop peppers, removing seeds and membranes for a milder sauce, or chop them in to make a hotter sauce. Carefully transfer mixture to a blender and add the habaneros and mint. Blend until smooth. Let cool to room temp or serve warm with chicken, goat, lamb, or mutton.
- Note: This mixture works well in a meat injector while still warm and has not set up, or leave less thick if using in this manner.

GINGERED-MANGO HABANERO SAUCE
when searching for a bottled marinade/sauce that is discontinued, I came across this recipe. Not what I was looking for at the time, but it's definitely a keeper. Try it on top of ice cream...REALLY. The serving size will vary depending on what you use it for.

Steps:
- 1. remove the stem from the habanero and toss into the food processor. Pulse until you have tiny pieces.
- 2. Peel the mango and remove the flesh. Add to the food processor and process until the mango is completely smooth
- 3. Pout the mixture in a medium saucepan and cook on low heat.
- 4. Add the lime juice, ginger and sugar. Add 1 cup of water/juice.
- 5. Bring to a boil and continue to cook on low until sauce is reduced and thickened -- about 30-45 minutes. Taste and adjust the sugar and water to cater to your needs.
- 6. Allow to cool and refrigerate overnight
- 7. use as a dipping sauce, marinade or dessert sauce.

- In a bbq safe pan grill chili and garlic until evenly black.
- Take blackened chili and garlic and put them into a food processor.
- add vinegars and olive oil.
- add salt and pepper to taste.
- when all the ingredients are smooth place in a saucepan and simmer for 30 minutes.
- Once sauce is at room temperature, pour into 12 oz bottles and refrdgerate.

MAYAN STYLE GUACEMOLE WITH MINT AND HABANERO PEPPER
This is a special guacemole I got from a Guatemalan friend. It is very spicy due to the habanero pepper and the fresh mint gives it a special twist. Very special and very good for instance with tortilla chips or BBQ skewers!

- .Preheat oven to 300 degrees.
- Place tomatoes in a roasting pan and rub with most of the olive oil. Bake for 1 hour, stir gently once to prevent sticking. Rub peppers with some oil and add to the tomatoes.
- Return to the oven for 20 to 30 minutes, stir, then bake another 10 to 15 minutes.
- Remove, place in a blender with the onion, water and vegetable oil, and puree. Stir in cilantro and salt.
