1 tablespoon olive oil
1 medium onion, chopped
1 medium carrot, sliced
1 celery rib, sliced
1 garlic clove, minced
4 cups chicken broth or homemade turkey stock
1 can (14-1/2 ounces) diced tomatoes, undrained
2/3 cup each frozen peas, corn and cut green beans, thawed
1/2 cup uncooked elbow macaroni
1 teaspoon salt
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon pepper
1 bay leaf
1 cup cubed cooked turkey
1 small zucchini, halved lengthwise and cut into 1/4-inch slices
1/4 cup grated Parmesan cheese, optional

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add onion, carrot and celery; cook and stir until tender. Add garlic; cook 1 minute longer. Add broth, vegetables, macaroni and seasonings. Bring to a boil. , Reduce heat; simmer, uncovered, 5 minutes or until macaroni is al dente. Stir in turkey and zucchini; cook until zucchini is crisp-tender. Discard bay leaf. If desired, sprinkle servings with cheese. Freeze option: Transfer cooled soup to freezer container and freeze up to 3 months. To use, thaw in the refrigerator overnight. Transfer to a saucepan. Cover and cook over medium heat until heated through. Serve with cheese if desired.

2 tablespoons extra-virgin olive oil
1 large onion, diced
4 cloves garlic, minced
2 stalks celery, diced
1 large carrot, diced
1/3 pound green beans, trimmed and cut into 1/2-inch pieces (about 1 1/2 cups)
1 teaspoon dried oregano
1 teaspoon dried basil
Kosher salt and freshly ground pepper
1 28-ounce can no-salt-added diced tomatoes
1 14-ounce can crushed tomatoes
6 cups low-sodium chicken broth
1 15-ounce can low-sodium kidney beans, drained and rinsed
1 cup elbow pasta
1/3 cup finely grated parmesan cheese
2 tablespoons chopped fresh basil

Steps:

  • Heat the olive oil in a large pot over medium-high heat. Add the onion and cook until translucent, about 4 minutes. Add the garlic and cook 30 seconds. Add the celery and carrot and cook until they begin to soften, about 5 minutes. Stir in the green beans, dried oregano and basil, 3/4 teaspoon salt, and pepper to taste; cook 3 more minutes.
  • Add the diced and crushed tomatoes and the chicken broth to the pot and bring to a boil. Reduce the heat to medium low and simmer 10 minutes. Stir in the kidney beans and pasta and cook until the pasta and vegetables are tender, about 10 minutes. Season with salt. Ladle into bowls and top with the parmesan and chopped basil.

1 turkey carcass
4 quarts water
6 small potatoes, diced
4 large carrots, diced
2 stalks celery, diced
1 large onion, diced
1 ½ cups shredded cabbage
1 (28 ounce) can whole peeled tomatoes, chopped
½ cup uncooked barley
1 tablespoon Worcestershire sauce
1 ½ teaspoons salt
1 teaspoon dried parsley
1 teaspoon dried basil
1 bay leaf
¼ teaspoon freshly cracked black pepper
¼ teaspoon paprika
¼ teaspoon poultry seasoning
1 pinch dried thyme

Steps:

  • Place the turkey carcass into a large soup pot or stock pot and pour in the water; bring to a boil, reduce heat to a simmer, and cook the turkey frame until the remaining meat falls off the bones, about 1 hour. Remove the turkey carcass and remove and chop any remaining turkey meat. Chop the meat.
  • Strain the broth through a fine mesh strainer into a clean soup pot. Add the chopped turkey to the strained broth; bring the to a boil, reduce heat, and stir in the potatoes, carrots, celery, onion, cabbage, tomatoes, barley, Worcestershire sauce, salt, parsley, basil, bay leaf, black pepper, paprika, poultry seasoning, and thyme. Simmer until the vegetables are tender, about 1 more hour. Remove bay leaf before serving.

1-2 tablespoons olive oil
1 onion,diced
1 large carrot, peeled and thinly sliced,cut into half-moons
2 celery stocks, thinly sliced
6 fat garlic cloves, rough chopped
1 tablespoon fresh thyme- or sub dried oregano and/or dried basil
6 cups flavorful turkey Stock ( see below)or use chicken stock
1 can diced tomatoes ( 1 ½ cups) and their juices
1 teaspoon salt
½ teaspoon cracked pepper
1 cup pasta like little shells ( or use GF pasta)
1 can cannellini beans ( rinsed and drained) or use white beans, pinto or cooked heirloom beans
1 -2 cups turkey meat
1 teaspoon soy sauce or GF Braggs Liquid Amino
pinch cayenne
Handful Tuscan or Lacinato Kale
Garnish- fresh parsley, basil ribbons, lemon zest, drizzle olive oil and/ or grated parmesan or romano
Turkey Stock
5 lbs Turkey bones ( legs, ribs, carcass, neck)
1 onion
6 smashed garlic
1-2 carrots, rough chopped
1 -2 celery stalks, rough chopped
10-15 peppercorns
4 bay leaves
fresh herb sprigs ( thyme, rosemary sage) optional
Water

