Frozen Italian-style meatballs are an easy shortcut in this pasta casserole flavored with roasted peppers and fresh herbs. Garnish with basil, if desired.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Heat oil in a large Dutch oven over medium heat. Add garlic and fennel seeds; cook and stir for 1 minute. Pour in pasta sauce, 1/4 cup basil, and tomato paste; simmer, stirring frequently, until sauce is heated through, 10 to 15 minutes.
- Meanwhile, mix remaining 1/2 cup basil, ricotta, roasted peppers, Parmesan cheese, eggs, and salt together in a medium bowl.
- Spread 1 cup tomato sauce in the bottom of the prepared dish. Cover with 1/2 of the penne, 1/2 of the remaining tomato sauce, all of the ricotta mixture, remaining penne, all the meatballs, and remaining sauce. Cover baking dish with foil.
- Bake in the preheated oven until meatballs are heated through, about 30 minutes. Uncover casserole and cover with mozzarella cheese. Continue baking until cheese is melted, about 10 minutes more. Let stand for 15 minutes before serving.

- In a large bowl, combine 2 tablespoons tomato sauce, egg, bread crumbs, onion and salt. Crumble beef over mixture and mix well. Shape into 1-in. balls. , Place meatballs on a greased rack in a shallow baking pan and bake at 375° for 15-20 minutes or until meatballs are no longer pink; drain. , Meanwhile, in a large skillet, combine remaining tomato sauce with vegetables and seasonings. - In a bowl, lightly beat eggs. Stir in cracker crumbs, garlic, 1 teaspoon salt and 1/2 teaspoon pepper. Crumble beef over mixture; mix well. Shape into 1-inch balls. In a covered skillet over low heat, cook meatballs in a small amount of water until browned. Drain. In a bowl, combine the soup, sour cream, cheese, onion and remaining salt and pepper. - Cook fusilli as label directs; drain.
- Meanwhile, in a large bowl, mix ground beef, onion, egg, bread crumbs, sage, salt, and pepper. Shape meat mixture into 1 inch meatballs.
- In a 12 inch skillet over medium high heat, in hot oil, cook meatballs until browned on all sides, removing meatballs to a shallow 3 quart casserole as they brown. When all meatballs are browned, add fusilli; toss to mix well. Set aside.
- Into drippings in skillet over medium heat, stir flour and mustard; cook 1 minute. Gradually stir in beef broth and milk; cook until sauce boils and thickens, stirring constantly. Stir in grated parmesan cheese.
- Pour sauce evenly over meatball mixture; cover and bake 20 minutes or until sauce is hot and bubbly and the meatballs are cooked through. Garnish with parsley.

A very popular dinner recipe at my place is this delicious Baked Meatball Casserole. It's creamy and has three parts to it. The creamy pasta base, golden meatballs with the goodness of herbs, and a moist top layer loaded with mozzarella cheese, more herbs, cream, and eggs.

- Put the pasta to boil along with 4 cups of water and some salt. Cook the pasta halfway through. Once done remove from water and put some oil to it and set aside.
- Put 1 cup of water to boil along with 1 chicken cube. Mix well till no lumps. Switch off the gas.
- In a pan, on medium heat put the butter and chopped garlic and mixed herbs. Saute well and add the flour to it. Whisk till no lumps for 2 mins. Add the chicken cube and water mixture to it a little at a time. Whisk well while adding. You will notice that the mixture begins to thicken. Add the cream and mix well. Let this cook for another 2 mins. Add the salt and pepper and mix well. Switch off the gas once this mixture is ready and add the grated mozzarella cheese to it. Set it aside to cool a bit and then combine the boiled pasta in it. Using a spatula mix this white sauce mixture and pasta well. Set aside once done.
