SAVOURY MINCE PIES
We both remember eating little pies like these as kids - very plain but tasty, with nice flaky pastry. They make an ideal family supper.

- To make the pastry, put the flour in a bowl and season with a pinch of salt. Rub in the butter and lard or vegetable shortening with your fingers, then add the egg. Cut this in with a knife, then add just enough chilled water to make a dough - about 2tbsp. Lightly knead until it comes together into a dough, then shape into a ball and wrap in clingfilm. Chill for half an hour while you make the filling. Fry the onion and carrot in the oil on a gentle heat until soft and starting to brown. Turn up the heat and add the beef. Brown the meat, then sprinkle in the flour and stir to mix it in. Add the beef stock, tomato purée or ketchup and Worcestershire sauce and season. Simmer, stirring regularly, until the gravy has thickened. Remove the pan from the heat and leave to cool. Preheat the oven to 200°C/fan 180°C/gas 6. Divide the pastry into 2 pieces, one slightly larger than the other. Roll out the larger piece on a floured surface, and cut out 12 circles about 9cm (3½in) in diameter. Use these to line a 12-hole fairy cake tin. Press the pastry circles down gently to make sure they fit the holes. Add a heaped dessertspoon of filling to each pie case, leaving room for it to expand slightly. Roll out the other piece of pastry and cut out slightly smaller rounds. Brush the border of the filled pastry with water, then press the top piece on, creating a slight dome. Press the edges together and crimp if you like. Cut 2 small slits in the top of each pie and brush with beaten egg. Bake for 20-25 minutes, until crisp, golden and slightly risen.
MINCED BEEF PIE
This tasty and easy beef pie recipe will quickly become a family favourite. Serve with mounds of mash.

- Heat the oil in a deep frying pan and fry the beef mince for 4-5 minutes, breaking it up with a wooden spoon as it browns.
- Add the onion and cook for 2-3 minutes, then stir in the tomato purée and cook for 2-3 more minutes. Stir in the flour and cook for a further minute, then add the chopped mushrooms, the stout or beef stock and a couple of dashes of Worcestershire sauce. Bring to the boil, then reduce the heat, cover the pan with a lid and leave to simmer for 20 minutes. Set aside and leave to cool, then turn the meat mixture into a one litre pie dish.
- Roll out the pastry on a floured work surface until it is slightly larger than the pie dish. Gently drape the pastry over the dish, pressing firmly onto the edges. Trim, then shape the edges into a fluted shape.
- Cut some leaf shapes out of the pastry trimmings and decorate the top of the pie, sticking them to the pastry with the beaten egg yolk.
- Make three or four slits in the pastry to allow the steam to escape, then brush the pie with the rest of the beaten egg yolk and bake in the oven for 20-25 minutes, or until golden-brown.
- To serve, slice into wedges.

SCOTTISH MINCE PIE
My mother-in-law made this pie in Scotland. It is not a sweet mince pie, but it's easy to make, and a hearty dinner. I serve boiled parsley potatoes and a nice salad with this pie. My children always ask for this pie when they come home to visit.

- Place the ground beef in a large pot and pour in enough water to cover beef. Boil until beef is cooked through. Drain.
- Add water to cover cooked beef, add onions and enough bouillon granules to taste. Cook until the onions are soft. Season with salt and pepper to your taste and make sure the filling has enough bouillon to have a nice beef flavor.
- Combine the 1/4 cup water with the cornstarch and stir until smooth. Add to the beef mixture and cook until mixture has thickened. Allow to cool to room temperature.
- Preheat oven to 375 degrees F (190 degrees C).
- Roll out pastry to fit a 9-inch pie plate.
- Pour beef mixture into the pastry crust and cover the top with pastry. Crimp edges and prick top.

- In a medium saucepan heat butter over medium-high heat; add in onion, celery and garlic and saute about 3-4 minutes.
- Stir in ground beef or pork, cubed potatoes, water and half and half cream or milk;. cook while stirring until liquid has completely evaporated.
- Add in spices; cook stirring for about 5-6 minutes, then allow the mixture to cool.
- Fit bottom pie pastry into each 9-inch deep-dish pie plates.
- Divide the beef misture between each pie plate.
- Top each pie with top pie crusts then flute edges together.
- Cut slits in top of crust each, then place onto a baking sheet.
- Bake in 450 degrees F (bottom rack) oven for 15 minutes.

- Preheat oven to 400 degrees. Heat 1 tablespoon oil in a large skillet over medium heat. Cook onion until translucent, about 4 minutes. MINCED BEEF PIE & MINTY MUSHY PEAS

- Fry the onion, carrots and celery in the oil in a large frying pan until softened. Add the mince, increase heat and cook for 5 mins or until well browned. Stir in the tomato purée, Worcestershire sauce and stock. Simmer for 5 mins until the sauce has thickened slightly. Cool for 10 mins.
