Steps:
- Cook pasta in salted water according to package directions just until al dente - don't overcook! Strain and rinse with cold water.
- In a Dutch oven, brown ground beef, sausage and onion over medium heat. Add garlic and cook 30 more seconds. Drain grease. Add all remaining Sauce ingredients and bring to a simmer. Simmer gently uncovered for 15 minutes, stirring occasionally.
- Meanwhile preheat oven to 350 degrees F. When oven reaches full temperate, mix cooked pasta with Sauce. (We wait to mix so the pasta doesn't continue to cook in the sauce.)
- In a 9x13 pan, layer evenly: 1/2 the pasta, 1/2 mozzarella, all provolone, all sour cream, remaining pasta, remaining mozzarella and top with Parmesan.
- Bake uncovered for 30 minutes or until cheese is melted. Broil until cheese is golden. Garnish with fresh parsley if desired.

Steps:
- Cook pasta just until al dente according to package directions - don't overcook! Strain and rinse with cold water.
- Preheat oven to 350 degrees F. Lightly grease a 9x13 baking dish. Set aside.
- Melt 4 tablespoons butter in a large skillet over medium heat then whisk in flour. Cook, while stirring for 2 minutes. Turn heat to low then gradually whisk in milk. Whisk cornstarch into evaporated milk and gradually add to skillet followed by Dijon mustard and all remaining spices/seasonings.
- Bring to a boil, whisking constantly then reduce heat to medium and simmer, whisking occasionally until thickened (but not overly thick). Remove from heat and whisk in sharp cheese until melted. Add pasta and toss until evenly coated (it will seem like a lot of extra sauce which is a good thing).
- Pour half of the macaroni and cheese into prepared baking dish. Layer macaroni evenly with provolone cheese followed by an even layer of sour cream. Pour remaining macaroni and cheese over sour cream and spread into an even layer. Sprinkle with 1 cup Parmesan cheese (or more to taste).
- Panko topping (optional): Melt butter in olive oil over medium heat in a medium skillet. Add panko and stir to coat. Continue cooking until crumbs become golden brown. Evenly sprinkle over macaroni and cheese.
- Bake 25-30 minutes or until bubbly and inside provolone is melted. If not topping with panko, broil until Parmesan is golden. Cool 10 minutes to set before serving.

Steps:
- Start by bringing water to a boil for the pasta. While waiting for the water to boil, being browning the ground beef with minced onion, seasoned salt, and pepper. Add the pasta to the boiling water and cook until al dente. Continue browning the hamburger while watching the pasta. When the pasta is done cooking, drain and rinse with hot water. Return to the pot and stir in four tablespoons of butter and set aside. Drain off any excess grease off of the browned hamburger, stir in the spaghetti sauce, and set aside. Next, make the Alfredo Sauce using the recipe below.
- Now you are ready to start assembling the layers. Spread half of the spaghetti noodles in a greased 9×13 pan. Pour the alfredo sauce over the noodles. Top with the remaining spaghetti noodles. Spread the spaghetti sauce mixture over the spaghetti noodles. Top with two cups of shredded mozzarella cheese. Bake at 350 degrees for 35-45 minutes. If your pan is very full, I would suggest putting a piece of foil or a baking sheet underneath to catch any spills.
- Bring the heavy cream, minced garlic, pepper and salt to a boil over medium heat. Add the butter, cream cheese, and sour cream. Stir until smooth and heat until it starts to boil. Use a whisk (or a fork), to stir in the shredded Parmesan, one cup at time, until smooth.

BAKED SAUSAGE PENNE
I love baked pasta, but wanted to make something a little different from most of the recipes that I saw. I use homemade marinara and homemade pesto, but feel free to use jarred if that's what you have on hand. You can also use chicken or turkey sausage instead of pork if you wish. This was intended to make dinner for two plus leftovers, as there are only two of us in the house, and I wanted it to be easy enough to pull together on a weeknight. Serve with a green salad, garlic bread, and a nice glass of red wine. Cooking time includes prep and resting time.

Steps:
- Preheat the oven to 350.
- In a large pot of boiling, salted water; cook the pasta just to al dente. You don't want it mushy, as it will cook more in the oven.
- While pasta is cooking, brown the italian sausage in a saute pan over medium heat, breaking it up into small pieces.
- Drain any accumulated grease and discard.
- Add the marinara sauce, pesto, italian seasoning and chili flakes. Stir, and let simmer, stirring occasionally for 5 -6 minutes, until the sauce comes to a boil.
- Taste, and add salt, pepper, or more italian seasoning as necessary.
- Drain the cooked pasta, and place in a mixing bowl.
- Add the sauce mixture and 3 ounces of the shredded cheese. Stir to combine.
- Coat an 8 x 8 (or similar sized) baking dish with cooking spray.
- Place pasta mixture in the baking dish, spreading to fill the dish evenly.
- Top with the reaining cheeses.
- You could make ahead to this point, and refrigerate until you are ready to cook, but if so, your baking time will be longer.
- Bake, uncovered at 350 for 20 minutes or until bubbly and heated through.
- Let rest for 5 minutes before serving.

- Cut the butter into slices and top the noodles. Top the butter with the ground beef. Top the ground beef with the spaghetti sauce. Straight out of the can, man. Add cheese.
