1 (8 ounce) package spaghetti
1 pound lean ground beef
1 (16 ounce) jar spaghetti sauce
½ cup butter, sliced - divided
1 (8 ounce) container cottage cheese
1 (8 ounce) package cream cheese, softened
¼ cup sour cream
1 (8 ounce) package shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer to a bowl and mix spaghetti sauce into ground beef.
  • Place half the slices of butter into the bottom of a 9x13-inch casserole dish. Spread half the spaghetti into the dish. Mix cottage cheese, cream cheese, and sour cream together in a bowl; spread mixture over spaghetti. Layer remaining spaghetti over creamy mixture. Top with remaining pats of butter.
  • Pour ground beef mixture over spaghetti and spread to cover casserole.
  • Bake in the preheated oven for 30 minutes. Spread Cheddar cheese over casserole and continue baking until cheese has melted and is lightly browned, about 15 more minutes.

Million Dollar Spaghetti gets it's name because that's how much people love this casserole with layers of noodles, cheese, and homemade meat sauce. It's budget friendly and a crowd pleaser.

16 ounces spaghetti noodles
1/2 pound ground beef
1/2 pound ground Italian sausage (or pork sausage)
salt and pepper (, to taste)
1 small onion (, chopped)
2 cloves garlic (, minced)
24 ounces marinara sauce
3 Tablespoons butter
8 ounces cream cheese (, softened)
1/4 cup sour cream
1 cup cottage cheese ( or ricotta cheese)
2 cups shredded mozzarella cheese
2/3 cup freshly grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Make Meat Sauce: In a large skillet cook and crumble the ground beef and Italian sausage and season with salt and pepper. Remove most of the grease. Add onions and garlic and cook for a few minutes until onion is translucent. Add all but 1/2 cup of the marinara sauce (reserve 1/2 cup for later) to the mixture and stir to combine. Set aside.
  • Prepare noodles: Cook Spaghetti according to package instructions, just until "al dente". Drain, and place hot spaghetti in a large mixing bowl with butter and 1/2 cup reserved marinara sauce and toss to combine.
  • Make Cheese layer: Combine cream cheese, sour cream and cottage cheese in a bowl and mix well. Smooth over noodles in the pan.
  • Assemble: Pour HALF of the pasta into a 9x13'' pan. Smooth cheese layer on top. Top with remaining noodles. Add meat sauce on top and smooth into an even layer. Top with mozzarella cheese and parmesan cheese.
  • Bake for 30-40 minutes or until hot and bubbly. Check it around 20 minutes and if the cheese is browning too quickly, tent a piece of tinfoil over it. Wait at least 15 minutes before cutting and serving, to allow it to set up. Enjoy!

I have made this for over 25 years and is exceptionally good and easy. It is delicious with a tossed salad and crusty garlic bread. It is not your traditional pasta and sauce, but an elegant one-dish meal. You can prepare it in the morning and it is all ready for the evening meal.

1 (7 ounce) package thin spaghetti
1 tablespoon butter
1 1/2 lbs ground beef
2 (8 ounce) cans tomato sauce
salt and pepper
8 ounces cream cheese, softened
1/4 cup sour cream
1/2 lb cottage cheese
1/3 cup scallion, chopped
1 tablespoon green pepper, minced
2 tablespoons melted butter

Steps:

  • Cook and drain the spaghetti.
  • Saute the ground beef in the butter till beef is brown.
  • Add the 2 cans of tomato sauce, salt, and pepper--set aside.
  • Combine all the ingredients for the filling.
  • In a shallow 2 quart casserole, spread one-half of the cooked spaghetti.
  • Cover with the cheese filling mixture.
  • Add remaining spaghetti and drizzle the 2 tablespoons melted butter over this.
  • Spread the tomato-meat sauce over this and chill (this can be put in the oven right away, but is a good prepare ahead dish).
  • Remove from the refrigerator 30 minute before baking.
  • Bake at 350 degrees for 45 minutes or till hot and bubbly.

We cooked this tasty spaghetti sauce for a huge PTA fundraiser, People asked for the recipe. It makes enough for 50 servings but can be doubled, etc. Use separate pots for each recipe you cook. We cooked all this food in the school cafeteria kitchen. I had a lot of admiration for the school kitchen chefs after this one meal.

