QUICK MILLIONAIRE SHORTBREAD

- Line a baking sheet with foil and coat with an even layer of coconut cooking spray. Lay the graham crackers out on the baking sheet in a single layer. Set aside.
- Add the chopped semisweet chocolate to a heatsafe mixing bowl set over a pan of simmering water. Add the coconut oil to the bowl with the chocolate and allow it to melt. Heat, stirring, until smooth, 2 to 3 minutes. Leave the mixture in the pan, over the water, until ready to use.
- In a separate bowl, add the chopped chocolate candies and candy bars and mix to combine.
- Spoon the dulce de leche into a microwave-safe bowl and microwave in 15-second increments, stirring in between to make sure it doesn't burn, until slightly softened and more spreadable. The time needed will vary on your microwave--roughly 30 to 90 seconds.
- Scoop the warm dulce de leche onto the graham cracker base and spread it nearly to the edges using an offset spatula.
- Give the melted chocolate and coconut oil mixture a quick stir and pour it over the dulce de leche, spreading it evenly with a clean offset spatula. Working quickly, sprinkle the candies over the top of the dulce de leche.
- Transfer the baking sheet to the fridge and chill, uncovered, until set, about 2 hours. Once chilled, carefully remove from the baking sheet to a cutting board. Using a long serrated knife, cut the slab into 30 roughly 2-inch squares. Smaller is better as they're rich! Serve cold or at room temperature.
MILLIONAIRE'S CHOCOLATE BROWNIE TART

- To make the pastry, sift the flour, icing sugar and cocoa together into a bowl. Add the butter and rub it in with your fingers until the mixture resembles breadcrumbs. Add the egg yolks and 3 tbsp ice-cold water, and continue to mix with your fingers until you have a soft dough. Alternatively, do this in a food processor by pulsing the ingredients together. Wrap the dough and chill for at least 1 hr. Will keep chilled for up to two days.
- Roll the dough out on a lightly floured surface to the thickness of a £1 coin, then use it to line a 23cm loose-bottomed tart tin, working the pastry to the edge and leaving some overhanging. Cover and put in the fridge to chill for a further hour.
- Heat the oven to 190C/170C fan/gas 5. Line the case with baking parchment, then fill with baking beans. Bake for 20 mins. Remove the baking beans and parchment, and bake for a further 15-20 mins, or until the base is crisp. Leave to cool completely. Once cooled, use a sharp knife to trim off the excess pastry and create a smooth edge.
- For the filling, melt the butter and dark chocolate together in a heatproof bowl set over a pan of simmering water, making sure the bowl doesn't touch the water. Stir until smooth, remove from the heat and leave to cool slightly. Beat the eggs and sugar with an electric whisk in another bowl for 5-6 mins, or until thick and pale. Fold in the chocolate, then sift in the cocoa.
- Scatter the caramel chocolates over the base of the pastry case, then pour over the filling. Transfer the tart to a baking sheet and put in the oven (still set at 190C/170C fan/gas 5) for 20-25 mins, or until set and the top has formed a crust. Leave to cool to room temperature, then carefully remove from the tin and put on a serving plate. Dust with the extra cocoa and sprinkle over a little sea salt, if you like.

MILLIONAIRE'S BROWNIES
Steps:
- Preheat the oven to 180ºC (160ºC fan). Grease and line a 20cm square brownie tin.
- Heat the butter, chocolate and sugar together in a saucepan over low heat until completely melted. Set aside for 10mins to cool slightly.
- Beat in the eggs, one at a time before stirring through the vanilla, flour and cocoa powder.
- Pour into the prepared tin and evenly scatter over the shortbread chunks.
- Bake for 18-22mins until just set in the centre. Set aside and allow to cool while you make the caramel.
- Put the sugar into a large saucepan and stirring constantly with a wooden spoon, melt the sugar over low-medium heat until smooth and amber coloured. The sugar will clump up, but it will dissolve back into the caramel as it heats.
- Take off of the heat for a moment and add the butter, be careful as it will spit. Stir until it comes together, returning it to the heat and cooking until there are no lumps, about 2-3mins. Slowly pour in the cream, again, the mixture will bubble. Bring to a simmer then turn off the heat. Stir through the salt and allow to sit for 2mins before carefully pour the hot caramel over the baked brownie base.
- Gently tap the base of the tin on the counter to get rid of any air bubbles - careful not to splash the caramel.
- Let cool at room temp for 1hr then chill for a further 1hr, until cool to the touch.
- Melt the milk chocolate in the microwave in 30sec bursts, stirring until smooth. Pour over the set caramel and gently spread out to the corners.
- Melt the white chocolate in another bowl in the microwave and drizzle in thick lines across the milk chocolate. Use a cocktail stick or a skewer to drag through the white chocolate across the milk chocolate to swirl.
- Chill for another 2hrs or until completely firm before slicing into 12 pieces.
MILLIONAIRE'S SHORTBREAD
Steps:
- Preheat the oven to 350 degrees F.
- Butter 2 (8-inch) square nonstick pans and coat with flour, tapping off excess. Place the flour, sugar and salt in a food processor and pulse once. Add butter and pulse until mixture resembles peas. Press the shortbread mixture into prepared pans and bake until golden brown around the edges, about 20 minutes. Remove from the oven and let cool completely.
- In a heavy-bottomed saucepan over medium-low heat, combine the condensed milk and 2 tablespoons of butter. Slowly bring the mixture to a boil, stirring continuously. Continue stirring over the heat until mixture becomes thick and amber in color, about 15 minutes. Pour the caramel over the cooked shortbread and spread evenly using an offset spatula. Cool to room temperature.
- In a glass bowl set over a saucepan of simmering water, melt the chocolate. Once chocolate has melted, pour it over the cooled caramel layer. Cool at room temperature for about 10 minutes, and then place in the refrigerator to cool completely, allowing chocolate to slightly harden but not get hard. Cut into 2-inch squares and enjoy, or store in an airtight container, at room temperature, or my favorite - keep in the refrigerator for a yummy sweet and cool treat!

- Preheat the oven to 200°C/180°C Fan/350°F/Gas 6 and line your 22 x 33 x 5cm (8½ x 13 x 2in) baking tray (sheet pan).
- Make the base by beating together the butter and sugar until pale and fluffy, then add the egg and mix together. Sift in the flour, ground cardamom and salt, and fold in until smooth.
- Next, make the caramel. Heat the sugar and golden syrup in a heavybased saucepan over a medium heat until it has melted together and is bubbling. Whisk in the cream and a pinch of salt, along with 30g (1oz) of the butter, then increase the heat to high.
- Make the brownie by melting the chocolate and butter in a bain-marie. Once melted, add to a large mixing bowl or the bowl of your stand mixer and start mixing, adding the sugar a bit at a time.
- Pour the brownie mixture over the set caramel and spread it out to ensure it’s level. Bake for 20-25 minutes and leave to cool in the tray before transferring to a chopping board and slicing.
