Steps:
- Line a baking sheet with waxed paper.
- Melt butter in a skillet over medium-high heat; add almonds, sugar, and syrup. Cook and stir the almonds until the mixture turns caramel in color, about 6 minutes.
- Spread the mixture onto the prepared baking sheet in a thin layer. Cool until the mixture hardens and break into pieces to serve.

- MICROWAVE DIRECTIONS: Line cookie sheet with foil; lightly butter. In 8-cup microwave-safe measuring cup or medium microwave-safe bowl, combine sugar and corn syrup; mix well.
- Microwave on HIGH for 4 minutes; stir. Add almonds; blend well.Microwave on HIGH for 3 1/2 to 4 1/2 minutes or until mixture is very light brown. Stir in butter and almond extract. Microwave on HIGH for 1 minute.
- Add baking soda; stir quickly to blend. Pour immediately onto buttered, foil-lined cookie sheet, spreading mixture quickly with wooden spoon. Cool 30 minutes. Break into pieces. Store in tightly covered container.

Steps:
- Mix sugar and corn syrup in a microwave-safe dish.
- Microwave mixture for three (3) minutes.
- Stir again and place in the microwave for an additional four (4) minutes.
- Stir in walnuts, salt, vanilla and butter.
- Mix with Electric Mixer until mixture is well blended and Fluffy.
- Grease a cookie sheet with butter.
- Spread mixture on cookie sheet in any desired thickness.
- After candy cools SLIGHTLY stretch the brittle to your desired thickness.
- Cool at least one hour.
- When cooled break into pieces and store in covered (tight) container.
MACADAMIA ALMOND BRITTLE

- In a 1-1/2-quart microwave-safe bowl, combine sugar and corn syrup. Microwave on high for 3 minutes. Stir in nuts. SALTED ALMOND BRITTLE

- Lightly butter a lipped baking tray and spread the almonds over it in a thin, even layer. Put the sugar, butter, salt and 4 tbsp water into a smooth-bottomed frying pan and heat gently, stirring, until the sugar dissolves. Increase the heat and boil for about 5 mins, or until it starts to turn light golden brown. Stir every now and again as some patches will start to caramelise faster than others. Carefully tip the caramel over the nuts and leave to cool completely.
- Once cold, shatter the caramel. An easy way to get clean sharp pieces is to put the point of a sharp knife vertically onto the caramel and bash the handle with a rolling pin, like a hammer and chisel. Serve on top of the Chocolate amaretti puddings. Keep for up to 2 days in an airtight container, interleaved with non-stick paper, in a cool, dry place (not the fridge).

CASHEW BRITTLE (MICROWAVE)
From GE Microwave cookbook, 1977. Fast and easy brittle that sure beats standing over the stove stirring! Have made this so many times I can count them all.

- In 1 1/2 qt casserole, stir together sugar and syrup.
- Micro on high for 4 minutes.
- Stir in cashews.
- Micro on high 3-5 minutes only until light brown.
- Add butter and vanilla, blending well.
- Micro on high 1-2 minutes more.
- Nuts will be lightly browned and syrup very hot!
- Add baking soda and stir gently stir until light and foamy.
- Pour onto lightly greased cookie sheet.
- Cool 30-60 minutes.
- Break into small pieces and store in airtight container.
- NOTE: can sub 1 cup salted peanuts, OR 1 cup pecan halves, OR 1 cup dry roasted almonds with 1 tsp almond extract for the vanilla and omit butter adding 1 cup shredded coconut with the almond extract.

Steps:
- Bring the water to a boil in a large, heavy saucepan over moderate heat.
- Stir in the sugar and corn syrup until dissolved.
- Cook to the hard-ball stage (250F, 121C) and add the almonds and salt.
- Cook, stirring occasionally, to the hard-crack stage (300F, 150C).
- Remove from the heat and stir in the butter, vanilla, and baking soda.
- Pour the mixture onto a well buttered slab or baking sheet and spread it out with a spatula, making it as thin as possible while it is still hot.
- Cool to room temperature and break into pieces.
- Store in an airtight container.
BEST EVER MICROWAVE PEANUT BRITTLE
Note your microwave needs to be 750 to 950 watt. If your microwave is higher need to lower your cooking times and if your microwave is less you will need to increase your cooking time. I'm sorry I did not update this sooner.

This is a really simple way of making nut brittle, without using a candy thermometer or doing any of the stage tests. A trick that I use is to line the cookie sheet with parchment paper so there's no sticky stuff to pry off and then wash up.

- Spray cookie sheet and metal spatula with the cooking spray.
- In a 2-quart microwavable glass measuring cup or bowl stir sugar, corn syrup and salt with a wooden spoon until mixed.
- Microwave on High (100%) 7 to 8 minutes or until syrup is pale yellow.
- (CANDY SYRUP IS VERY HOT. HANDLE CAREFULLY; DO NOT TOUCH HOT MIXTURE.) Stir in nuts.