7 lbs ground chuck
7 (29 ounce) cans tomato sauce (or 2 - 6.7 lbs cans, Do not add water)
6 tablespoons hamburger (may be in packets by instant gravies) or 6 tablespoons meatloaf seasoning mix (may be in packets by instant gravies)
2 bay leaves
4 tablespoons grated parmesan cheese (may use dry, but fresh is best)
1 lemon, juice of
1 1/2 teaspoons salt
1 1/4 teaspoons pepper
1 teaspoon oregano
7 onions, chopped
1/4 cup butter (1/2 stick)
7 (1 lb) boxes spaghetti

Steps:

  • Brown onions in butter until golden and limp.
  • Remove to a huge pot or divide equally into 2 dutch ovens.
  • In a separate pan, brown meat well and then drain of all fat.
  • Add meat to the pot you have the onions & stir in all of the seasonings.
  • Simmer for a few minutes while you open sauces and pour in pan.
  • After emptying last can, fill it 1/4 full of water and swish around to remove all of the tomato sauce, pour into the next can and swish until all the cans are clean.
  • Add this anemic catsup into the pan of sauce.
  • Check the recipe once more to make sure all of the ingredients have been added.
  • Each one is important, but do not add TWICE!
  • THIS IS AN EXPENSIVE SAUCE TO HAVE ANYTHING LEFT OUT.
  • Simmer slowly for 2-3 hours.
  • Check every 40 minutes or earlier to stir.
  • Remove bay leaves when through with cooking.
  • Makes a nice med thick meat sauce.
  • **Cook your pasta and serve.

Recipe goes together quickly if you coordinate the boiling, sauteing, mixing, etc. I prefer to use Paul Newman's Sockarooni or Roasted Garlic Pasta Sauce

16 ounces rotini pasta (elbow or spaghetti may be substituted)
1 tablespoon salt
2 tablespoons butter
2 tablespoons olive oil
1 tablespoon garlic (minced from jar)
1 medium green bell pepper (optional)
1 medium onion (white or yellow) (optional)
8 ounces mushrooms, sliced (optional)
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 -8 ounce cream cheese (room temperature)
1/4 cup sour cream
8 ounces cottage cheese
28 ounces red pasta sauce
2 -3 cups grated cheese (Mozzarella, Italian Blend, or Cheddar)

Steps:

  • Preheat oven to 350 degrees.
  • Bring water to boil, add salt and pasta and cook per directions.
  • Use 2 T of butter and grease a 9 x 12 baking dish.
  • Dice green pepper and onion.
  • Slice mushrooms.
  • Heat 2 T of garlic oil and saute on medium heat bell pepper, onion, and mushrooms 3-4 minutes.
  • Drain pasta and set aside.
  • Add ground sirloin, crumbling as you add. Add salt & pepper, breaking up beef into small bites. Remain cooking until beef is no longer pink, drain excess gease.
  • Add jar of pasta sauce and heat through.
  • While meat sauce is cooking, add softened cream cheese, sour cream, and cottage cheese to a medium size mixing bowl.
  • Using a hand mixer or immersion blender, mix 3 ingredients until well blended.
  • Layer 1/2 pasta into baking dish, add blended cheese mixture and smooth evenly over pasta.
  • Evenly add remaining pasta followed by red meat sauce.
  • Cover dish with foil and bake 20 minutes. (I spray oil my foil so it doesn't stick).
  • Remove foil and add grated cheese on top.
  • Return to oven for 10-15 minutes until cheese has melted well.
  • Rest for 5 minutes before serving.

2 onions, chopped

2 cans tomato paste, and
1 1/2 cups water
4 tablespoons oregano

2 bay leaves
1 potato
2 lbs chopped meat
1 egg
1 cup breadcrumbs

Steps:

  • in a very large stockpot heat oil and add onions, garlic and chopped beef, stir til browned, remove make meatballs-add ingredients, form into balls, add to pot, cook until browned, remove add sausages, cook until browned, remove, cut into 2" piece.
  • add all back to pot, add remaining ingredients, bring to boil, lower to simmer and cook, partially covered 3-4 hrs, stirring every half hour serve over 3 lbs of al dente pasta with freshly grated cheese.

1/4 cup sour cream
8 ounces cottage cheese
4 ounces cream cheese, room temp (or microwave in 10 second increments)
1 small onion, chopped and divided in 2
1/2 cup parmesan cheese
1 teaspoon garlic salt
1 teaspoon pepper
28 ounces spaghetti sauce, flavor of your choice
2 cups mozzarella cheese, shredded

Steps:

  • Cook 1 lb. elbow macaroni according to package directions. While the noodles cook prepare mixture.
  • Mix together sour cream, cottage cheese, cream cheese, Parmesan cheese, half of the onions, garlic, and salt and pepper. Set aside.
  • Brown the ground beef with 1/2 of the chopped onion. Season with salt and pepper. (if not using a lean meat of 93% fat free or better, DRAIN OFF THE FAT CAREFULLY into an aluminum lined, non plastic bowl.
  • Pour 2/3 of the drained noodles into a 9x13 baker.
  • Spoon meat sauce onto the noodles. Spread all of the cheese mixture over the meat sauce, cover with remaining noodles, then sauce, and cover in mozzarella cheese (up to 2 cups).
  • Bake 350' for 45 minutes or until bubbly!
  • Serve with Texas garlic toast and garden salad.
