This classic baked Traditional South African milk tart recipe with sweetened condensed milk is scented with vanilla and cinnamon and will have you coming back for more.

125 grams cold butter (approximately 1 stick or 1/2 cup)
36 grams fine granulated sugar (approximately 45 ml or 3 tablespoons)
225 grams cake flour (approximately 400 ml or 1 2/3 cups)
1 egg (large)
30 ml cold water (approximately 2 tablespoons)
65 grams butter (approximately 1/2 stick or 1/4 cup)
25 grams cake flour (approximately 45 ml or 3 tablespoons)
198 grams sweetened full cream condensed milk (approximately 1/2 large tin )
500 ml milk (approximately 2 cups)
3 large eggs, separated
1.25 ml salt (approximately 1/4 teaspoon)
5 ml vanilla extract (approximately 1 teaspoon)
2.5 ml cinnamon powder (approximately 1/2 to 1 teaspoon for dusting before serving)

Steps:

  • For the pastry, pulse the butter, flour and sugar in a food processor until it has the consistency of breadcrumbs. Alternately, rub in the cold butter with two knives or a pastry cutter. Try not to use your hands as it will warm up the butter.
  • Add the egg and water and mix until just combined.
  • Bring the pastry into a ball and flatten into a disk on a piece of cling wrap. This makes it easier to roll into a round shape later.
  • Chill and rest the pastry for about 30 minutes before use.
  • Roll out the pastry and line a 25 cm tart pan ensuring that the pastry overlaps the sides a bit as it may shrink during baking if not rested enough. I chilled it again for another 10 minutes before baking.
  • Switch on the oven and heat to 200 degrees celcius / 400 F / Gas mark 6.
  • Prick the base and line with parchment paper and baking beans or beans, and bake blind for about 10 minutes.
  • Remove the baking beans and bake for another five minutes. Be careful not to get a burn as you may drop the beans and damage the tart case.
  • Reduce the oven temperature to 170 degrees celcius / 350 F / Gas mark 4.
  • Cook the filling while the pastry base is baking in the oven.
  • In a medium size bowl mix the butter and flour ensuring there are no lumps. Add in the condensed milk, vanilla and the egg yolks and mix until smooth.
  • Heat the milk until it reaches boiling point stirring occasionally with a flat edged wooden spoon to prevent it catching and burning on the bottom of the pot.
  • Add a little of the boiled milk to the egg mixture ensuring that you whisk out all the lumps. Slowly add the rest of the milk while whisking or stirring and then return to the pot and place back on the heat.
  • Stir the milk mixture on the heat until it thickens and it starts to bubble.
  • Remove the pot from the stove and let the mixture cool for about 10 minutes.
  • Whisk the egg whites and salt until they are glossy but not too stiff. It should be soft peaks at this stage, not the 'tip it over your head and it doesn't drop' stiffness.
  • Fold the egg whites into the cooled custard mixture.
  • Pour into the pastry case and bake for 15-20 minutes until it is set. Do not over bake as it will rise and sink like an overdone souffle.
  • Sprinkle with cinnamon powder and serve.

1 cup white sugar
3 egg yolks
1 cup cake flour
1 teaspoon baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
4 cups milk
3 egg white
1 tablespoon cinnamon sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat a 9 inch deep dish pie plate with vegetable oil cooking spray.
  • In a large bowl, mix together the butter and sugar until smooth. Add the egg yolks and beat until light and fluffy. Sift in the cake flour, baking powder and salt, and stir until well blended. Mix in the vanilla and milk. In a separate bowl, whip the egg whites to stiff peaks using an electric mixer. Fold into the batter. Pour into the prepared pie plate, and sprinkle cinnamon sugar over the top.
  • Bake for 25 minutes in the preheated oven, then reduce the temperature to 325 degrees F (165 degrees C). Continue to bake for 25 to 30 minutes, or until the center is set when you gently jiggle the pie. Serve hot or cold.

6 ounces butter, softened
½ cup (100g) sugar
1 egg
2 cups (300g) flour
pinch salt
¼ teaspoon (1.25ml) pure almond extract
4 cups (950ml) milk
1 tablespoon (0.5 ounces) butter
½ cup (100g) sugar
2 eggs
3 tablespoons (24g) cornstarch
3 tablespoons (24g) flour
1 teaspoon (5ml) pure vanilla extract
pinch salt
1 tablespoon (14.3g) cinnamon

Steps:

  • Cream the butter and add the sugar. Beat in the egg and almond extract. Stir in the flour and salt. Knead until a soft dough has formed. Chill for 10 minutes.
  • Roll the dough out onto a lightly floured surface and layer it into a greased pie dish. Cover with a sheet of parchment paper and fill the void with pie weights. Bake blind at 350 degrees for 15 minutes. Remove parchment and pie weights. Allow crust to cool completely on a wire rack.
  • In a heat proof bowl, whisk together the eggs, sugar, cornstarch, flour and vanilla. Set aside.
  • In a medium size saucepan, heat the milk and butter at medium setting. Do not bring to a rolling boil.
  • Add about a fourth of the milk to the egg mixture, whisking to incorporate it evenly. Pour the mixture back into the saucepan with the remainder of the milk. Return to heat and stir constantly until it thickens. Do not boil!
  • Pour the filling into the pie crust and let cool completely. Refrigerate until serving. Sprinkle with cinnamon before serving.

Milk tart with creamy filling and a homemade crust is a South African classic. Perfect as dessert or served for tea time.

Follow the directions for my easy no-roll crust
2 cups milk
½ cup heavy / whipping cream
5 egg yolks
¾ cup sugar
2½ tbsp cornstarch / cornflour
2 tbsp flour
2 tbsp salted butter ((alternatively use unsalted butter and 1/2 tsp salt))
½ tsp almond extract
½ tsp vanilla extract
pinch of nutmeg
2 tsp cinnamon

Steps:

  • Make the pastry according to recipe instructions then blind bake until golden brown and crisp. Remove from the oven and allow to cool.
  • To make the filling, heat the milk, cream, vanilla, almond extract and nutmeg in a saucepan over medium heat.
  • In a mixing bowl, whisk together the egg yolk, sugar, flours and salt.
  • Once the milk is hot, whisk two ladles full of the milk into the egg mixture to temper the eggs.
  • Pour the egg mixture back into the saucepan and cook until thickened, whisking continuously. Cook the custard for 2-3 minutes until thick and smooth.
  • Pass the custard through a fine-mesh sieve. Beat in the butter.
  • Pour the custard into the prepared crust. Spray a piece of parchment paper with cooking spray then press onto the surface of the custard to avoid a skin from forming.
  • Place the milk tart in the fridge and allow to set for at least 4 hours but ideally overnight.
  • Before serving, dust the cinnamon over the milk tart. Slice and serve.

2 teaspoons baking powder
1 pinch salt
4 cups milk

2 ½ tablespoons cornstarch
½ cup white sugar
2 eggs, beaten
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium mixing bowl, cream together 1/2 cup butter or margarine and 1 cup sugar. Add 1 egg and beat until mixture is smooth. In a separate bowl, mix together 2 cups flour, baking powder, and salt. Stir flour mixture into sugar mixture just until ingredients are thoroughly combined. Press mixture into bottom and sides of two 9-inch pie pans.
  • Bake in preheated oven for 10 to 15 minutes, until golden brown.
  • In a large saucepan, combine milk, vanilla extract, and 1 tablespoon butter or margarine. Bring to a boil over medium heat, then remove from burner.
  • In a separate bowl, mix together 2 1/2 tablespoons flour, cornstarch, and 1/2 cup sugar. Add beaten eggs to sugar mixture and whisk until smooth. Slowly whisk mixture into milk. Return pan to heat and bring to a boil, stirring constantly. Boil and stir 5 minutes. Pour half of mixture into each pastry shell. Sprinkle with cinnamon. Chill before serving.

Melktert is Afrikaans for milk tart, and is a dessert which has a sweet pastry crust and a creamy custard filling made from eggs, flour, milk and sugar.

1 teaspoon baking powder
A pinch of salt
¼ cup sugar
¼ cup butter
½ egg
2¼ cups milk
1¼ tablespoon flour
1¾ tablespoon butter
1¼ tablespoon cornflour
⅓ cup sugar
A pinch of salt
1 teaspoon vanilla essence
1½ eggs
1 teaspoon ground cinnamon

Steps:

  • Cream the butter and sugar until smooth. Add the egg.
  • Add dry ingredients and mix well to form a smooth dough.
  • Press into greased pie plate.
  • Bake at 350F/180C for approximately 20 minutes or until golden.
  • Boil milk, sugar and butter.
  • Beat eggs with dry ingredients.
  • Pour hot mixture over cold and mix well. Add vanilla essence.
  • Allow to thicken on the stove.
  • Pour filling into pastry-lined pie dish. Allow to cool and then sprinkle with cinnamon.