Steps:

  • Place turkey bones- legs, ribs and carcass in a large pot.
  • Add a sliced onion, 6 smashed garlic cloves, celery, carrot, peppercorns, bay leaves and a few sprigs fresh herbs. If you have other veggie scraps, feel free to add.
  • Add enough water to cover by 2 inches.
  • Bring to a simmer, then reduce heat to low and simmer very gently, for about 2 hours, skimming the surface every 30-40 minutes. Cook until stock is flavorful. Strain.
  • To remove more fat, chill and fat will rise to the top and harden for easy removal.
  • In a large pot, heat oil over med- high heat.
  • Add onion, carrots, celery and garlic and cook 6-8 minutes, stirring often, cooking until onion begins to brown, turning heat to medium if necessary.
  • Add thyme, 6 cups turkey stock, tomatoes, salt and pepper and bring to a boil.
  • Once boiling add 1 cup pasta ( don't be tempted to add more), beans and turkey meat.
  • Cook 10 minutes, or until pasta is cooked. Add kale and stir to wilt.
  • Taste for salt, add soy sauce for depth, and pinch cayenne for a little heat.
  • Divide among bowls, sprinkle with fresh parsley or basil ribbons, a drizzle of olive oil, lemon zest or grated parmesan.

2 tsp olive oil
100g smoked bacon lardons
1 red onion , finely chopped
1 carrot , finely chopped
1 celery stick , finely chopped
2 garlic cloves , finely chopped
2 bay leaves
2 thyme sprigs
300g celeriac (or any other root veg), cut into cubes
200g potato , cut into cubes
400g can borlotti beans , drained and rinsed
1 ½l chicken stock or turkey stock, (fresh is best)
350g cooked turkey
100g orzo
75g curly kale , shredded

Steps:

  • Heat 1 tsp of oil in a large saucepan. Add the bacon and fry over a medium-to-high heat for 4-5 mins or until golden, then set aside.
  • Put the remaining oil, the onion, carrot, celery and a pinch of salt in the pan. Cook gently over a low heat for 8-10 mins, stirring occasionally, until the veg is soft but not coloured. Add the garlic and herbs, and cook for 2 mins more
  • Tip in the celeriac, potato, borlotti beans and chicken stock. Bring to the boil, then simmer, uncovered, for 10-15 mins. Add the cooked turkey, orzo and the bacon, and cook for 10 mins.
  • Just before serving, tip in the kale, give everything a good stir and return to the heat for about 2 mins or until the kale has wilted.

1 turkey carcass, broken into pieces
any defatted pan juices or leftover gravy
12 cups water, to cover the carcass completely
2 medium onions, coarsely chopped
2 stalks celery & leaves, coarsely chopped
1/2 cup diced carrot
1/2 cup diced well-washed leek (optional)
1/2 cup diced turnip
3 garlic cloves, minced
1 teaspoon salt, if desired
bouquet garni
6 sprigs fresh parsley (or 2 teaspoons dried parsley flakes)
1/2 teaspoon dried thyme leaves
1 bay leaf
2 tablespoons minced onions
1 minced garlic clove
1 tablespoon olive oil
1 cup diced carrot

1/2 cup finely chopped mushroom

6 -7 cups turkey stock
1 teaspoon dried marjoram

Steps:

  • For the Stock: Combine all the ingredients in a large stock pot, bring the stock to a boil and simmer it, partially covered for two to three hours. (It tastes better the longer it simmers, as long as you don't cook away the liquid.) Strain the stock and cool in order to skim off the fat.
  • Remove all of the meat from the bones and refrigerate for adding to the soup later. Discard other vegetables, bones, turkey skin, etc.
  • For the Soup: In a large stockpot, sauté the onion and garlic in oil until soft. Add the carrots and celery and mushrooms and cook the vegetables for an additional 5 minutes . Stir occasionally.
  • Add the flour and stir for one minute.
  • Add the stock, marjoram, salt and pepper, and barley or rice. Bring the soup to a boil, reduce heat, partially cover the pot, and simmer the soup for about 1 hour. Add the turkey meat and hot pepper sauce. Adjust seasonings, and heat the soup to boiling. Sprinkle the soup with parsley just before serving.

