Beef Wellington bites are a wonderful festive appetizer. Beef pieces wrapped in puff pastry together with a flavorful filling and baked until golden brown.

1 pound beef tenderloin (450 grams), see note 1
½ teaspoon salt, see note 2
¼ teaspoon black pepper (or to taste)
1 tablespoon olive oil
1 tablespoon olive oil
½ onion, minced
2 cups finely chopped button mushrooms (about 7 ounces/200 grams), see note 3
1 tablespoon regular soy sauce
black pepper, a generous pinch
1 teaspoon dried oregano
½ cup pitted black olives (60 grams)
1 pound puff pastry (450 grams), see note 4
mustard, to taste, see note 5
1 small egg, beaten

Steps:

  • Cut beef into 1-inch pieces (2.5-centimeters) and season with salt and black pepper.
  • Heat oil in a skillet/frying pan and brown half of the beef pieces on high heat on all sides, about 1-2 minutes max! Transfer onto a plate lined with a paper kitchen towel and repeat with the other half. Set aside.
  • Preheat oven to 400 Fahrenheit (200 Celsius).
  • Meanwhile: In the same skillet, heat a little oil, add minced onion and sliced mushrooms, and sauté for 10 minutes on medium-low heat, stirring occasionally. Add soy sauce, oregano, black pepper and stir well.
  • Transfer the mixture to a food processor and add olives (make sure there are no stones in them). Process until smooth-ish.
  • Unfold/unroll puff pastry sheet and cut it into about 3-3.5 inch (8-9 centimeter) squares. Spread some mustard in the center of each square, then spread some mushroom mixture over. Top with a piece of beef. Grab 2 opposite tips of the pastry and fold them over the beef. Repeat with the other two corners/tips. Make sure to press down the corners so they don't open during cooking.
  • Transfer the parcel onto a baking tray (see note 6 & 7) lined with baking parchment. Repeat with the rest of them. Brush them with beaten egg.
  • Bake in a preheated oven at 400 Fahrenheit (200 Celsius) for 10-15 minutes or until the pastry is puffed and golden brown.
  • Best served warm with a dipping sauce of your choice.

Puff pastry sheets, cut into 4-inch squares (1 sheet for each beef cube)
5 pounds beef filet, cut into 1-inch cubes
Kosher salt and freshly ground black pepper
Wellington Filling, recipe follows
6 eggs, beaten
Port Wine Cherry Sauce, for serving, recipe follows
Horseradish Cream Sauce, for serving, recipe follows
2 sticks (1 cup) butter
2 tablespoons olive oil
8 ounces prosciutto, finely diced
5 pounds mushrooms, cremini or button, finely chopped
2 tablespoons chopped fresh thyme
Kosher salt and freshly ground black pepper
1/4 cup Dijon mustard
7 ounces goose pâté
1 bottle port wine
1 cup sugar
1 tablespoon dried rosemary
Freshly ground black pepper
3 cups dried cherries
1 pound (4 sticks) butter, at room temperature
4 cups sour cream
1 cup mayonnaise
3/4 cup prepared horseradish
2 tablespoons chives, chopped
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Roll out the puff pastry slightly. Sprinkle the beef cubes with salt and pepper. Place 2 teaspoons of the Wellington Filling in the center of each puff pastry square. Top the filling with 1 cube of beef. Fold the edges of the pastry over the beef and crimp to seal the filling inside. Place on a greased baking sheet and brush with beaten egg.
  • Bake until golden brown, 8 to 10 minutes. Serve with Port Wine Cherry Sauce and Horseradish Cream Sauce.
  • Combine the butter and oil in a large skillet over medium-high heat. Add the prosciutto and cook until the fat has rendered. Add the mushrooms, thyme and 1 tablespoon each salt and pepper. Saute for 8 to 10 minutes.
  • Transfer the mixture to a large bowl and allow to cool before folding in the Dijon and pâté.
  • Combine the port, sugar, rosemary and 1 tablespoon black pepper in a saucepan and cook until reduced by one-third. Add the cherries and continue to reduce by another third. Add the butter and mix into the wine reduction with a stick blender.
  • Mix together the sour cream, mayo, horseradish, chives and 2 tablespoons each salt and pepper in large mixing bowl. Place in an airtight container and refrigerate.

