CARAMEL NUT MARSHMALLOWS
These are a different kind of treat for the holiday candy plate. I had this recipe long before microwaves, but now preparation is much easier.-Berdine See, Independence, Iowa

Steps:
- Line a baking sheet with waxed paper; set aside. Place nuts in a shallow dish. In a large microwave-safe bowl, combine caramels and water. Microwave, uncovered, on high for 30-90 seconds or until melted, stirring twice., Dip each marshmallow into melted caramel, then roll in pecans. Place on prepared baking sheet. Let marshmallows stand until set.

EASY MICROWAVE CARAMELS
These caramels were "homework" for a candy-making class that I took some time ago...and I've repeated that assignment over and over since! I usually make an extra batch and freeze it for company or last-minute gift-giving. After only about 20 quick seconds in the microwave, the frozen caramel is soft enough to cut, wrap and pack into a candy jar.

- In 2-qt. microwave-safe pitcher, combine the butter, sugar, syrup, milk and salt. Microwave on high for 2-3 minutes, stirring once after every minute. When butter is melted, stir well. Attach microwave candy thermometer. Microwave on high for about 8 minutes or until mixture reaches 245° (firm-ball stage). No stirring is needed. Remove from microwave; stir in vanilla and walnuts. Let stand for 10 minutes, stirring well several times. Pour into buttered 13x9-in. pan (smaller 11x7-in. pan yields thicker candy as shown in photo). Refrigerate until cool. Invert pan. Carefully tap out whole block of candy; cut in squares. Wrap in waxed paper and store in refrigerator. (Can also freeze.)

CARAMEL NUT ROLLS (CANDY)
This is hands down one of the best homemade Christmas candies I've ever had. My mother got the recipe from a coworker who brought these to an office party. It's really easy to put together, especially since you use the microwave. I'm normally not a fan of microwave cooking but this is an exception. You could substitute the type of nuts. Mom made it with pecans but said it was good with peanuts too. Prep time doesn't include chilling time.

Steps:
- Put the caramels, butter and and half and half in a 2 quart casserole dish or mixing bowl.
- Microwave on medium 3-5 minutes, stirring after 2 minutes, then every minute after.
- Stir in the sugar until smooth, then add nuts.
- Stir in the marshmallows, using only a few strokes.
- Sprinkle 2 large sheets of waxed paaper with coconut.
- Split mixture in half and spoon onto coconut.
- Shape into logs, coating well with coconut.
- Chill til hard, then slice.

MICROWAVE CARAMEL FUDGE
This is the most delicious tasting fudge, and so easy to make, just mix, and microwave, no need to use a candy thermometer for this just make sure to cook the fudge mixture for the full 15 minutes that's what gives this fudge it's flavour and texture. Since this makes a thin layer of fudge, I sometimes make two separate batches and stack them on top of each other to make a thicker layer ---- well many mixed reviews so I am guessing that every microwave heats differently for me I always have great results!

Steps:
- In a large microwave-safe glass bowl (8-cup Pyrex measuring cup works well) with a spoon mix together whipping cream, white sugar and brown sugar just until combined; microwave at high for 15 minutes stirring, using a wooden spoon at half time (note: it is important that the mixture cooks in the microwave for the full 15 mins).
- Remove from microwave (careful the bowl is HOT!).
- Add butter and vanilla; with a spoon, mix well for about 1 minute.
- Add chopped nuts (if using) mix.
- Pour into a buttered 8 x 8-in square baking pan (or a smaller pan).
- Refrigerate for 2 or more hours before cutting into small squares.
- Delicious!
