These little buns of soda bread are the perfect size to share. Unbelievably and deliciously vegan.

Number Of Ingredients 9

1 orange
1/3 cup golden raisins
2 cups 240g whole wheat pastry flour
3/4 teaspoon baking soda
3/4 teaspoon fine kosher salt
1/4 cup 49g granulated sugar or (36g) coconut palm sugar
2 tablespoons coconut oil (at room temperature)
3/4 cup 177ml unsweetened almond milk
1 teaspoon raw apple cider vinegar

Steps:

  • Zest the orange into a small bowl or onto a bit of waxed paper and set it aside.
  • In a small bowl, add the golden raisins and about 2 tablespoons of juice from the orange. Allow the raisins to soak in the orange juice for at least 30 minutes or longer.
  • Preheat your oven to 375 degrees. Line a baking sheet with parchment.
  • In a large mixing bowl, whisk together the flour, baking soda, salt and sugar. Add the coconut oil and the zest from the orange. Using your fingers, work the coconut oil into the flour.
  • In a measuring cup or small bowl, combine the almond milk and vinegar. Drain the raisins and add them in as well.
  • Pour the mixture over the dry ingredients and using a spoon or spatula, mix until combined.
  • Using a 1/3 cup measuring cup, scoop out a level amount of dough. Drop the dough into floured hands and create a ball. Repeat until you've made six balls. Using a small sharp knife, cut a cross into each bun, about a half inch down.
  • Bake the loaves for about 15 minutes. Remove and cool on a wire rack.

We prefer the slightly sweet American version of this classic Irish quick bread, so we added dried currants and a small amount of sugar. Buttermilk and baking soda give the loaf plenty of lift and butter gives it a moist crumb.

3 1/2 cups all-purpose flour, plus more for work surface (see Cook's Note)
3 tablespoons sugar
1 teaspoon baking soda
1 teaspoon kosher salt
4 tablespoons (1/2 stick) cold unsalted butter cut into cubes
2/3 cup dried currants
1 teaspoon caraway seeds
1 1/4 cups buttermilk
1 large egg
Irish butter, for serving

Steps:

  • Preheat the oven to 375 degrees F. Line an 8-inch round cake pan with a large sheet of parchment paper, pressing it into the edges of the pan and leaving an overhang on 2 sides (the extra parchment will help you unmold the loaf later).
  • Whisk the flour, sugar, baking soda and salt together in a large bowl. Add the butter cubes to the flour mixture and toss to combine. Use a pastry blender or your fingertips to cut or rub the butter into the flour until the mixture resembles coarse meal. Stir in the currants and caraway seeds.
  • Whisk the buttermilk and egg together in a separate bowl or liquid measuring cup. Make a well in the center of the dry ingredients and pour the buttermilk mixture into the center. Use a wooden spoon or rubber spatula to stir the mixture until it starts to come together in a shaggy mass.
  • Lightly dust a work surface with flour. Turn the dough mixture out onto the floured surface and knead a few times to bring it together. Shape it into a domed disk. Place the dough into the prepared cake pan and cut a cross about 1/2-inch deep into the surface of the dough with a sharp knife. Bake until the top is puffed and lightly browned and a cake tester comes out clean, 60 to 75 minutes. Remove from the oven and use the parchment overhang to lift the bread from the pan. Place on a wire rack to cool completely. Serve with good Irish butter.

4 cups all-purpose flour, plus extra for currants
4 tablespoons sugar
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
1 3/4 cups cold buttermilk, shaken
1 extra-large egg, lightly beaten
1 teaspoon grated orange zest
1 cup dried currants

Steps:

  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
  • Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
  • With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
  • Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.
  • Cool on a baking rack. Serve warm or at room temperature.

250g plain white flour
250g plain wholemeal flour
100g porridge oats
1 tsp bicarbonate of soda
1 tsp salt
25g butter, cut in pieces
500ml buttermilk

Steps:

  • Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
  • Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
  • Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.

  • Preheat oven to 375 degrees. Combine the flour and butter, working it with your fingers until it has the consistency of coarse oatmeal. Add the sugar, baking powder, baking soda, salt, and currants, still mixing with your fingers. Beat the egg and buttermilk together. Make a well in the center of the dry ingredients and add the egg-buttermilk mixture. Stir until well blended. Form into a ball.
  • Lightly dust a clean surface with flour and knead the dough for 3-4 minutes, until smooth. Divide it into 16 equal portions. Shape each portion into a ball and place the balls at least 3 inches apart on a greased baking sheet. Gently press the top of each bun with a palm of your hand to flatten it slightly. Using a very sharp knife dipped into flour cut an inch-deep cross on the top of each bun. Bake in the preheated oven for 20-25 minutes, or until golden and crusty. Cool on a wire rack.
  • To Package: Buns and muffins look special when individually wrapped. To emphasize their simple origin, place each Irish Soda Bread in the center of a 12-in. square of brown butcher paper or tan tissue paper and twist all edges upward to resemble a flower. Present the soda breads in a low basket with a shamrock-shaped label.

To the well, add the melted butter, and 1 cup buttermilk. Carefully mix together until no flour spots remain. Add additional buttermilk, up to 1/4 cup to achieve consistency where the dough holds together.
  • Divide the dough into 9 mounds of about ½ cup each. Transfer the dough to the parchment-lined baking sheet, cut a cross in the top, and brush each a drizzle of buttermilk. Bake in a 400°F oven until slightly risen and golden brown; 20 to 25 minutes.
  • For me, I can't imagine Irish Soda Bread without a drizzle of the finest honey I can find. It's such a treat! Serve warm or room temperature. And... they freeze exceptionally well too.