2 tablespoons olive oil
2 pounds beef tenderloin, cut into 24 (1-inch) cubes
Kosher salt and freshly ground black pepper
10 ounces cremini mushrooms, stemmed and finely chopped
1 large shallot, finely chopped
2 sheets frozen puff pastry, thawed (recommended: Dufour)

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Pat the beef dry with a paper towel and season all sides with salt and pepper. Quickly sear the beef on 2 sides only until deep golden brown, about 4 minutes total; do not overcook. Transfer to a plate to cool.
  • Add the mushrooms and cook until beginning to brown and release liquid, about 5 minutes. Add the shallots and continue cooking until mushroom mixture dries out, is golden brown and shallots are soft, about 10 minutes. Remove from heat and cool.
  • Preheat to the oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
  • On a work surface, roll 1 sheet of puff pastry to a 10 by 14-inch rectangle. Put teaspoon-sized mounds of mushroom mixture on the pastry, evenly spacing them in 4 rows of 3. Top the mushroom mound with a piece of beef, seared side up. With a sharp knife, cut the pastry into even squares around the meat and mushrooms. Working 1 at a time, pull 2 opposite sides of pastry up over each beef piece, then fold the ends over the top to make a packet. Invert and arrange the packets seam side down on the baking sheet and press them lightly to seal the pastry. Repeat with the remaining beef, mushrooms, and pastry.
  • Bake the Wellingtons until golden brown, 20 to 25 minutes. Remove from the oven to a serving platter and let cool at least 10 minutes before serving.

2 tablespoons olive oil
2 pounds beef tenderloin, cut into twenty-four 1-inch cubes
Kosher salt and freshly ground black pepper
1 large shallot, finely chopped
10 ounces cremini mushrooms, stemmed and finely chopped
1 tablespoon finely chopped fresh parsley
2 sheets frozen puff pastry (from a 17.3-ounce package), thawed
1 tablespoon Dijon mustard
2 tablespoons light cream
1 large egg
1 cup sour cream
1/4 cup light cream
1/4 cup horseradish, prepared or fresh
Freshly ground black pepper

Steps:

  • For the beef Wellingtons: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Heat the olive oil in a large skillet over medium-high heat. Pat the beef dry with a paper towel and season all sides with 1 teaspoon kosher salt and a generous grind of black pepper. Quickly sear the beef on all sides until well browned, about 4 minutes total. Transfer to a plate to cool.
  • Add the shallot to the skillet and reduce the heat to low. Cook, stirring, until softened, about 3 minutes. Add the mushrooms and 1/4 teaspoon salt and cook until the mushrooms have softened, begun to brown and released their liquid, about 5 minutes. Raise the heat to medium and cook until the liquid has evaporated, 5 to 10 minutes more. Stir in the parsley, 1/4 teaspoon salt and a generous grind of black pepper. Remove the skillet from the heat and let cool.
  • On a work surface, roll 1 sheet of puff pastry into a 14-by-10-inch rectangle. Put teaspoon-sized mounds of the mushroom mixture on the pastry, evenly spacing them in 4 rows of 3. Top each mushroom mound with a piece of beef. Brush the tops of the beef with the Dijon mustard. With a sharp knife, cut the pastry into even squares around the fillings.
  • In a small bowl, whisk together the cream and egg and brush all four edges of the puff pastry squares with the egg mixture. Working one at a time, pull 2 opposite corners of pastry up over each beef piece, then fold the remaining 2 corners over the top to make a packet. Seal tightly. Invert and arrange the packets seam-side down on the prepared baking sheet and press them lightly to seal the pastry. Repeat with the remaining puff pastry, mushrooms, beef, and mustard.
  • Bake the Wellingtons until golden brown, 25 to 30 minutes. Remove to a serving platter and let cool at least 10 minutes before serving.
  • For the horseradish cream sauce: Meanwhile, stir together the sour cream, light cream, horseradish and pepper in a small bowl. Serve alongside the beef Wellingtons.

