MICROWAVE GRAPE AND ALMOND JAM

Steps:
- Roughly chop grapes.
- Place in 3 litre microwave safe bowl.
- Microwave on HIGH 5 minutes.
- Stir in sugar, rind and juice mixing well until sugar dissolves.
- Cook uncovered on HIGH for 25 to 40 minutes depending on microwave, stirring every few minutes until jam is thick.
- Stir in almonds.
- Spoon jam into hot sterilised jars, replace lids tightly. Cover with teatowels as it cools.

CONCORD GRAPE JAM

Steps:
- Wash and stem grapes.
- Place in a large stainless or enamel pot.
- With a potato masher or wooden spoon mash grapes.
- Bring to a gentle boil and reduce heat to an "active" simmer.
- Simmer 10 minutes-you want to be able to crush the center of grapes easily with a wooden spoon-no bouncing back.
- Run the grapes through a food mill to remove seeds.
- Return pulp to the saucepan.
- Bring to a boil and stir in honey.
- Stir often to prevent scorching.
- After about 10 minutes you should not be able to stir down the boil.
- Test for gel point.
- Jelly/puree will begin to darken and thicken up.
- This should take around 15 to 20 minutes from the boil point, but alot depends on the amount of juice your grapes are holding-you could go up to 35 minutes.
- Ladle into clean hot sterile jars leaving 1/4 inch head space, and seal.
- Process in a boiling water bath for 10 minutes.

- reduce heat and simmer, uncovered, 40 minutes or till thick, stir often.
- remove from heat; stir in salt and extract.
- Cool; pour into airtight containers.

MANGO LIME REFRIGERATOR JAM
An unusual jam combination if you are looking for something different. PLEASE NOTE: This is NOT shelf stable jam - once sealed in jars, it must be stored in the refrigerator or freezer. Adapted from Cooking Pleasures magazine.

Steps:
- Combine mangoes, lime zest, lime juice, lemon juice, and pectin in a large stockpot.
- Mash, using a potato masher until well blended.
- It can be a little chunky, but really try to crush everything together well.
- Cook over HIGH heat 4-5 minutes, or until the mixture come to a rolling boil, stirring the entire time.
- When jam is boiling and you can't stir it down, gradually add sugar- stirring the whole time.
- Return to a full boil over high heat and cook 2 minutes exactly, sitrring occasionally.
- Remove from heat.
- Ladle into hot, sterilized canning jars and seal with hot, sterilized canning lids.
- Flip upside down and let rest 5 minutes on their lids.
- Return to upright position and let cool.
- Store in refrigerator,unopened,up to 6 months or in freezer.
- Once opened, use up in several weeks.
APRICOT ORANGE ALMOND JAM

- Chop the apricots coarsly and put into a large bowl. Sprinkle-on the grated zest of the oranges and the cinnamon.
- Squeeze the juice of the oranges, measure and add enough water to make 6-cups total. Pour the liquid over the fruit, gently combine, and set out overnight in a cool place (not in the fridge).
- The next day, simmer the apricots in a heavy pan until fruit is nicely tender; 1 to 2 hours. Use a potato masher to crush fruit if desired. I like the apricots in larger chunks so I don't mash them.
- Add the sugar to the pan together with juice of the lemons and the almonds.
- Cook 'til sugar is melted, then fast-boil to a setting stage. (drip some on a plate, if a skin forms on top when cooled it's ready).
- Ladle into sterile jars, seal, and process in 10-min. water bath.

- Briefly blend the fruit and place in a large microwave-proof bowl with the sugar. Microwave on High for 3 mins, then stir well. Microwave for a further 3 mins on High, stirring after. Finish with a further 2 mins, then pour into warm sterilised jars. Once bottled and cool the jam is ready to eat. Will keep in a cool, dark place for up to 6 months. Keep in the fridge once opened.

MICROWAVE OATMEAL JAM BARS
I've had this recipe for many years. We got our first microwave in 1983 and this recipe was in the book that came with it. (Sharp Carousel microwave cookbook) It's quick, easy and delicious. The recipe says it makes 32 small bars, but it's hard to cut them that small.

- 1. Lightly grease an 8-inch, heat-resistant, non-metallic baking dish.
- 2. In a medium-sized bowl, cream butter and sugar together until fluffy. Stir in flour, salt, baking soda and oats. Combine until well blended.
- 3. Press one-half of mixture into bottom of prepared baking dish.
- 4. Heat, uncovered, on FULL POWER 5 minutes.
- 5. Spread jam evenly over baked oat mixture.
- 6. Crumble remaining oat mixture over jam and press lightly.
- 7. Heat, uncovered, on FULL POWER 7 minutes. Test for done-ness with a toothpick.(It should come out clean).
- 8. Allow to cool and cut into bars.

APRICOT JAM - MICROWAVE

Steps:
- Put the apricots, water, lemon juice and cloves in a large bowl.
- Cook, covered with pierced plastic wrap for 10 minutes on high, stirring frequently.
- Remove cloves and add the sugar, stirring well.
- Cook covered on high for 15 minutes, stirring every 5 minutes.
- Put a spoonful of jam on a cold plate.
- If a skin forms and the jam wrinkles when the plate is tilted, setting point has been reached.
- If jam is still liquid, cook for a further 2-3 minutes on high, Pour into hot sterilized jars, .cover with seal and ring; cool completely listening for the seal to snap. Any that do not snap seal need to be used with in a week. Or alternately pour into freezer containers; cool completly and freeze.".
CHERRY ALMOND JAM

Steps:
- Finely chop cherries.
- In a large stainless or enamel pot add cherries, liqueur and lemon juice.
- Bring to a boil stirring frequently.
- Add sugar stirring until dissolved.
- Return to a rolling boil, stir in the pectin to dissolve and boil for 1 min stirring constantly.
- Remove from heat and skim.
- Ladle into clean hot jars leaving 1/4 inch head space.
- Process 10 minutes in a boiling water bath at altitudes up to 1000 feet.
GRAPE JELLY
This slightly tart, vibrant red jelly makes a lovely change from the usual jams

Steps:
- Tip the grapes into a large saucepan set over a low heat, then cover and leave to gently cook for 5 mins until the juices start to run. Take a potato masher or fork and mash up the grapes. Leave to cook for about 10 mins more, mashing every now and again until the grapes are falling apart. Place a clean tea towel or kitchen cloth in a sieve set over a bowl, then pour the grape mixture into this. Let the mixture drip through for at least 1 hr or preferably overnight.
- Measure out the juice (you should have about 600ml) and pour it into a pan along with the sugar and lemon juice. Set the pan over a high heat and bring to the boil. Skimming any scum as it boils, let the mixture bubble until the temperature reaches 105C on a sugar thermometer. If you don't have one, put a small plate in the freezer for 5 mins, then pour a little of the juice onto the cold saucer. After 1 min, run your finger through; if the jam wrinkles slightly, it's ready. Pour the hot jam into a sterilised jar. Will keep unopened for up to 3 months.
