My mother shared this speedy recipe with me. There are not a lot of ingredients, so these chewy treats are easy to fix in the microwave. -Annette Self, Junction City, Ohio

2 cups quick-cooking oats
1/2 cup packed brown sugar
1/2 cup butter, melted
1/4 cup corn syrup
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, combine oats and brown sugar. Stir in butter and corn syrup. Press into a greased 9-in. square microwave-safe dish. , Microwave, uncovered, on high for 1-1/2 minutes. Rotate a half turn; microwave 1-1/2 minutes longer. Sprinkle with chocolate chips. Microwave at 30% power for 4-1/2 minutes or until chips are glossy; spread chocolate evenly over top. , Refrigerate 15-20 minutes before cutting.

2 cups rolled oats
½ cup packed brown sugar
½ cup butter
½ cup honey
½ cup semisweet chocolate chips
¼ cup peanut butter

Steps:

  • In medium bowl, combine oats, sugar, butter, and honey. Microwave on high for 4 1/2 - 5 1/2 minutes or until bubbly, stirring twice.
  • Spread honey mixture in an 8 x 8 inch pan. Cool in refrigerator.
  • In small bowl, combine chocolate chips and peanut butter. Microwave on high for 1 - 1 1/2 minutes or until chips are soft, stirring once. Spread over cookie mixture. Refrigerate until chocolate is firm. Cut into squares.

This is a fast recipe using basic ingredients. The beauty of this recipe is how customizable it is. A favorite of mine is using peaches, pecans, white chocolate, and 1/4 teaspoon cinnamon.

cooking spray
1 cup butter, melted
½ cup corn syrup
2 tablespoons corn syrup
⅓ cup brown sugar
1 teaspoon vanilla extract
4 cups quick cooking oats
½ cup chopped strawberries
¼ cup white chocolate chips

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 13x9-inch glass baking dish with cooking spray.
  • Place butter in a large microwave-safe bowl and microwave for 1 minute. If butter has not melted, microwave 30 seconds longer. Pour 1/2 cup plus 2 tablespoons corn syrup, brown sugar, and vanilla extract into melted butter; stir until combined. Add oats and mix to combine; mixture may be a bit thick but do not add additional liquid.
  • Stir in strawberries and white chocolate chips. Spoon batter into the prepared baking dish and lightly press mixture into the dish.
  • Bake in the preheated oven until golden on top, about 25 minutes. Allow to cool before slicing into bars.

I've had this recipe for many years. We got our first microwave in 1983 and this recipe was in the book that came with it. (Sharp Carousel microwave cookbook) It's quick, easy and delicious. The recipe says it makes 32 small bars, but it's hard to cut them that small.

3/4 cup butter or 3/4 cup margarine
1 cup brown sugar
1 3/4 cups unsifted flour
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups quick-cooking rolled oats
3/4 cup raspberry jam (I don't like raspberry jam, so I've used blackberry, strawberry, etc)

Steps:

  • 1. Lightly grease an 8-inch, heat-resistant, non-metallic baking dish.
  • 2. In a medium-sized bowl, cream butter and sugar together until fluffy. Stir in flour, salt, baking soda and oats. Combine until well blended.
  • 3. Press one-half of mixture into bottom of prepared baking dish.
  • 4. Heat, uncovered, on FULL POWER 5 minutes.
  • 5. Spread jam evenly over baked oat mixture.
  • 6. Crumble remaining oat mixture over jam and press lightly.
  • 7. Heat, uncovered, on FULL POWER 7 minutes. Test for done-ness with a toothpick.(It should come out clean).
  • 8. Allow to cool and cut into bars.