1/2 cup sugar

2 1/4 cups flour
2 teaspoons baking powder

3 tablespoons flour

3 eggs
1 tablespoon vanilla
1 teaspoon cinnamon

Steps:

  • Preheat oven to 400 degrees F.
  • For crust: Cream butter and sugar.
  • Add eggs, then flour, salt and baking powder.
  • Using ½ of dough, press into pie plate.
  • Repeat with other half of dough in other pie plate.
  • Prick all over with fork and bake for 10 minutes.
  • No further baking is required.
  • For filling: Heat milk and melt butter in it. Allow to cool 10 minutes before proceeding with recipe.
  • Beat eggs with flour, cornstarch, sugar and vanilla. With a ladle, slowly dribble in some of the hot milk mixture while whisking eggs continuously, to temper the eggs and bring them up in temperature. Add all the milk mixture in this way, never forgetting to whisk.
  • Pour the custard back into the pot and cook, whisking constantly, until custard thickens, about 8 minutes.
  • Pour into baked shells and sprinkle with cinnamon and sugar.
  • Allow to cool completely, and refrigerate.

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 pinch fine salt
1/3 cup caster or 1/3 cup superfine sugar
80 g/ 2 . 82ozs . butter, softened
1 small egg
2 cups milk
1 cinnamon stick
60 -100 ml white sugar, depending on personal taste
2 eggs
3 tablespoons cornflour
3 tablespoons flour
half teaspoon vanilla essence
2 tablespoons butter

Steps:

  • Crust - Step 1 - Measure the flour, baking powder and salt in a jug and whisk until combined. Cream butter and sugar together with a beater attachment until pale and fluffy (about 3 minutes). Add the egg and beat until thoroughly incorporated. By hand add in the flour mixture and mix until just combined.
  • Crust - Step 2 - Press the dough into a 25cm/10inch tart plate with a removable base. Make sure that it isn't too thick and dock with a fork. Place in the freezer for 30 minutes. Meanwhile preheat oven to 200C/400F and when ready bake the base for 15 minutes or until golden and cooked through. You don't need to weight this down if you freeze the pastry. The pastry can be baked 1-2 days in advance and covered well and placed in an airtight container or box.
  • Heat the milk with the cinnamon stick to just under boiling point.
  • Lightly beat the eggs with the sugar, and then add the corn flour and flour.
  • Pour the hot milk into this mixture, stirring rapidly.
  • Return the mixture to the heat and cook, stirring until the mixture becomes thick.
  • Keep stirring while it is cooking to prevent it from catching on the bottom of the pot and getting lumpy.
  • Take the mixture off the heat and add the vanilla essence and butter.
  • Stir well until the butter is melted.
  • Pour the mixture into the prepared tart crust.
  • Sprinkle with cinnamon sugar.

CRUSTLESS MILK TART

This is a very easy recipe which produces a tart that tastes delicious hot or cold. Mix it all up and the magic happens while it's cooking when it separates into three layers, a nice base layer, soft milky centre and a light golden sponge topping. Hard to explain but try it!

  • Separate eggs and beat yolks with sugar until fluffy, add butter and beat again.
  • Sift flour with baking powder and add the egg yolk mixture and milk, mix well.
  • Beat egg whites stiffly and fold in lightly (I can never get this right but it doesn't seem to damage the end result).
  • Pour into a greased pie dish with lid (or cover with foil).
  • Bake in a moderate oven (180 degrees C) until set (normally 30-60 minutes) .

  • Cream together the softened butter with sugar until well incorporated. Add in a single beaten egg and whisk together until well combined.
  • Whisk together the flour, sugar and baking powder. Add to the butter mixture and mix until combined. Knead a few times until you have a softish biscuit (cookie) type dough.
  • Option 1 - Traditionally the biscuit crust is pushed into the bottom and sides of the pie plates using hands and the back of a spoon or measuring cup, and smoothed out using a knife. This results in a quaint rustic looking pie crust.
  • Option 2 - roll out the biscuit crust on a sheet of parchment paper until about 5mm thick. Transfer carefully to your pie plate or dish.   • Start off by mixing the shortcrust pastry ingredients into a bowl together with your hands to a firm dough. Wrap it with a cling film or parchment paper and chill for about 30 minutes. In the meantime make the filling.

Remove the parchment paper on top, but leave the one at the bottom of the rolled out pastry. Transfer the pastry to a tart tin and make it fit nicely. - (If you want, you can also roll out the pastry dough on a floured work surface with a floured rolling pin. Then transfer it to the tart dish with the help of the rolling pin.)
  • Now prick the pastry several times with a fork. Use either dried beans, rice, lentils and co. to weigh down the milk tart crust. Simply line the tart dough with parchment paper, add some weight and blind bake for 35 minutes. Feel free to remove the weight 5 minutes before the end of baking time, so that the crust will become nicely golden brown. Remove the tart crust from the oven, followed by the weight and let cool completely before filling. This takes about 2 hours.