2 tablespoons unsalted butter
1 pound button mushrooms, finely chopped
1 teaspoon fresh thyme leaves (from about 2 sprigs)
1 tablespoon sherry vinegar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Two 8-ounce beef filets, each cut into 8 cubes (16 cubes total)
1 tablespoon olive oil
2 tablespoons Dijon mustard
8 thin slices prosciutto, halved crosswise
1 sheet frozen puff pastry, thawed
1 large egg yolk, lightly beaten
Sea salt, for sprinkling

Steps:

  • Heat the butter in a medium skillet over medium heat. Add the mushrooms and thyme and cook, stirring occasionally, until all the moisture has evaporated from the mushrooms, 12 to 15 minutes (make sure to cook out all the moisture or your pastry will not become crisp). Add the sherry vinegar and cook 1 more minute. Season with the kosher salt and pepper and let cool completely.
  • Lay out a few sheets of paper towels and pat dry the filet cubes. Heat the olive oil in a large cast-iron pan over high heat. In batches if necessary, sear all sides of the meat cubes, about 45 seconds per side. Remove from the pan and let rest until cool, then brush on all sides with the Dijon mustard.
  • On a baking sheet, lay out a half slice of prosciutto and spread with a thin layer of the mushroom mixture. Place a filet cube in the center and wrap the prosciutto around it. Repeat with the remaining prosciutto, mushroom mixture and filet cubes. Wrap the baking sheet with plastic wrap and pop it in the freezer for 15 minutes.
  • Preheat the oven to 400 degrees F. Line a second baking sheet with parchment paper.
  • Cut sixteen 2-inch squares from the pastry. Put a prosciutto-wrapped filet cube in the middle of each puff pastry square. Bring the corners together and seal, using water if necessary to get the pastry to stick together.
  • Place the Wellingtons seam-side down on the lined baking sheet. Beat the egg with 1 teaspoon water, then brush the pastry with the egg wash. Sprinkle with some sea salt. Bake until golden, about 5 minutes.

1 tablespoon olive oil
1 1/2 pounds beef filet, cut into 12 equal chunks
Kosher salt and freshly ground black pepper
1 medium onion, diced finely
1 tablespoon fresh thyme, minced
6 ounces cremini mushrooms, stems removed
1 tablespoon Dijon mustard
One 10-by-15-inch sheet frozen puff pastry, such as Pepperidge Farm, thawed
All-purpose flour, for dusting
1 large egg yolk, beaten
2 tablespoons sea salt flakes
Chopped fresh parsley, for garnish
Bottled horseradish sauce, for serving

Steps:

  • Preheat the oven to 400 degrees F and line a sheet pan with parchment paper.
  • Heat the butter and olive oil in a large skillet over a medium-high heat. Sprinkle the steak chunks with salt and pepper. When the butter has melted and the oil is hot, add the steak chunks and sear them for about 45 seconds per side. (The steaks will only be partially cooked at this stage.) Remove and set aside to partially cool.
  • Add the onion and thyme to the same skillet and stir. Allow to continue cooking while you place the mushrooms in a food processor and pulse until they are finely chopped. Add the mushrooms to the skillet and stir to combine. Cook, stirring, until the mushrooms are golden and the liquid has evaporated from the skillet, 8 to 10 minutes. Remove the skillet from the heat, then add the Dijon mustard and stir to combine.
  • While the mushrooms are cooking, lay out the puff pastry on a lightly floured surface. Using a rolling pin, roll the pastry to a 12-by-16-inch rectangle. Cut into 12 equal squares by cutting 4 long strips, then cutting each strip crosswise 3 times.
  • Place a small amount of the mushroom mixture (known as duxelles) into the center of each square. Top each square with a piece of the steak. Fold the puff pastry up and over the steak, totally encasing the steak and mushroom mixture inside. Place on the prepared baking sheet with the smooth side facing upwards. Repeat with the remaining pastry, duxelles and steak.
  • Brush each bundle with the egg yolk and sprinkle with the sea salt. Bake until golden, 16 to 18 minutes. Allow to cool slightly. Garnish with the chopped parsley and serve with the horseradish sauce. Enjoy.
