1 1/2 teaspoons butter or 1 1/2 teaspoons olive oil

Steps:

  • Place all ingredients except salt in a large microwave safe bowl.
  • Rice doubles in size during cooking so choose a container large enough to accommodate final product.
  • Microwave uncovered on high for 10 minutes.
  • Then microwave uncovered on medium-low for 15 minutes.
  • Do not stir rice at anytime during cooking process.
  • Season with salt and fluff with a fork before serving.

1 cup uncooked long grain white rice
1 (14 ounce) can chicken broth
1 cup reduced fat sour cream
1 (4 ounce) can diced green chile peppers
1 cup shredded Monterey Jack cheese, divided
1 (8.75 ounce) can whole kernel corn, drained
¼ cup finely chopped fresh cilantro
salt and ground black pepper to taste

Steps:

  • In a large pot, bring the rice and chicken broth to a boil. Reduce heat to low, cover, and simmer 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 1-1/2 quart casserole dish.
  • In the pot with the cooked rice, mix the sour cream, green chile peppers, 1/2 cup Monterey Jack cheese, corn, and cilantro. Season with salt and pepper. Transfer to the prepared casserole dish, and top with remaining cheese.
  • Bake uncovered 30 minutes in the preheated oven, until cheese is bubbly and lightly browned.

  • Cook in microwave oven on high power for 10 minutes or until boiling. Decrease power to medium, stir and cook for 20 minutes. Serve when all liquid is absorbed.

1 can (14 ounce) chicken broth
1 cup uncooked rice - we like Jasmine (NOT MINUTE RICE - see notes)
1 cup sour cream
4 ounces diced green chilies
1 cup shredded Monterey jack cheese
1 can (15.25 ounce) corn, drained or 2 cups fresh (yellow or white)
1/4 cup cilantro, chopped
1/4 teaspoon salt

Steps:

  • Preheat oven to 350*F
  • In a large pot, bring the rice and chicken broth to a boil.
  • Once rice begins to boil, cover and reduce heat to low. Simmer for 20 minutes.
  • Spray an 8x8 square casserole dish with non-stick spray set aside.
  • Once rice is done, all chicken broth will be absorbed.
  • Turn off burner and place pot on a cool burner.
  • Add to the rice the sour cream, green chiles, 1/2 cup Monterey Jack cheese, corn, and cilantro. Mix well.
  • Season with salt and mix again.
  • Pour rice mixture into prepared casserole dish, and top with remaining 1/2 cup of cheese.

2 tbs olive oil
1 small onion, minced
1 yellow bell pepper chopped
1/2 cup milk
1 egg
1/2 cup sour cream
2 4 oz cans diced green chiles, drained well
10 oz diced, pre-cooked chicken
Pinch cayenne pepper
1 tablespoon cumin
Plenty of salt and pepper
2 cups shredded cheese (I used a combo of white cheddar and pepper jack, but Monterey Jack is really good too.)
4 cups cooked rice

Steps:

  • Preheat oven to 350 degrees F. rub olive oil on the sides and bottom of a large casserole dish.
  • In a large pan over medium-high heat, saute onions and bell peppers with olive oil until they begin to brown. Set aside.
  • Combine the rice, chicken, 1 1/2 cup of the cheese, green chilies, sour cream, cumin, cayenne, salt, pepper and onion mixture to the casserole dish and combine well. (Give the mixture a taste to make sure you have enough salt, pepper and cayenne.)
  • In a separate bowl, whisk together milk and egg. Add milk and egg to the rice mixture
  • Top the casserole with remaining shredded cheese and bake for 30 to 35 minutes.

No muss, no fuss and can be served in the casserole dish you cooked it in. You can also use this method for brown rice but increase your cooking time a little.

2 T. chopped fresh cilantro (optional)

Steps:

  • In a mixing bowl, combine cooked rice, sour cream, green chilies, chopped red bell pepper, ground cumin, garlic salt, shredded Monterey Jack cheese, and 1/2 cup of shredded cheddar cheese. Stir until well mixed.
