1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
1 teaspoon minced garlic
1 tablespoon olive oil
1 can (28 ounces) crushed tomatoes
1 can (14-1/2 ounces) Mexican diced tomatoes
1/4 cup chopped sun-dried tomatoes (not packed in oil)
1 can (15 ounces) pinto beans, rinsed and drained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1/2 cup dark beer
1 tablespoon chili powder
2 teaspoons baking cocoa
1 cup shredded Mexican cheese blend

Steps:

  • In a Dutch oven, saute the onion, green pepper, celery and garlic in oil until crisp-tender. Add the tomatoes, beans, beer, chili powder and cocoa. Bring to a boil. Reduce heat; cover and simmer for 40 minutes. Serve with cheese.

Steps:

  • Brown meat in Dutch oven or small stockpot on medium heat; drain. Add onions and peppers; cook 5 min. or until crisp-tender, stirring frequently.

Steps:

  • Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and carrots, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes. Add the cumin and cook, stirring, for 1 minute. Add the ground beef; raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chipotle and adobo sauce, oregano and salt and pepper. Simmer, partially covered, stirring from time to time, for 30 minutes. 3 pounds boneless beef chuck, cut into 3/4-inch pieces
Kosher salt and freshly ground pepper
2 large onions, chopped
8 cloves garlic, chopped
1/3 cup plus 2 tablespoons chili powder
1 teaspoon dried oregano
2 tablespoons tomato paste
1 28-ounce can whole plum tomatoes, coarsely crushed with your hands
1 3/4 cups low-sodium beef broth
1/3 cup brewed espresso or strong coffee
2 15-ounce cans pinto beans, drained and rinsed
Shredded cheddar cheese, sour cream and/or diced avocado, for topping

Steps:

  • Heat 1/2 tablespoon vegetable oil in a large pot over medium-high heat. Pat the beef dry and season with salt and pepper. Brown in batches, about 4 minutes, adding more oil as needed. Transfer to a plate.

2 tablespoons vegetable oil
2 pounds ground beef
1 pound fresh chorizo

One 14-ounce can chopped tomatoes
1/2 cup tomato paste
2 guajillo chiles
2 tablespoons chili powder
1 tablespoon ground cumin

2 bay leaves
Two 15-ounce cans pinto beans, drained and rinsed
Two 15-ounce cans red kidney beans, drained and rinsed

Steps:

  • Heat a Dutch oven over medium heat. Season the chuck roast with salt and pepper. Add the oil to the pot and sear the chuck roast until browned, 7 to 8 minutes. Remove from the pot. Add the ground beef and chorizo and cook until browned, 7 to 8 minutes; drain off excess fat if necessary. Add the garlic, onion and jalapeno and cook for 2 minutes, then return the chuck roast back to the pot with the beer, tomatoes and tomato paste.
  • Using scissors, snip the guajillo chiles into small strips. Add to the pot and bring to a boil. Mix in the chili powder, cumin, oregano, bay leaves and 2 tablespoons salt. Reduce to a simmer and simmer for 1 1/2 hours.
  • Remove the bay leaves. Add the beans to the pot. Combine the masa and 1/2 cup water in a small bowl, then stir the mixture into the pot. Continue to simmer until the chili thickens slightly, an additional 15 minutes.
  • Serve with fixins: diced tomatoes, cubed avocado, grated Cheddar, sour cream, lime wedges and cilantro leaves.

Steps:

  • If using dried beans, soak and cook as recommended on the packaging prior to starting the chilli
  • Add the carrot, celery, onion, garlic and fresh chilli if using to the oil in a large wide pan on a medium hot heat and sweat until onions are translucent, about 10 mins
  • Add tomato puree and stir for 30 seconds, then add the cumin, coriander, bay and cinnamon, smoked paprika and dried chilli if using. Stir fry for a minute.
  • Add chopped tomatoes, chopped pepper and soy sauce, bring to simmer, cover and leave on low heat for 10-20mins, stirring occasionally, until veg is cooked through. Adding pepper at this step leaves a bit of crunch. If you like it more cooked add with other veg at step one.
  • Add all the beans, stir, bring to simmer, cover and cook on low heat for 10-15 minutes until beans are hot. Keep an eye on it, add a couple of tblsp of water if it is a bit dry.
  • Add chopped coriander leaves and serve with a dollop of sour cream and plain rice.

