MEXICAN OVERLOADED DOUBLE-BAKED POTATOES
This is Alan's last year in high school. So it is only natural that we ended up with an episode in the new season of Pati's Mexican Table called "Alan Goes to College," where I try to show him how easy it is to make some of his favorite things including these Mexican overloaded double-baked potatoes...It is truly ridiculous how good they are, and you can make them a whole meal on any school night.

Steps:
- Preheat oven to 400 degrees.
- Using a fork, pierce potatoes all around, about 6 to 8 times. Rub potatoes with olive oil, season with salt, and place on a baking sheet. Bake for 1 hour until tender on the inside and crisp on the outside.
- In a medium skillet set over medium heat, cook the bacon until crisp and lightly browned. Transfer to a paper-towel-lined plate and set aside.
- In a small bowl, mix the crema with the sauce from chipoltles in adobo and minced chiles, if using (I do!). Set aside.
- Remove the potatoes from the oven. Using a knife, cut each one open lengthwise and carefully push the ends together, causing the center to open. Scoop out a couple spoonfuls of the cooked potato meat from each and transfer to a bowl. Sprinkle with salt and mix well.
- Inside the scooped potatoes, layer a spoonful of the chipotle crema mixture, a spoonful of grated cheese and a spoonful of the seasoned potato meat. Repeat with the crema, cheese and potato meat. End with a bit of crema and cheese.
- Raise the oven temperature to 500 degrees, or turn on the broiler. Place the stuffed potatoes back on the baking sheet. Return to the oven for 5 more minutes until the cheese has completely melted and has started to crisp. Remove from the oven, sprinkle with bacon and serve immediately.
TACO TWICE-BAKED POTATOES
Steps:
- Preheat the oven to 400 degrees F.
- Wrap the potatoes in foil and bake until cooked through, 1 hour to 1 hour 15 minutes.
- In the meantime, in a large skillet over medium-high heat, brown the meat, about 5 minutes. Drain the liquid from the skillet. Add the black beans, taco seasoning and 1/2 cup water, bring to a simmer and simmer until the sauce is slightly thickened, about 10 minutes.
- Remove the potatoes from the oven and unwrap carefully. Cut a slit lengthwise down the center and spoon out a bit of the potato from the interior of each. Divide the beef and bean mixture among the potatoes, then top each with 1/4 cup of the shredded cheese. Transfer to a baking sheet and bake until the cheese is melted and bubbling, another 15 minutes.
- Put the potatoes on a platter and top each with some sour cream, salsa, red onions and jalapenos, and garnish with chopped cilantro.
ULTIMATE TWICE BAKED POTATOES
I made these up years ago and have been making them ever since. They are always a big hit. These potatoes make a wonderful side dish for any meal and are terrific heated up the next day for lunch.

- Preheat oven to 350 degrees F (175 degrees C).
- Bake potatoes in preheated oven for 1 hour.
- Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
- Bake for another 15 minutes.

TWICE BAKED MEXICAN STUFFED POTATOES

Steps:
- Preheat oven to 425°.
- Pierce each potato several times and bake until tender for about 1 hour.
- Cut off top quarter of one long side of each potato.
- Scoop potato from skins into large bowl, leaving 1/4" thick shell.
- Mash potatoes with milk.
- Mix in cheese, chips, cilantro and onions.
- Season with salt and pepper.
- Fill shells with potato mixture, mounding in center.
- Return potatoes to oven and bake until heated through, about 20 minutes.
- Top potatoes with salsa and sour cream and serve.

MEXICAN BAKED POTATOES
When I traveled to Guadalajara, Mexico last year for a business trip, we ate at a steak restaurant that served very similar baked potatoes with the steak, along with charro beans. To my surprise, I found this similar recipe in one of my cookbooks. I was excited to be able to re-create this recipe at home!

- Bake potatoes until done.
- Slice open the potatoes lengthwise.
- Remove pulp from potatoes and mash.
- Reserve potato skins.
- Mix mashed potatoes, chilies, chopped eggs, butter, sour cream, salt and pepper.

THE BEST TWICE BAKED POTATOES
My husband did not like twice baked potatoes until I made these. They are great. I'm adjusting the milk quantity in this recipe because of some of feedback I've got from people that have made them. Hope it helps with some of the consistency problems.

- Rub potatoes with peanut oil and sprinkle with kosher salt and fresh ground pepper Bake potatoes in 350 degree oven for 1 hour (may be more depending on size of potato) While potatoes are baking cook bacon in large skillet over med high heat until evenly brown.
- Drain, crumble and set aside.
- (May use packaged bacon bits) When potatoes are done allow them to cool for 10-20 minutes.
- Slice potatoes in half lengthwise and scoop the flesh into a large bowl, saving skins.
- Add to the potato flesh the sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions.

Steps:
- Bake potatoes at 400 for 50-60 minutes, or until soft.
- Take out of oven and let cool a little. Once cool, cut them in half legnth wise and scoop out meat from potato skin.
- Place potato meat in bowl along with butter, salsa, sour cream, and salt and pepper. Mix thoroughly.
- Add in the cheddar cheese, and place potato mixture back into potato skins.
- Sprinkle with cheese on top and bake in oven for another 20 minutes, or until warmed through.
- Sprinkle with onion salt and chili powder, to taste (we put alot on).
