12 slices white sandwich bread
Melted unsalted butter, for brushing
1/2 cup frozen chopped spinach, thawed, drained, and squeezed dry
12 large eggs
Kosher salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Using a sharp knife, cut off bread crusts. Brush both sides of bread slices with butter. Gently press one slice into each cup of a standard muffin tin. Place 1 tablespoon spinach in each bread cup, then crack an egg into each; season with salt and pepper.
  • Bake until whites are set and yolks are still soft, 15 to 20 minutes. Serve.

Yield Makes about 7 dozen cookies

Number Of Ingredients 8

1/2 cup sugar
3 1/2 tablespoons unsalted butter
2 1/2 tablespoons mild honey
2 tablespoons heavy cream
2/3 cup sliced almonds
1/4 cup finely chopped fine-quality candied orange peel*
8 oz fine-quality bittersweet chocolate (not unsweetened), finely chopped
parchment paper

Steps:

  • Preheat oven to 400°F.
  • Boil sugar, butter, honey, and cream in a 1-quart heavy saucepan over moderate heat, stirring constantly, until creamy and slightly thickened, about 5 minutes. Remove from heat and stir in almonds and orange peel (batter will be thin).
  • Drop level 1/2 teaspoons of batter about 2 inches apart on parchment-lined baking sheets. (Batter will thicken as it cools; you may need to reheat for last few batches.) Bake in batches in middle of oven until golden brown and bubbly, 8 to 10 minutes. (Cookies will look runny at this point.) Cool cookies on sheets on racks until firm enough to be lifted, about 2 minutes, then transfer with a metal spatula to racks to cool completely. (These cookies are very delicate; if they become too brittle to lift easily, return to oven to soften, about 1 minute.)
  • Melt chocolate in a double boiler or a metal bowl set over a saucepan of barely simmering water, stirring occasionally, then remove top of double boiler or bowl from heat. Dip about one third of each cookie into chocolate, then transfer to a parchment-lined tray. Let stand until chocolate is set, about 1 hour.

1/4 cup five-cheese Italian cheese blend, shredded
3 tablespoons romano cheese, freshly grated
2 tablespoons onions, finely chopped
1/4 teaspoon garlic powder
1/8 teaspoon salt (optional)
1/8 teaspoon pepper (optional)
1 (8 ounce) can refrigerated crescent dinner rolls
24 slices smoked ham, paper thin (from two 9-oz packages)
freshly grated parmesan cheese (optional)

Steps:

  • Heat oven to 375°F In medium bowl, mix all ingredients except rolls, ham and Parmesan cheese until well blended. Set aside.
  • Unroll dough; separate into 4 rectangles. Firmly press perforations to seal.
  • Cut each rectangle into 6 (2-inch) squares. Press 1 square in bottom and up side of each of 24 ungreased mini muffin cups.
  • Pat each ham slice dry with paper towel. Place 1 ham slice over dough in each cup (edges of ham will be higher than side of cup.)
  • Spoon rounded 1 teaspoon spinach mixture onto ham in center of each cup.
  • Bake 14 to 18 minutes or until crust is golden brown and filling is hot. To prevent excessive browning of ham, cover lightly with foil after first 5 minutes of baking. Cool in pan 1 minute. Gently remove from pan; let stand 3 minutes.
  • Sprinkle lightly with Parmesan cheese before serving if desired and serve warm.

6 slices deli ham, 1/8-inch thick
1/4 cup finely chopped onions
1 tablespoon butter
6 cups fresh spinach
6 tablespoons half-and-half cream
6 teaspoons grated Parmesan cheese
3/4 teaspoon salt
3/4 teaspoon pepper
6 large eggs

Steps:

  • Preheat oven to 350°. Press ham slices into 6 greased foil muffin cup liners; set aside., In a large skillet, saute onions in butter until tender. 1 (10 ounce) package frozen chopped spinach, cooked and well drained
1/2 cup shredded mozzarella cheese
2/3 cup whipped cream cheese
1 1/2 tablespoons grated parmesan cheese
2 tablespoons finely chopped onions
1/2 teaspoon garlic powder
24 slices deli turkey (I like to use peppered turkey)

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl mix all ingredients except the deli turkey until well blended.
  • Place one slice of turkey in each of 24 miniature muffin pan cups. You want it to stick up a little ways above the top of the pan -- if the slices stick up to far you can snip them with a pair of kitchen scissors.
  • Fill each turkey cup with 1-1/2 teaspoons of the spinach mixture.
  • Bake 15 minutes or until filling is heated through and the turkey edges begin to crisp.
  • Serve warm.
  • This can easily be made low fat by using reduced fat mozzarella, and low or fat-free cream cheese.