1 tablespoon vegetable oil
1 pound beef soup bones
6 cups water, or as needed to cover
1 teaspoon vinegar
6 slices bacon, minced
3 (28 ounce) cans diced tomatoes, drained
3 (15 ounce) cans black beans, rinsed and drained
3 (15 ounce) cans kidney beans, rinsed and drained
3 (15 ounce) cans cannellini beans, drained and rinsed
4 yellow onions, diced
1 whole head garlic, minced
1 (6 ounce) can tomato paste
1 green bell pepper, diced
1 red bell pepper, diced
2 jalapeno peppers, seeded and chopped
2 serrano peppers, seeded and chopped - or more to taste
½ cup chili powder, or more to taste
2 tablespoons smoked paprika
2 tablespoons ground cumin
2 ½ (1 ounce) squares dark unsweetened chocolate
¼ (2 ounce) package anchovy paste
1 bay leaf

Steps:

  • Trim fat from beef chuck roast and place the fat into a large saucepan with vegetable oil over medium heat. Cook, stirring occasionally, until the fat chunks are lightly browned, about 15 minutes. Add beef bones to the fat. Pour in enough water to cover the bones and stir in vinegar. Bring liquid to a boil and reduce heat to low; simmer until stock has reduced to about 1 1/2 cups of liquid, about 2 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cut beef chuck roast into 3/4-inch thick slices and cook on the preheated grill until browned, 3 minutes on 1 side and 2 minutes on the other side; cut beef slices into 1/2-inch cubes.
  • Cook and stir bacon in a large skillet over medium-high heat until evenly browned, about 10 minutes; drain on paper towels.
  • Transfer beef cubes into a large soup pot over medium heat. Add bacon, diced tomatoes, black beans, kidney beans, cannellini beans, onions, garlic, tomato paste, green bell pepper, red bell pepper, jalapeno peppers, serrano peppers, chili powder, smoked paprika, cumin, chocolate, anchovy paste, and bay leaf.
  • Strain broth from beef bones; discard bones. Skim excess fat from the broth and pour broth over the chili ingredients. Use a large spoon to make a well 2 inches deep in the meat, broth, and vegetables, and pour stout beer into the hole; bring to a simmer.
  • Place cover on soup pot and cook until beef is tender and flavors have blended, about 3 hours.
  • For a thicker chili, dip about 3 tablespoons of liquid from the pot and whisk with cornstarch in a bowl; stir cornstarch mixture into chili and simmer until thickened, about 5 minutes.

Add the tomato paste and cook, smearing and stirring constantly with a heat-proof spatula or flat-edged wooden spoon, until dark and aromatic, about 90 seconds. Add the chipotle, chili powder and oregano, and cook, stirring, for 1 minute. Stir in the salsa and 1 1/4 cup water. Stir in the beans and hominy.   • Over moderate heat, add oil to a deep pot and combine onion, peppers, and garlic.

Steps:

  • Preheat the oven to 160 degrees
  • Heat a very large casserole dish on the hob and add the oil. Add the onions and the garlic and stir till softened.
  • Add the spices and the chilli and stir as the aroma is released.
  • Add the tomatoes, the passata and the tomato puree. Then dissolve the stock cubes in the water and add.
  • Add the beans, then the quorn mince stirring all the time. Add everything else, but just half the coriander. Taste, add extra spices/chilli/seasoning if necessary.
  • Pop in the oven and cook for 1 1/2 hours. Stir occasionally.
  • I prefer to leave the chilli to cool, then reheat before serving as the flavours are enhanced, but this is just my personal preference.
