Country Fried Steak With Milk Gravy image

Nothing says comfort food like some good ol' country fried steak with gravy. This hearty and flavorful recipe calls for buttermilk, flour, hot sauce and beef round steaks. Serve with some biscuits and mashed potatoes and let the flavors melt in your mouth.

Number Of Ingredients 12

1 1/4 cups (plus 2 tablespoons) all purpose flour
1 teaspoon seasoned salt
2 cups buttermilk
1 dash Paula Deen Hot Sauce
8 (4 oz) tenderized beef round steaks
for frying vegetable oil
4 cups whole milk
to taste kosher salt
to taste black pepper
sliced for garnish green onions
for serving buttermilk biscuits
to taste Paula Deen House Seasoning

Steps:

  • Add 1 1/4 cups flour to a pie plate and season with salt, pepper and seasoned salt.
  • Add buttermilk to a pie plate and season with a few dashes of hot sauce.
  • Season the meat on both sides with Paula Deen House Seasoning. Dredge the steaks through the buttermilk then the flour.
  • Add an inch of oil to a large heavy skillet set over medium-high heat. Add steaks to the hot oil in batches and fry until golden and brown, about 5 minutes per side. Drain on a paper towel-lined sheet tray and repeat with remaining steaks.
  • Reduce the heat to medium and sprinkle 2 tablespoons flour into oil and stir with wooden spoon. Slowly pour in the milk while stirring. Stir gravy until smooth. Season with lots of black pepper. Add the steaks back to the skillet and reduce the heat to low. Cover and simmer for 20 minutes.
  • Serve on buttered biscuits with sliced green onions.

BISCUITS WITH MILK GRAVY

Homemade milk gravy over scratch-made biscuits is a classic Southern comfort food. This simple dish calls for bacon grease, buttermilk, butter, vegetable shortening and all-purpose flour. Serve this dish hot for breakfast or with dinner.

3 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup vegetable shortening
1 cup buttermilk
¼ cup unsalted butter, melted
¼ cup bacon grease
flour
1½ cups warm milk
¼ teaspoon salt
¼ teaspoon black pepper
2 tablespoons butter, melted

Steps:

  • Preheat the oven to 450 °F.
  • In a medium bowl, combine the flour, sugar, baking powder, baking soda and 1/2 teaspoon salt. Cut in the shortening with a fork until it looks like cornmeal. Add the milk, a little at a time, stirring constantly until well mixed.
  • Turn the dough out onto a lightly floured surface. Knead lightly two or three times. Roll out the dough with a floured rolling pin to 1/2-inch thickness. Cut with a 2-inch cutter.
  • Place the biscuits in a greased iron skillet. Gently press down top of biscuits. Brush the biscuits with half the 1/4 cup melted butter. Bake for 14 minutes or until golden brown. Brush the hot biscuits with the remaining melted butter. Split the biscuits in half and ladle milk gravy over the hot biscuits.
  • Heat bacon grease in a cast iron skillet. Add the flour and whisk until smooth and bubbly about 1 minute. Add the warm milk slowly and bring to a boil. Reduce the heat to a low simmer and stir, until thickened, about 5 minutes, adding milk as necessary to control the thickness. Add 2 tablespoons butter until mixed in. Season the gravy with salt and pepper. Serve hot over biscuits.

My grandmother used to make the BEST milk gravy! She would serve it over chicken fried steak and mashed potatoes. Unfortunatley, I never got her original recipe. I came across this recipe in a "Cooking with Paula Deen" magazine and I think this is very close to what my grandmother used to make!

1 -2 tablespoon vegetable oil or 1 -2 tablespoon vegetable shortening
4 tablespoons all-purpose flour
3 cups whole milk
1 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • ~NOTE~ This recipe will have more flavor if you use 1-2 tablespoons of oil from the oil you fried chicken fried steak in, or maybe even bacon grease. If you don't have that, no need to worry, you can use vegetable oil or vegetable shortening.
  • Heat 1-2 tablespoons oil in a skillet over medium heat.
  • Whisk in flour, whisking constantly for about 1 minute.
  • Slowly add milk, whisking constantly.
  • Stir in pepper and salt and continue cooking.
  • Whisk constantly for about 10 minutes, or until thickened.