7 cups water
1 tablespoon reduced-sodium chicken bouillon granules
1 bay leaf

12 cups low-sodium chicken stock
4 cloves garlic
2 celery stalks, roughly chopped
1 carrot, roughly chopped
1/2 onion, roughly chopped
Smoked Chicken carcass and backbone, recipe follows
3 tablespoons olive oil
2 medium carrots, peeled, trimmed and 1/4-inch diced
1 stalk celery, 1/4-inch diced
1/2 large onion, sliced 1/8-inch thick
1 tablespoon minced garlic
8 ounces creamer potatoes, quartered
2 large zucchini, 1/4-inch diced
1 medium head savoy cabbage (about 8 ounces), shredded
One 14-ounce can fire-roasted tomatoes, with liquid
One 4-ounce piece Parmesan with rind, cheese shaved, rind reserved
One 15-ounce can navy beans, drained and rinsed
1 1/2 cups shredded Smoked Chicken
Kosher salt and freshly cracked black pepper
Chopped fresh flat-leaf parsley and basil, for garnish
One 2 1/4- to 2 1/2-pound whole chicken, patted dry and set out for 15 minutes
Kosher salt and freshly cracked black pepper
2 teaspoons granulated garlic
1 teaspoon smoked paprika
Special equipment: 2 cups applewood chips, soaked in water overnight

Steps:

  • For the smoked chicken broth: Place the chicken stock, garlic, celery, carrot, onion and smoked chicken carcass and backbone into a large stockpot or Dutch oven. Simmer gently for 1 hour over a low flame. Strain, transfer to a large container and reserve (cool completely if making ahead of time).
  • For the minestrone: Add the oil to a Dutch oven and bring to medium heat. Sweat the carrots, celery and onions until softened, 3 to 5 minutes. Add the garlic and sweat until fragrant, 30 seconds. Add the potatoes, zucchini, cabbage and season with salt and pepper. Sweat the vegetables slowly until all are crisp-tender, about 8 minutes.
  • Pour in the reserved stock and the tomatoes. Add the Parmesan rind and simmer 12 to 15 minutes; the vegetables should be tender. Remove from the heat. Add the navy beans and shredded chicken and stir to combine. Season with salt and pepper.
  • Ladle the minestrone into deep bowls and garnish with the shaved parmesan and chopped parsley and basil. Serve immediately.
  • Preheat the oven to 350 degrees F.
  • For the chicken: Using kitchen shears, remove the backbone of the chicken and set aside. Cut the chicken in half, straight through the breastbone. By separating the chicken into two pieces it will ensure that the chicken gets smoked more thoroughly. Sprinkle the chicken pieces with salt, pepper, the granulated garlic and smoked paprika.
  • Place 1 deep aluminum roasting pan over the stove top. Line with aluminum foil. Add the soaked wood chips to a large piece of foil, and then fold in the sides to make a pouch. Punch holes in the top of the pouch, set it directly over a gas burner and turn on high. Leave for 2 to 3 minutes, watching carefully. Once it begins to smoke, using tongs, transfer the pouch to the bottom of the lined roasting pan. Set a wire rack over the chips in the lined roasting pan and position it so the wood chips are directly over the burner and continue to smoke. Place the chicken pieces bone-side down on the rack. Cover tightly with aluminum foil to seal in the smoke. Put the roasting pan into the oven and smoke until the internal temperature reaches 165 degrees F on an instant-read thermometer, 45 to 60 minutes. Remove and cool. Shred the smoked chicken breast.

Nothing says more "comfort food" than thick, creamy Minestrone Soup.Italian Minestrone soup is made with seasonal veggies, legumes and small pasta shape or rice.

1 onion (, roughly chopped)
2 carrots (, roughly chopped)
2-3 selery ribs (, roughly chopped)
½ cup diced pancetta ((optional))
1 ½ cup pumpkin or butternut squash (, cut in cubes)
1 large potato or 1 ½ cup potatoes (, cut in cubes)
1 large tomato chopped or 10 cherry tomatoes (, cut in quarters)
1 small savoy cabbage (, roughly chopped)
1 can ((14 oz) borlotti beans)
⅓ cup ditalini pasta or other small pasta shape
Extra virgin olive oil
1 bay leaf
2 rosemary sprigs
1 garlic clove ((optional))
Salt to taste

Steps:

