RESTAURANT STYLE MILD SALSA
This restaurant style mild salsa recipe takes under 5 minutes to make and is a great healthy fresh homemade appetizer perfect for game day! It can be made all year round as it uses canned tomatoes! With cilantro, lime juice, onion and a few spices you can have this easy salsa on the table in minutes. Serve it with flour tortillas or with corn chips for a naturally gluten free snack.

Steps:
- Pour the canned tomatoes and their juice into a food processor (or blender).
- Peel and roughly chop the onion then add it to the tomatoes
- Peel the garlic and add them to the processor
- Add the spices, salt, sugar and lime juice. Then add the cilantro to the top.
- Pulse chop your salsa until you have the desired consistency.
- Transfer the salsa to an airtight container and refrigerate for at least 3 hours and up to 4 days.

FRESH MILD SALSA
Fresh tomato salsa is excellent with just chips and salsa for an appetizer or a perfect compliment to any Mexican dish. Adjust to personal taste with salt, pepper, and ground cumin. Add 1 additional serrano pepper to make hot salsa, and 2 serrano peppers for 'fire' salsa.

SWEET AND SPICY SALSA
This is my new favorite salsa recipe. When you first taste it, it's sweet and then the spice hits you. Instead of the fresh tomatoes you can use whole, canned tomatoes.

Steps:
- Place the ingredients in a blender in the order given - jalapenos on the bottom, tomatoes next, etc.
- Pulse for one second at at time.
- Take a wooden spoon and mix ingreditents then pulse again until blended, but not too long where it will turn to liquid.
- Serve with tortilla chips and enjoy!

ZESTY SALSA FOR CANNING
I got this years ago from the lady in our church who canned it. I've never made it but I've eaten lots of it! It's the best salsa I have ever had. Especially good with lime tortilla chips or on taco salad (recipe #102234).

Steps:
- Combine all ingredients except tomato paste in large sauce pot.
- Simmer until desired thickness.
- Stir in tomato paste.
- Ladle hot salsa into hot jars leaving 1/4 inch head-space.
- Process 15 minutes in a hot water bath.
- Note: use more hot peppers for a very hot salsa or less for mild.
- It depends on how hot your peppers are and how hot you like your salsa.
- I never get close to 2 1/2 cups for our mild salsa.
MILD SWEET SALSA
I always like blazing salsas. That's just me. But when it comes to my daughter, or my family and guests, I need to have something for those who don't like pure fire. This is one of the salsas I use then. One thing I like about this one, is that the flavoring is a bit fresher and not as typical of the mild salsas that taste like diced tomatoes. I think the basil is the secret weapon- it has a little bite, but it is cool to the taste. Whatever it is, everyone seems to like it!

- Peel the tomatoes. This is really easy done by washing the tomatoes, then boiling them for 1 to 3 to 5 minutes (depending on the tomatoes) in hot water, then plunging them into a pan, sink or large bowl of very cold water. The skins will pull off easily.
- Wash the peppers, stem and seed them, then chop finely (food processor with pulse button is fine) and add to pot.