4 slices bacon, thick cut, chopped
1/2 cup onion, chopped
2 garlic cloves, minced
3 tablespoons all-purpose flour
2 cups half-and-half
2 teaspoons ground black pepper

2 tablespoons butter

Steps:

  • In a large skillet, combine sausage, bacon, onion and garlic. Cook over medium-high heat for 8-10 minutes or until sausage is browned and crumbly.
  • Drain the grease and then stir in flour and cook for 2-3 minutes, stirring frequently.
  • Gradually stir in half and half. Add pepper and salt and cook for 3-4 minutes, or until gravy is thickened.
  • Remove from heat and stir in butter until melted.

1 1/2 cups all-purpose flour
1/4 teaspoon fresh ground black pepper
8 (4 ounce) tenderized beef round steak (cube steaks)
1 teaspoon seasoning salt
1 teaspoon house seasoning (see below)
2 cups buttermilk
2/3 cup vegetable oil
4 tablespoons flour
1/4 teaspoon fresh ground pepper
1 teaspoon salt (to taste)
1 quart whole milk
1 medium onion (sliced)
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • HOUSE SEASONING:.
  • Mix ingredients together and store in an airtight container for up to 6 months.
  • STEAK:.
  • Combine 1 1/2 cups flour and 1/4 teaspoon of pepper in a small bowl.
  • Sprinkle 1 side of the meat with the House Seasoning and the other side with the seasoning salt, and then dredge the meat in buttermilk and then flour.
  • Heat 1/2 cup oil in a heavy skillet over medium-high heat.
  • Add 2 or 4 of the steaks to the hot oil and fry until browned, about 5 to 6 minutes per side.
  • Remove each steak to a paper towel-lined plate to drain.
  • Repeat with the remaining steaks, adding up to 1/4 cup more oil, as needed.
  • Drain all but 4 TBS drippings, and scrapings.
  • GRAVY:.
  • Add 4 tablespoons flour to the pan drippings, scraping the bottom with a wooden spoon.
  • Stir in the pepper and the salt.
  • Reduce the heat to medium and cook, stirring frequently, until the flour is medium brown and the mixture is bubbly.
  • Slowly add the whole milk, stirring constantly with whisk.
  • Return the steaks to the skillet and bring to a boil over medium-high heat.
  • Reduce the heat to low, and place the onions on top of the steaks.
  • Cover the pan, and let simmer for 30 minutes.

2 cups cooked white rice
32 crushed saltines (1 sleeve)
1 lb bulk breakfast sausage
2 cups chopped celery
1 large onion, chopped
7 cups chicken stock
salt
fresh ground black pepper
1 teaspoon dried sage
1 tablespoon poultry seasoning
3 eggs, beaten
1/8 cup butter, melted
4 cups turkey stock or 4 cups chicken stock
turkey giblets, from 1 turkey
2 chicken bouillon cubes
2 tablespoons prepared stuffing
3 tablespoons cornstarch
1/3 cup cold water
2 pints button mushrooms, sliced
3 tablespoons butter
1 hard-boiled egg, sliced
salt
fresh ground black pepper

Steps:

  • Stuffing:.
  • Preheat oven to 350 degrees F.
  • Crumble oven-dried bread into a large bowl. Add rice and saltines.
  • Cook sausage in a large skillet until it starts to brown. Add celery and onion and saute until transparent, 5 to 10 minutes. Pour over bread and rice mixture. Add stock and mix well. Add salt, pepper, sage, and poultry seasoning. Mix well. Add the beaten eggs and melted butter. Mix well. Reserve 2 tablespoons of the stuffing mixture for the Mushroom Giblet Gravy.
  • Pour stuffing into a greased pan and bake until cooked through and golden brown, about 45 minutes.
  • Giblet Gravy:.
  • Bring stock and giblets to a boil. Add bouillon and reserved stuffing mixture. Make a slurry by whisking together the cornstarch and water and add to the boiling stock; cook 2 to 3 minutes. Meanwhile, saute mushrooms until browned in butter. Add mushrooms to gravy with egg and salt and pepper, to taste.