  • In a large pot add a generous drizzle of extra virgin olive oil, roughly chopped onion, carrots, celery, garlic clove, and pancetta cubes. Sautee on medium heat for a few minutes stirring a couple of times in the process.
  • Add potatoes, butternut squash, tomatoes, bay leaf, rosemary sprigs and a couple of pinches of salt.
  • Give a nice stir and add enough water to cover all the veggies.Bring to a boil and simmer on low heat for 40 minutes. Add more liquid if needed.
  • Past this time veggies will become super soft and will "melt" one into another creating delicious creamy texture.
  • Once veggies are cooked add chopped savoy cabbage or other leafy greens and drained canned beans. Add more water if needed. Give a nice stir and cook for another 15 minutes.
  • As a last step, add pasta or rice. Let cook for 5-15 more minutes depending on how long pasta or rice will take to cook.
  • If you're not planning to serve minestrone right away, don't add pasta or rice immediately.Instead, bring the soup to a boil when you're ready to serve it and then add pasta or rice.
  • Minestrone is ready to serve when pasta (rice) is cooked. I takes about 5-6 minutes for ditalini pasta and about 15 minutes for rice.
  • Serve hot or warm generously topped with fresh grated Parmesan cheese.

I always thought Minestrone soup was kind of boring, but then I added Italian sausage. And a spoonful of pesto. And topped it with parmesan. This soup is PACKED and I love it! Classic minestrone flavors, but enhanced. And tons of veggies so you feel like you're on top of your life. Did I mention you can make it in the slow cooker?

16 ounces mild Italian sausage
1 medium onion (chopped)
1 & 1/2 cups celery (chopped)
1 & 1/2 cups carrots (chopped)
1 6 ounce can tomato paste
2 tablespoons garlic (minced)
1 tablespoon dried oregano
1 15 ounce can Italian style diced tomatoes*
5 cups chicken broth
1 15 ounce can cannellini beans, drained and rinsed
1 15 ounce can red kidney beans, drained and rinsed
1 cup zucchini (chopped)
1 cup yellow squash (chopped)
1/2 cup dry ditalini pasta**
2 cups baby spinach
basil pesto (to garnish)
grated parmesan cheese (to garnish)

Steps:

  • In a large soup pot, brown the Italian sausage over medium to medium-high heat. Drain the fat.
  • Meanwhile, chop the onion, celery, carrots, and garlic.
  • Add the tomato paste, onions, celery, carrots, garlic, and dried oregano.
  • Saute for about 5 minutes.
  • Add the can of Italian tomatoes and chicken broth. Turn the heat to high and bring to a boil.
  • Reduce the heat to a simmer and cook for about 30-45 minutes, until all the carrots are tender.
  • Add both cans of beans, the zucchini, yellow squash, and dry pasta. Bring to a boil, then reduce to a simmer.
  • Simmer another 10 minutes, until the pasta is cooked.
  • At this point, you can add another cup or two of chicken broth, if you feel like it's not "soupy" enough.
  • Turn off the heat and stir in the baby spinach. I like to roughly chop mine so it's easier to eat, but you don't have to!
  • Wait about 5 minutes for the spinach to wilt, and then it's ready to serve. Season with salt and pepper. (I actually didn't add any! Sign of a killer soup, right?)
  • Garnish each bowl with a teaspoon of pesto and a few grates of Parmesan cheese.

1 lb ground turkey
2 cups white onions, chopped & divided
1 cup seasoned bread crumbs
2 teaspoons garlic, minced divided
1/2 teaspoon italian seasoning
1 tablespoon vegetable oil cooking spray
1 cup celery, chopped
2 teaspoons olive oil
2 (14 1/2 ounce) cans chicken broth
1 (14 ounce) can tomatoes, diced, undrained
1 cup green beans, thawed if frozen
1 teaspoon dried sage
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
1/4 cup parmesan cheese, grated
1 cup rotini pasta, uncooked

Steps:

  • In medium bowl combine turkey, 1 cup onion, bread crumbs, 1 teaspoon minced garlic and Italian seasoning. Shape mixture into 36 meatballs.
  • Place meatballs on baking pan (10 x 15 x 1 inch) sprayed with vegetable cooking spray. Bake at 400 degrees (Fahrenheit) for 20 to 25 minutes or until meatballs are brown on outside and no longer pink in center.
  • In 5-quart saucepan, over medium-high heat, saute remaining onion and garlic with celery in olive oil for 5 to 7 minutes, or until tender.
  • Add chicken broth, tomatoes, green beans, sage, oregano, basil, and parsley. Increase heat and bring mixture to boil; add rotini. Reduce heat,cover and simmer for 15 to 20 minutes or until pasta is al dente.
  • Add meatballs and simmer 5 to 10 minutes, or until mixture is heated throughout.
  • Top bowls with parmsean cheese.
