Steps:
- Heat oven to 350°F. In large bowl, mix all ingredients except cheese and additional pizza sauce. Press beef mixture into 12 regular-size muffin cups (cups will be very full). Place muffin pan on cookie sheet in oven to catch any spillover.
- Bake about 30 minutes or until loaves are no longer pink in center and meat thermometer inserted in center of loaves in middle of muffin pan reads 160°F.
- Sprinkle 1 teaspoon cheese over each loaf. Bake 1 to 2 minutes longer or until cheese is melted. Immediately remove from cups. Serve with pizza sauce.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix thoroughly the ground beef and taco seasoning; set aside. In a medium saucepan, heat the refried beans over medium low heat until they are completely heated through.
- Place the ground beef mixture on a large piece of foil. Press the mixture into an approximately 1 inch thick square shape. Spread the refried beans evenly over the top of the flattened beef. Layer the flour tortillas on top of the refried beans, trimming the edges to fit the square. Layer tortillas with salsa and Cheddar cheese, staying 1/2 to 1 inch away from edges of the square.
- Gently roll the layered beef into a Swiss roll shape, pressing and compacting the loaf as you go. Pinch and seal the edges. Wrap in the foil and seal.
- Bake in preheated oven 40 to 45 minutes, or until no longer pink in the center. Cut loaf in half to test for doneness, if necessary.

- Heat oven to 450°F. In small bowl, stir ketchup and brown sugar until mixed; reserve 1/4 cup for topping. In large bowl, stir remaining ingredients and remaining ketchup mixture until well mixed.
- Spray 13x9-inch pan with cooking spray. Place meat mixture in pan; pat into 12x4-inch rectangle. Cut lengthwise down center and then crosswise into sixths to form 12 loaves. Separate loaves, using spatula, so no edges are touching. Brush loaves with reserved 1/4 cup ketchup mixture.

- 1. Preheat oven to 350. First prepare sauce: In saucepan with butter saute vegetables until tender. Then add remaining sauce ingredients and bring to a boil until sugar is dissolved. Then lower heat and keep at a very low, slow simmer while preparing meatloaf, allowing sauce to thicken.
- 2. For meatloaf: I don't saute the vegetables for the meatloaf but you could do so if desired. Mix all ingredients for meatloaf until very well mixed. Spray a loaf pan and put meat mixture into 9 x 5 loaf pan, or you can form into a loaf and bake on a cookie sheet with sides on it. I have a pan that is a double meatloaf pan with the inserts that go in so you can take the meatloaf out of the pan easily. I just use one side and bake the meatloaf for 1 hour. Then, I use the second side for the remaining part of the cooking.
- 3. After 1 hour remove meatloaf from oven and drain any grease, if possible. Then cover the meatloaf with most of the remaining sauce, saving some to use at the table. Finish baking the meatloaf for another 30 minutes. Remove from oven and allow to sit for about 10 minutes. Then serve, using the remaining sauce on each slice if desired.

- 1. Preheat oven to 350. In a large bowl combine meat, eggs, bread crumbs and mix well.
- 2. In a medium bowl, combine remaining ingredients and mix well. Add 3/4 cup of salsa mixture to meat mixture and mix well. Put meat mixture into an ungreased 1 1/2 to 2 quart casserole or 9 x 5 loaf pan. Shape mixture into a loaf shape.
