FROZEN CHICKEN BREASTS IN MICROWAVE



Frozen Chicken Breasts in Microwave image

How I cook frozen breasts without defrosting them. I normally don't think two days in advance to thaw them :-) The time will differ slightly based on the thickness of your breasts and the wattage of your microwave. IQF = individually quick frozen.

Yield 2 lbs cooked breast, 1 1/2 cups broth

Number Of Ingredients 2

2 lbs iqf boneless skinless chicken breasts
1/2-2 cup water

Steps:

  • Layer frozen breasts in a round pie or casserole dish. (Try to fit as many on the bottom as possible.) Add enough water to cover the top layer at least half way. Cover with tight fitting lid, or saran wrap.
  • Microwave on high for 10 minutes. Let them sit for about 3 minutes, and then check on them (watch out for the steam, I always burn myself.)
  • Remove the cooked breasts from the bottom to a separate dish, recover the remaining breasts and cook for an additional 3-4 minutes depending on the thickness.
  • Use in whatever recipe as you desire - the water turns into a decent broth.
  • Update: I decided to try this with some frozen, skin on and bone in thighs. It was a terrible mistake - the bones apparently make the cooking time considerably longer (upwards of 45 minutes.) I would recommend just sticking with boneless skinless :-).

1 can (8 ounces) tomato sauce
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/2 cup cornflake crumbs
1/4 cup grated Parmesan cheese
1 teaspoon dried parsley flakes
6 boneless skinless chicken breast halves
1 egg, beaten
2/3 cup shredded part-skim mozzarella cheese

Steps:

  • In a microwave-safe bowl, combine the tomato sauce, Italian seasoning and garlic powder. Cover and microwave on high for 2 minutes; stir. Cook at 50% power for 3-5 minutes or until mixture simmers, stirring once; set aside. , In a bowl, combine the crumbs, Parmesan cheese and parsley. Dip the chicken into egg, then roll in the crumb mixture. Place in a lightly greased shallow 3-qt. microwave-safe dish. Cover and microwave on high for 10-12 minutes, rotating a half turn after 5 minutes. , Pour tomato mixture over chicken; sprinkle with mozzarella. Cook, uncovered, at 50% power for 3-5 minutes or until meat juices run clear.

This is one of the few main dishes I cook completely in the microwave. It's easy, delicious and simple to adapt to ingredients on hand. If I don't have spaghetti sauce, I substitute a can of diced tomatoes, a can of tomato sauce, along with some basil, oregano, and a bay leaf. You can also cut the chicken into strips or chunks, depending on your preference.

4 boneless skinless chicken breasts
1/2 medium green pepper, thinly sliced
1/2 medium red pepper, thinly sliced
1/2 medium onion, thinly sliced
2 garlic cloves, minced
8 ounces fresh mushrooms, sliced
2 stalks celery, sliced
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon water
4 ounces of sliced black olives, drained
2 cups prepared spaghetti sauce
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons tomato paste

Steps:

  • Combine celery, peppers, onion, garlic and mushrooms with 1 T water and 1 T butter in a 2 quart microwave-safe dish.
  • Cook uncovered on high for 3-4 minutes, stirring after every minute.
  • Drain.
  • Stir in spaghetti sauce, olives, tomato paste, salt and pepper.
  • Slice chicken breasts in half lengthwise.
  • Slide chicken into casserole dish with other ingredients, turning to coat with sauce.
  • Arrange with meatiest portions out towards the outside of the dish.
  • Cover and cook 10-12 minutes on high, or until chicken is cooked through.
  • Serve over hot pasta or rice.

8 ounces asparagus, trimmed, cut in half lengthwise
4 (1/4-inch-thick) chicken cutlets (about 12 ounces)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon fresh lemon juice
6 thin slices lemon
2 teaspoons drained capers
2 tablespoons chilled unsalted butter, cut into cubes
1 tablespoon coarsely chopped parsley
An 8x8-inch microwave-proof baking dish

Steps:

  • Arrange asparagus in an even layer in baking dish. Season chicken on both sides with salt and pepper, then arrange in an even layer over asparagus. Pour lemon juice over and top with lemon slices and capers.
  • Cover with plastic wrap, poke a small hole in the center, and microwave on high 2 minutes. Remove from microwave, flip and rotate chicken pieces, re-wrap, and microwave on high another 2 minutes. Pierce chicken with a paring knife; if juices don't run clear, continue microwaving at 10-second intervals.
  • Transfer chicken, asparagus, and lemon slices to a serving platter; immediately whisk butter into liquid in baking dish until melted. Stir in parsley, then pour over chicken to serve.

  • Take whole chicken and make diagonal slits in breast and thighs.
