MINI STUFFED PIZZA BALLS
I have to share this. I found this just searching one night months ago and not sure if this was the exact site, but it is the same recipe and they are just WAY too good. They are not hard, inexpensive and just a great appetizer. This is great for a dinner party, or just family or even a potluck. How about for Monday Night Football? I know it will be on my list for years to come. www.Ourbestbites.com is where I found this but I have seen this recipe on many sites. There are a few pics there that are helpful, but like I said, I just had to pass this on. No credit for this other than I love to make them. They are really good. The best part is ... you can stuff these with ham, pepperoni, sausage, onions peppers, etc, anything.

Steps:
- Prepare all your fillings -- I just make sure everything is diced fine.
- Pizza -- On a floured counter top or you can use corn meal roll out the dough in a large rectangle, about 12"x10". Then cut in 24 squares. Top each square with some of the filling and some of the cheese and then just pick up each square and enclose the dough around the filling and roll lightly into a ball.
- Baking -- place the pizza balls seam side down in a pie dish sprayed well with pam. Don't worry about them being right next to one another. When they are finished, you can pull them about like "cinnimon rolls." I think I got 12 in each pie plate.
- Topping -- Mix the olive oil with the garlic and dried seasoning and brush over the pizza balls and then top with a light dusting of the parmesan cheese.
- Bake -- 15-20 minutes at 400 degrees. I just follow the directions for my pizza dough, usually 4,00 for about 15-20 minutes.
- They will be golden brown, crusty and just serve with marinara. They are small bite size tear away pizza balls which are just great. And like I said, fillings are whatever you like. I like pepperoni, onion, green pepper and mozzarella, but you can use anything, ham mushroom and swiss would be great, sausage, onion, sundried tomatoes, you name it. Just make sure the filling are already pre cooked.
- Marinara -- Heat up the marinara in a small bowl just in the microwave and serve with the pizza.

Steps:
- Dissolve the yeast in the warm milk. Mix flour, oil, sugar, egg and yeast mixture.
- Knead by hand or use a machine until the dough comes together. Add the salt now and knead further.
- Roll into a ball and let it rise in a warm area of the kitchen.
- Chop the tomatoes and mozzarella into little pieces and mix together. Add thorn pieces of basil, a drizzle of olive oil and season.
- Chop the mortadella and emmental and process slightly to make a semi solid paste.
- Heat oven to 200 degrees c or 400 degreec f.
- Cut the dough into 24 pieces and flatten with the palm of your hand or a rolling pin to form a circle about 6 inches across.
- Fill half of with tomato filling and half with mortadella filling. Hold in the palm of your hand and pinch the dough to close in the filling.
- Place seam side down in two buttered 23cm circular tins or use aluminium ones if you are going to freeze them for future use.
- Do not place the balls too close to each other -- they will end up touching as they rise.
- Let the balls rise and use the last egg yolk to glaze the balls.
- Bake for about 20 minutes until golden.

Steps:
- Preheat oven to 425 degrees.
- Unroll your pizza dough onto a lightly floured surface. Pat or roll the dough so it's about 8 x 12 inches. Cut it into 24 squares with a pizza cutter.
- Place cheese and desired toppings on each square. (Do not add marinara sauce, it's for dipping after they are cooked)
- After adding toppings to each dough square, carefully lift up each square and wrap the dough around the toppings.
- Pinch to make sure each ball is sealed shut and then place them seam side down on a lightly sprayed pie pan or square pan.
- Brush the tops of the dough balls with olive oil.
- Sprinkle with the garlic, Italian seasoning and Parmesan cheese (I mixed all of these together and then sprinkled on top).
- Cook for about 15-20 minutes or until golden brown on top. Keep an eye on them so they don't overcook. Serve warm with warmed marinara sauce on the side for dipping.

BASIC STUFFING BALLS WITH VARIATIONS
These stuffing balls are a good side dish with poultry and pork dishes. For an appetizer, make the stuffing balls smaller, reduce the baking time accordingly, and serve them with homemade or purchased cranberry relish for dipping. If baking the stuffing balls with a meat dish, place stuffing balls in the oven for the final 30 minutes of cooking. You can use other breads too. I usually use good quality homebaked-style plain white bread and stuffing bread when it is available. You can use up odds and ends of white bread, brown bread, rye bread, hot dog buns, and rolls for this recipe too. Adjust the seasonings to suit your tastes. Add one cup chopped apples, raisins, or cranberries for a fruit stuffing, or add one cup of chopped walnuts or pecans. The variations are endless. You may need to add a little more chicken broth, just enough to hold the stuffing balls together. Use canned broth or dissolve a couple teaspoons soup base mix in warm water. Garnish chicken or pork dishes with the stuffing balls and grilled bacon rolls. To make the bacon rolls: Cut bacon strips in half; roll them up and secure with a toothpick; and grill or fry until well done; Drain on paper towels.
