These are appetizers, very easy and very good!

1 (1 pound) loaf cocktail rye bread
1 cup thousand island dressing
1 ½ pounds deli sliced corned beef
1 (16 ounce) jar sauerkraut, rinsed and well drained
1 pound sliced Swiss cheese

Steps:

  • Preheat the oven's broiler.
  • Arrange cocktail rye slices on a baking sheet. Top each one with about 2 teaspoons of thousand island salad dressing, then fold about 1/2 slice of corned beef to fit the bread, and lay over the dressing. Place a small amount of sauerkraut over the meat, then top with 1/4 slice of the Swiss cheese, or a slice about as big as the bread.
  • Broil for 3 to 5 minutes, until cheese is melted. Serve warm.

Reubens are my favorite deli sandwich. This is a variation on the theme using a spicy, smoked sausage in place of the pastrami or corned beef. Any quality cooked/smoked beef or pork link sausage will do the trick.

2 slices rye bread
1 link sausage
2 tablespoons hot mustard
1/2 cup sauerkraut
2 slices swiss cheese

Steps:

  • Cut sausage link down the middle and grill or pan fry until crisp along the edges.
  • Spread mustard on one side of both slices of bread.
  • Heat sauerkraut in sauce pan, then remove and squeeze off excess juices.
  • Assemble sandwich by placing one slice of cheese on first slice of bread (mustard side up), place link on next, then pile on warmed sauerkraut, finally top with second slice of cheese and second slice of bread (mustard side down).
  • Wrap in aluminum foil and place in preheated oven.
  • Bake for 15 minutes at 350 degrees until cheese is melted.
  • Remove, slice diagonally and serve with dill pickle and chips.
  • If you're going to make several sandwiches for a group, you can either wrap each individually (preferred) or place them in a shallow baking pan and cover the pan with foil.

This is based on a recipe from Eating Well magazine, Sept/Oct 1995. I think these are great. The intro says, "Last spring, I was asked by the Good Morning America producers to create a menu for people to enjoy while watching the Academy Awards. This recipe was inspired by a scene in the Oscar-nominated film Quiz Show. Now that fall is here, serve these mini-sandwiches during the half-time show on football Sundays, or rent the movie, make full-sized sandwiches and have a relaxing Friday night."

2 tablespoons reduced-fat mayonnaise (I don't use reduced-fat products)
4 teaspoons Dijon mustard
1 pinch cayenne
2 loaves pumpernickel cocktail bread (8 ounces each, about 44 slices) or 2 loaves rye cocktail bread (8 ounces each, about 44 slices)
1 cup Fontina cheese (4 ounces) or 1 cup swiss cheese, grated (4 ounces)
6 ounces turkey pastrami, very thinly sliced
fresh ground black pepper
1 cup sauerkraut, drained, rinsed and squeezed dry
2 teaspoons vegetable oil, preferably canola oil

Steps:

  • In a small bowl, stir together mayonnaise, mustard and ground red pepper.
  • Spread the mayonnaise mixture over the bread slices.
  • Sprinkle half of the cheese over half of the bread slices.
  • Add a layer of turkey pastrami, black papper, sauerkraut and the remaining cheese.
  • Firmly place the remaining bread slices on top.
  • In a large nonstick skillet or griddle, brush a little oil evenly over the bottoms, and heat over medium heat.
  • Add sandwiches in batches and cook until the undersides are lightly toasted and the cheese has melted, about 45 seconds per side.
  • Add additional oil to pan as needed.
  • Cut each sandwich into 2 triangles and serve warm.

1 (13 ounce) package Hillshire Farm® Polska Kielbasa, sliced
1 cup shredded Swiss cheese
¾ cup sauerkraut, drained
3 tablespoons Dijon mustard

Steps:

  • Prepare frozen puff pastry cups according to package directions.
  • While pastry cups are baking, lightly brown sausage slices in a large skillet over medium heat.
  • Fill baked pastry cups as follows: about 2 teaspoons shredded Swiss cheese, one slice sausage, 1 1/2 teaspoons sauerkraut, and top with a bit of Dijon mustard. Adjust amounts according to your taste.
