SMASH BURGERS WITH GRIDDLED ONIONS AND SPICY SPECIAL SAUCE

Smash Burgers with Griddled Onions and Spicy Special Sauce image

Smash burgers are an iconic staple of American diners, with their toasted buns and that mysteriously delicious special sauce. My version amps up the flavor of the special sauce with pickled jalapenos and adds a slight smoky, sweet flavor from griddled onions. The secret to the perfect smash burger is not overworking the meat so that it's tender and juicy but still gets a browned, salty crust with a hit of pepper and melty cheese draped over the top.

Provided by Rick Martinez

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 14

1/4 cup mayonnaise
1 to 2 pickled jalapenos, chopped
2 teaspoons pickled jalapeno brine
2 teaspoons Dijon, spicy brown or yellow mustard
1 small garlic clove, finely grated
1 pound ground beef chuck (20% fat)
1/2 pound ground beef brisket and/or short rib (20% fat)
4 tablespoons vegetable oil
1 large onion, halved and thinly sliced
1 large pinch sugar
Kosher salt and freshly ground black pepper
4 thin slices cheese such as Cheddar or Monterey jack
4 seeded hamburger buns or potato rolls, toasted
Lettuce and sliced tomatoes, for serving

Steps:

  • Whisk the mayonnaise, pickled jalapenos, brine, mustard and garlic together in a small bowl. Set aside until ready to serve.
  • Combine the chuck and brisket in a medium bowl and using 2 forks, "pull" the meat apart, breaking up any clumps and combining the two meats together. This will seem counterintuitive but it will blend the meats together without compacting them. Divide into 4 equal portions and form balls (about the size of tennis balls) being careful not to compact or overwork the meat -- do not form patties.
  • Heat 2 tablespoons of the oil in a large cast-iron skillet over medium-high heat. Add the onions and season with salt and pepper; cook, tossing occasionally, until golden browned, 6 to 8 minutes. Sprinkle with the sugar and toss until caramelized, about 1 minute. Transfer to a plate.
  • Increase the heat to high and heat the same skillet until very hot. Add the remaining oil (or 1 tablespoon oil, if working in batches), swirling to coat.
  • Working in batches if necessary, place balls in the skillet and smash flat with a metal spatula using the handle of a wooden spoon to press down on the spatula to form 4-inch patties (you want to see craggy edges). Season liberally with salt and pepper and cook, undisturbed, until the outer edges are brown, 1 to 2 minutes. Flip the patties, season with salt and pepper and top each patty with a slice of cheese. Cook until the cheese droops and the burgers are medium-rare, about 1 minute.
  • Serve the patties on the toasted buns with the spicy special sauce, griddled onions, lettuce and tomatoes.

GYRO-STYLE LAMB BURGERS WITH TZATZIKI AND GRILLED ONIONS

Gyro-Style Lamb Burgers with Tzatziki and Grilled Onions image

Provided by Michael Symon : Food Network

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 16

1 1/2 pounds ground lamb
2 teaspoons ground coriander
3 tablespoons finely chopped fresh mint
Kosher salt and freshly ground black pepper
Olive oil, for the skillets
1 large red onion, peeled and sliced into 4 thick slices
8 ounces Greek yogurt
1 clove garlic, minced
Zest of 1/2 lemon
1/4 cup minced cucumber
1 1/2 tablespoons finely chopped fresh dill
1 tablespoon finely chopped fresh mint
Kosher salt and freshly ground black pepper
4 small soft pitas, toasted if desired
Chopped tomato, for serving
Chopped romaine lettuce, for serving

Steps:

  • Prepare a grill for medium-high heat. If using a charcoal grill, build the hot coals evenly over the bottom. Heat 2 flat cast-iron skillets over direct heat.
  • For the burgers and onions: Combine the lamb, coriander and mint in a large bowl. Form the meat mixture into 4 equal thin half-moon shaped patties. Season the patties with salt and pepper on both sides. Add a splash of oil to the cast-irons. Cook the patties 3 to 5 minutes, allowing the meat to get a nice crust. Flip and cook for an additional 2 to 3 minutes. Remove the burgers from the heat and let rest 2 to 3 minutes before assembling the burgers.
  • Meanwhile, drizzle the onions with oil and season with salt and pepper. Grill, flipping once, until softened and charred, about 5 minutes.
  • For the tzatziki: Add the yogurt, garlic, lemon zest, cucumber, dill and mint to a large bowl and mix to combine. Season with salt and pepper.
  • To serve: Spread some tzatziki over each pita, add a patty to one half of each pita, top with some grilled onion and add some chopped tomato and lettuce. Fold the other half of each pita over. Serve!

