MARION'S MICHIGAN SAUCE FOR HOT DOGS

Recipes for this Northern New York specialty are closely guarded like Barbecue down South. Try this with chopped onions on your hot dogs for a new taste treat.

1 lb ground beef
1 medium onion
3 tablespoons brown sugar
3 tablespoons apple cider vinegar
4 tablespoons chili powder
1 tablespoon yellow mustard
1 (8 ounce) can tomato sauce
1 cup water
1 teaspoon garlic powder
1 teaspoon crushed red pepper flakes
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Finely chop onions and saute in a little olive oil until tender.
  • Add ground beef and cook until browned. Separate meat so it is broken into very fine pieces of meat.
  • Add rest of ingredients, mix, and cook over low heat on the stove 1 hour or more.
  • This could be cooked in a crockpot on low for six hours.
  • Serve as a topping on hot dogs.

1 tablespoon olive oil
3/4 cup white onion, finely chopped (plus more for garnish)
1/4 teaspoon sea salt (or to taste and divided)
2 large garlic cloves, pressed
1 lb lean ground beef
1/2 teaspoon black pepper, to taste
1/2 cup ketchup
2 tablespoons brown sugar
2 tablespoons prepared yellow mustard (plus more for garnish)
1 tablespoon chili sauce (such as Heinz)
1 tablespoon frank's hot sauce
1/2 tablespoon Worcestershire sauce
1/2 tablespoon white vinegar
1 teaspoon chili powder
1 teaspoon mild paprika
1 teaspoon ground cumin
1 (8 ounce) can tomato sauce
2 tablespoons tomato paste
6 sausages
6 hot dog buns

Steps:

  • In a large skillet over medium heat, add oil and when it gets hot, add onion and a pinch of salt; sauté until translucent, about 2 minutes.
  • Add garlic and sauté for only 1 minute.
  • Add ground beef, breaking into small pieces; season with salt and pepper. Cook until barely pink.
  • When the beef is almost done, add ketchup, brown sugar, mustard, chili sauce, hot sauce, Worcestershire sauce, white vinegar, chili powder, mild paprika and cumin; stir to combine.
  • Add tomato sauce and tomato paste; stir well.
  • Cover and bring mixture to a gentle boil; reduce the heat to medium-low and simmer for 50 to 60 minutes.
  • Ten minutes later, uncovered and continue cooking until the liquid is evaporated, stirring often.
  • When the sauce is thick, start steaming the hot dogs and warm up the buns.
  • When ready to serve, place the dogs in the warm buns, spoon on a generous amount of the meat topping, drizzle on some mustard and garnish with chopped white onions.

2 lbs lean ground beef
1 (15 ounce) can tomato sauce
1/2 cup water
1/4 cup barbecue sauce
2 tablespoons minced dried onion flakes
2 -4 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon hot pepper sauce

Steps:

  • In a large saucepan, cook ground beef until browned.
  • Drain off fat.
  • Stir in tomato sauce, water, barbecue sauce, dried onion, chili powder, cumin, garlic powder and hot pepper sauce.
  • Bring to boiling; reduce heat.
  • Simmer, covered, for 30 minutes.
  • Uncover; simmer 5 to 10 minutes or to desired consistency.
  • Makes about 5 cups sauce, enough for 15 hot dogs.

1 tablespoon butter
1 onion, chopped
2 tablespoons white vinegar
2 tablespoons brown sugar
3 tablespoons lemon juice
½ tablespoon prepared mustard
3 tablespoons Worcestershire sauce
1 pound lean ground beef
1 cup ketchup
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
salt and pepper to taste

Steps:

  • Melt butter in a saucepan over medium heat. Saute the onion in butter until soft. Stir in the vinegar, brown sugar, lemon juice, mustard, Worcestershire sauce, ketchup, tomato sauce, and tomato paste. Stir to blend.
  • When the mixture begins to simmer, add the raw ground beef breaking it into pieces with a wooden spoon. Simmer for 20 to 30 minutes. Serve over steamed hot dogs. Of course you can add some raw onions if you want.

8 frankfurter (5 in long x 3/4 in dia, 10 per pound)s hot dogs
1 pound lean ground beef
1 medium onion, diced, divided
½ cup water
¼ cup ketchup
2 tablespoons tomato paste
2 tablespoons distilled white vinegar
2 tablespoons Worcestershire sauce
2 teaspoons chili powder
1 (11 ounce) package hot dog buns
2 tablespoons prepared yellow mustard, or to taste

Steps:

  • Place hot dogs in a large stockpot. Cover with water and bring to a boil. Turn heat off, cover, and let sit.
  • Heat a skillet over medium-high heat, add ground beef and half of the diced onions. Cook and stir until beef is no longer pink; making sure to break into fine pieces, about 8 minutes.
  • Meanwhile, whisk water, ketchup, tomato paste, vinegar, Worcestershire sauce, and chili powder until smooth.
  • Drain ground beef mixture and return to the skillet. Stir in reserved ketchup mixture, reduce heat, and simmer for 10 minutes.
  • Place hot dogs in buns. Top hot dogs with beef mixture. Divide remaining onions on top of the beef mixture and garnish with mustard.
