- Preheat oven to 350 degrees F (175 degrees C). Spray a miniature muffin pan with cooking spray.
- Insert wonton wrappers into the muffin pan so as to form small cups. Bake 5 minutes in the preheated oven. Allow the baked wrappers to cool. Remove from the pan.
- In a medium bowl, mix the sausage, Monterey Jack, Cheddar, black olives and Ranch-style dressing. Fill the baked wonton wrapper cups with the mixture.
- Bake the filled wonton wrappers 10 to 15 minutes, until the sausage mixture is bubbly and slightly brown. Watch closely so the wonton wrappers do not burn.

- Remove casings from sausage, if necessary; crumble into large nonstick skillet. Add ground turkey; cook on medium-high heat 10 min. or until no longer pink, stirring frequently. Drain meat; return to skillet.
- Add garlic and cumin; cook and stir 2 min. Add cheese and salsa; cook 2 to 3 min. or until cheese is melted and mixture is well blended, stirring frequently. Cool slightly.

- Brown the ground beef. Add onion and taco seasoning, and let onions get soft. Then add the tomatoes with green chilies and water.
- Push a wonton wrapper into the bottom of each of the muffin cups. Spoon some of the meat mixture into each cup (using about half the total mixture). Sprinkle each cup with the shredded cheese. Press another wonton wrapper on top and repeat the layering steps with the remaining ingredients.

- Combine the ginger, garlic, shallots, mushrooms, cabbage, carrot and scallions in a large bowl. Toss to mix; season with salt and pepper, to taste.
- Heat the sesame oil in a wok or in a large saute pan if you don't have a wok.When the oil is hot, toss the filling mixture around over medium heat. Add the soy sauce and continue to heat until the filling has begun to soften.Remove from the heat. Add the Duck Sauce and mix well. Spread the vegetable mixture out on a large platter and allow it to cool completely; about 30 minutes.
- Place a 1 teaspoon of filling in the center of a wonton wrapper. Wipe each outer edge of the wrapper with a dab of water.Fold the wrapper diagonally over the filling, pressing out any air, to make a triangle. Press the edges firmly together to seal.With the point of the triangle facing you, use your index finger to push the folded side of the triangle down, bringing the two points together over the top. Dip your finger into the water once more, to moisten the two points. Bring the two points together and pinch over the filling to seal. - The wontons freeze remarkably well. Simply lay the wontons on a tray and place them in the freezer for 20 to 30 minutes, to set.Transfer to a freezer bag, and use within three months.

- You can use a smaller pot and save on oil as well. I sometimes don't even bother with a deep fryer, I grab a 3 or 4-quart pot, add oil, fry in a normal everyday pot.
- To assemble the wontons take 1 wonton wrapper, about 2 teaspoons of ground meat and place into the wonton, fold the wonton wrapper over, brush the edges of the wonton with the egg wash, and fold over the wonton. Deep fry until golden and they float.
- The best judge for deep frying is the color and the fact that it is floating in the oil. Serve up your taco wontons with condiments that you enjoy. Shredded cheese over these and popping them into the oven and turning them into nachos is very popular at my house. So is dipping them into your favorite toppings.