BURGERS

Provided by Michael Symon : Food Network

Time 20m

Yield 4 servings

Number Of Ingredients 11

1/2 pound ground brisket
1/2 pound ground short rib
1/2 pound ground sirloin
Kosher salt and freshly ground black pepper
4 slices American cheese
3 tablespoons mayonnaise
4 soft potato rolls, such as Martin's
8 slices thick-cut bacon, cooked until crispy
1/4 cup shaved raw red onion
Pickle slices, such as Tony Packo's Sweet Hots or a crunchy dill pickle variety, for serving
Brown mustard, such as Bertman Ballpark Mustard or similar, for serving

Steps:

  • Preheat a grill or grill pan to medium-high heat. If you're not using an outdoor grill, preheat a second grill pan over medium heat (for a side griddle).
  • Gently mix together the brisket, short rib and sirloin in a large bowl. Divide the mixture into 4 equal pieces and gently form into burgers, being careful not to pack too tightly.
  • Season both sides of the burgers with a good amount of salt and freshly ground black pepper.
  • When the grill or first grill pan is at medium-high, place the burgers on the grill and cook to your desired temperature, 3 to 4 minutes per side for medium rare. Add a piece of cheese to each burger and cook for another minute or so until it is melted.
  • In the meantime, spread the mayo on the cut side of the buns and place them over medium heat or on the secondary grill pan to toast.
  • Build the burgers by placing a burger on each bottom bun and top with 2 pieces of bacon, some red onion, pickles and mustard.

GRILLED SKIRT STEAK WITH STICKY BARBECUE ONIONS

Grilled Skirt Steak with Sticky Barbecue Onions image

Provided by Michael Symon : Food Network

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 15

4 tablespoons unsalted butter
4 yellow onions, thinly sliced
Kosher salt and freshly ground black pepper
2 ounces ketchup
2 ounces apple cider vinegar
2 tablespoons Dijon mustard
2 tablespoons light brown sugar
1 teaspoon cayenne
1 teaspoon ground cumin
1 teaspoon sweet paprika
2 pounds skirt steak, cleaned
Kosher salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil, plus more for the cutting board
1 tablespoon fresh oregano leaves, finely chopped
1 teaspoon sweet paprika

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • For the sticky barbecue onions: Heat a cast-iron skillet over direct heat. Melt the butter. Add the onions with a pinch of salt and cook until they begin to caramelize, about 5 minutes. Whisk together the ketchup, vinegar, mustard, sugar, cayenne, cumin and paprika in a small bowl (see Cook's Note). Add the sauce to the onions. Season with salt and pepper. Bring to a simmer and cook until the liquid reduces and begins to get sticky, 8 to 10 minutes. Move over indirect heat to keep warm while you cook your steak.
  • For the steak: Sprinkle the steak with salt and pepper on both sides and bring to room temperature. Drizzle the steak with the oil and sprinkle with the oregano and paprika on both sides. Place the steak over direct heat and cook until it gets a nice char, 3 to 5 minutes per side for medium-rare.
  • Add a splash of oil, a pinch of salt and some pepper to a cutting board. Place the steak on the seasoned oil on the cutting board, flip and rest 5 minutes. Slice the steak against the grain and serve topped with the onions.
  • (Alternatively, you can cook the onions over medium-high heat on a stovetop, and the steak in a grill pan or cast-iron skillet over high heat on a stovetop.)

1 1/2 pounds Ground Beef Chuck
6 slices American Cheese
Salt and freshly cracked Black Pepper
6 Hamburger Potato Buns
Ketchup
Mustard
Mayonnaise
For the Spicy Quick Pickle:
2 Fresno Chilies (thinly sliced)
2 Kirby Cucumbers (thinly sliced)
2 cups White Vinegar
1 teaspoon Sugar
1/2 teaspoon Red Chili Flakes
1 teaspoon Fennel Seeds
1 teaspoon Coriander

Steps:

  • ingredientsVegetable Oil 1 medium Yellow Onion (sliced) instructionsHeat a griddle to medium high. Add a few tablespoons of oil to the griddle and top with diced onions and season with salt. . ingredients1 1/2 pounds Ground Beef Chuck Salt and freshly cracked Black Pepper 6 slices American Cheese instructionsMeanwhile, form 4 ounce balls of the ground beef and season with salt and pepper. Place a ball of meat on top of each onion pile and smashed down with a spatula to flatten. Season meat and cook for 2 minutes or until crispy on the first side. Flip and cook for 1 minute then top with a slice of cheese. Cook for 1 more minute just until the cheese is melted. . ingredientsMayonnaise 6 Hamburger Potato Buns Ketchup Mustard instructionsFor the Condiments: Spread mayo on the bun and warm bun on the griddle the place a cooked cheesy pattie on the bottom of the bun. Top with the spicy quick pickle and your favorite condiments. . ingredients2 cups White Vinegar 1 teaspoon Sugar 1/2 teaspoon Red Chili Flakes 1 teaspoon Fennel Seeds 1 teaspoon Coriander 2 Fresno Chilies (thinly sliced) 2 Kirby Cucumbers (thinly sliced) instructionsFor the Spicy Quick Pickle: Combine vinegar, sugar, chili flake, fennel and coriander in a small pot and bring to a boil. Pour over prepared vegetables. Allow to sit until liquid is room temperature. Strain and serve. Helpful Tips: 1. When making burgers, you shouldn't use meat with less than 20% fat. Ground meat with a higher percentage of fat has more flavor than lean meat. 2. Only press the patties when they first go on the grill. Pressing burgers after they've been cooking squeezes the juice out, leaving you with dry burgers. 3. When melting cheese on the burger, put a splash of water on the griddle and cover the burger with a lid to create steam melting the cheese faster.
