BUTTERY GARLIC POTATOES
My husband and three boys all love oven-roasted potatoes. But I work full-time, so once I get home and start dinner, I usually don't have time to make them. I whipped up this quick and very tasty microwave garlic potato recipe with red potatoes and seasonings instead, and everyone likes it. -Heidi Iacovetto, Phippsburg, Colorado

MICROWAVE POTATO CHIPS
Steps:
- Thinly slice the potatoes about 1/16-inch thick using a mandolin. Put the potato slices in a large bowl of cold water and stir to release the starch. Drain and refill the water as many times as necessary until the water remains clear. Line a baking sheet with paper towels. Transfer the potatoes to the paper towels and pat dry.
- Line a large microwave-safe plate (the biggest that will fit in your microwave) with two layers of paper towel. Arrange as many potato slices on the paper towels as will fit in one layer without touching. Lightly brush the potatoes on both sides with oil and sprinkle lightly with salt. Microwave at full power for 3 minutes. Flip the slices over and microwave at 60-percent power until crispy and golden brown in spots, about 2 minutes more. Transfer the chips to a serving bowl and repeat with the remaining potatoes.

Steps:
- Wash the potatoes and cut into 1-inch chunks with a sharp knife and cutting board. Place in a microwave-safe bowl. Microwave on high for 12-15 minutes, tossing every 5 minutes or so, until the chunks can be pierced easily with a fork, but not falling apart.
- While the potatoes are in the microwave, preheat your broiler. Place an oven rack on the second position below the broiler - not the top position.
- Whisk together all the remaining ingredients (from the olive oil to the sea salt) in a separate small bowl to make the sauce. Set aside.
- In a large bowl, combine the tender potatoes and the sauce, and toss to coat.
- Place the potatoes on a rimmed baking sheet lined with aluminum foil, parchment paper, or a Silpat pan liner. I think aluminum is best for browning. Broil until brown and crispy, tossing often. Keep your eye on them as they cook so they don't burn! Serve warm.

EASY MICROWAVE SCALLOPED POTATOES
This came from a recipe book given to me by my grandmother-in-law. I like it because it cooks in about 1/2 the time of regular (oven) scalloped potatoes, and tastes basically the same. Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes. We always eat ours with lots of ketchup on top!)

Steps:
- Put margarine (or butter) into LARGE glass bowl, and microwave on High for 1 minute, or until melted. (If you really like cleaning your microwave, feel free to use a smaller bowl.).
- Blend in flour, salt & pepper. Gradually stir in milk.
- Microwave on High 8-10 minutes, stirring after 4 minutes.
- Layer half the potatoes and onion in a greased 2-quart casserole dish. Top with half the prepared sauce, then the rest of the potatoes and onion, then the rest of the sauce.
- Cover and microwave on High 20 minutes, or until done. (Cooking times will depend on the strength of your microwave; I think ours is in the 1,200-watt range, and 20 minutes usually works just fine for us).

Steps:
- Microwave the large potato for nine minutes. A medium potato needs seven minutes and a small potato needs five minutes. To add extra potatoes allow an extra four minutes for a large potato, three minutes for a medium potato and two minutes for a small potato. This is using a 1000w microwave - adjust for slightly longer or shorter if yours is a higher or lower power. Don't forget to pierce the potatoes with a fork a few times.
- When ready, slice a deep groove through the middle of the potato in both directions. Repeat the process diagonally.
- Add the butter, salt and pepper.
- Enjoy.

Steps:
- Scrub the potatoes. Poke each potato 5-6 times with a fork - I do it a few times on each side. Place potatoes directly onto the microwave plate.
- Microwave on high. The time depends on the number of potatoes and the size of your potatoes. For 1 medium-sized potato, start with 5-6 minutes. For 2 medium-sized potatoes, start with 10-11 minutes microwave time. For 4 potatoes, start with 15-16 minutes in the microwave. When the time is up, get a towel or oven mitt and gently squeeze the sides of the potato. If it gives without resistance and starts to open up, it's ready. If it still seems a bit firm, return to the microwave for another minute at a time until tender.

Steps:
- Poke the potato 4 to 5 times on each side with a fork. Wet a clean sheet of paper towel with water and wring out any excess moisture. Wrap the damp paper towel around the potato and place on a microwave-safe plate. Microwave on high for 5 minutes. Remove the paper towel and flip the potato over.
- Drizzle the potato with olive oil and sprinkle with salt and pepper. Microwave on high, uncovered, 3 minutes more (see Cook's Note). Use a fork to test for doneness. If the potato is not done, cook in 1-minute intervals until the fork can easily pierce the flesh. Serve with the butter and more salt and pepper.
MICROWAVE MASHED POTATOES
Steps:
- Gather the ingredients.
- Rinse the peeled potato chunks and put them in a large microwave-safe bowl or a casserole dish.
- Cover the dish or bowl with plastic wrap and cut a small vent in the top for steam to escape.
- Microwave on high for 9 to 12 minutes, or until the potatoes are tender and can be gently poked through with a fork.
- With pot holders or oven mitts , carefully remove the bowl from the microwave . If necessary, transfer to a larger bowl for mashing.
- Warm 3/4 cup of milk with 4 tablespoons of butter in the microwave until the butter is melted or nearly melted, from 30 to 50 seconds.
- If desired, put the potatoes through a ricer before mashing with the rest of the ingredients.
- Add the milk mixture to the hot potatoes and mash with a hand masher or small electric hand mixer. If using an electric mixer, be careful not to overmix, or the potatoes may become gummy. Add more of the remaining milk and butter as needed to achieve your desired consistency. Add salt and pepper to taste, and mix well.
- Serve alongside your favorite entrée. Enjoy.

HOW TO ROAST POTATOES IN THE MICROWAVE - EASY
From food.onehowto.com
4.8/5 (6)
- The first step to making roasted potatoes in the microwave is to thoroughly wash the potatoes you will be using. With the help of a vegetable brush, you can remove all waste-containing skin and rinse them afterwards.
- Once the potatoes are clean, take a fork and prick the potatos making small holes all over its surface. Thus we avoid the potato exploding while being cooked in the microwave.
- Then, place the potatoes uncovered on a plate in the microwave. The time you leave the potatoes varies depending on the size and the power of your microwave. Typically, a medium sized potato usually takes about 5 to 7 minutes. However, to know if they are ready, you only have to go through the potato with a knife, if you notice that is soft is that it is ripe for serving.
- When you see the roast potatoes are well done, remove them from the oven and cut them in half or in slices, as you prefer. Now, you can add to them a little olive oil, salt, a pinch of parsley or, on the contrary, you serve them accompanied by a sauce that you like.
