Steps:
- Preheat the oven to 375°F (190°C). Cook the ground beef in a 10" (24-cm) Skillet over medium heat for 10-12 minutes or until it's no longer pink, breaking beef into crumbles, then drain. Transfer the beef to a Classic Batter Bowl. Stir in the taco seasoning mix, 1 ½ cups of the cheese, and water.Unroll the crescent dough and separate it into 16 triangles. Arrange the triangles, slightly overlapping, in a circle on a Large Round Stone with the wide ends of the triangles overlapping in the center and points toward the outside. There should be a 5" (13-cm)-diameter opening in the center of the stone. The narrow triangle points of dough will extend off the edge of the baking stone.Using a Large Scoop, scoop the filling evenly over the dough in a continuous circle. Bring the points of triangles up over the filling and tuck them under the dough at center to form a ring. (Filling will show.) Brush the top with the egg white. Sprinkle with the remaining cheese. Bake for 25-30 minutes or until it is golden brown. Serve with toppings.

Steps:
- Season all sides of the beef with a fair amount of salt and pepper. In a large Dutch oven, or other heavy pot that has a tight cover, heat 2 tablespoons of olive oil over moderately high heat. Add the garlic and the beef to the pot, browning the meat on all sides, taking the time to get a nice crust on the outside. Add the onion and allow to lightly brown, about 3 to 4 minutes. Add the crushed tomatoes, plus 1 tomato can of water, spices, season with salt and pepper, to taste, and add enough water to cover the meat. Bring to a boil then reduce heat and simmer with a lid for 3 hours until the meat is fork tender. Let meat cool in the liquid. Shred meat and set aside.
- Heat a large pot of oil over medium heat. When oil reaches 350 degrees F, fry the corn tortillas 1 at a time. Place the tortilla in the oil and wait about 30 seconds. Then use the handle of a wooden spoon to press down into the center of the tortilla and fold it in the middle. Hold down for a few seconds waiting for the tortilla to form into taco shell and then drain on paper towels. Season with salt.
- To make salsa, pulse all the ingredients, except the tomato juice, in a food processor. Add the reserved tomato juice if the salsa is too thick. Drizzle salsa with olive oil, cover with plastic wrap and set aside, allowing the flavors to marry.
- To assemble the tacos:
- Lay some shredded cabbage as a base. Top with some shredded beef. Serve alongside Guacamole and salsa. Garnish with fresh cilantro leaves.
- Halve and pit the avocados. With a tablespoon, scoop out the flesh into a mixing bowl. Mash the avocados using either a fork or potato masher, leaving them still a bit chunky. Add the remaining ingredients, and fold everything together. Drizzle with a little olive oil, adjust seasoning with salt and pepper and give it 1 final mix with a fork.
- Lay a piece of plastic wrap tight on the surface of the guacamole so it doesn't brown and refrigerate for at least 1 hour before serving.

- Mezcal-Marinated Fajitas. The mezcal and fish sauce in these fajitas make for a surprisingly good combination. You’ll get a smoky, earthy flavor from the mezcal, while the fish sauce adds a little funk and saltiness.
- Churros with Bittersweet Chocolate Sauce. The shape of pastry tip you use for this churros recipe is very important. If the tip isn’t closed, or rounded off, the churros may break as you’re frying them (we used size 845 tips).
- BA's Best Guacamole. This easy guacamole recipe is best made in a Mexican mortar and pestle called a molcajete, but a bowl and a fork works fine. Just don’t rush to get it on the table.
- The Tostada That Wants to Be a Memela. Since finding fresh masa in the U.S. is hit or miss, we call for fresh corn tortillas, which technically makes this a tostada.
- One-Skillet Corn Chilaquiles. This recipe makes just enough salsa verde to coat one bag of chips, but it's so tasty and versatile that we always make a double batch.
- Fried Whole Fish with Tomatillo Sauce. Cutting those slits in the fish is key. They help the fish cook more quickly and make it easier to tell when it's done.
- Chickpea and Chorizo Tostadas. Crunchy, creamy, chorizo-y—these quick tostadas hit all the notes. View Recipe.
- Salsa Cruda. Salsa cruda tastes best drizzled atop some kind of meat-based antojitos or entrées (such as carnitas), or at least a dish with very robust, “meaty” vegetables, like grilled portobello or king oyster mushrooms.
- Party Posole Rojo. Posole is one of the tastiest, prettiest one-pot dishes on earth. Make ahead and all that’s left to do is ice some beers and set out all the toppings.

- Mexican food is often made with lots of veggies and fruit. Most people think of refried beans and rice when they go to a Mexican food restaurant. But the country is full of healthy veggies and fruit.
- Caesar salad was invented in Mexico. Who knew that Caesar salad was invented in Mexico! It’s true. We usually think of Caesar salad as being quite American – the perfect accompaniment to steak and baked potato.
- Tomatoes originated in Mexico. Sorry, Italy! Even though you’re famous for your pasta sauces, you can’t claim tomatoes as a national food. When the Spanish conquered Mexico in the 16th century, they discovered that Aztecs used tomatoes in their cooking.
- Nachos were invented on the spot by Mr. Nacho. When talking about Mexican cuisine, you have to know some facts about nachos. Nacho is a very common nickname in Mexico.
- Ummm… Guacamole means “testicle sauce”? Okay, so you know avocados are used to make guacamole. But you probably don’t know one of the most interesting facts about guacamole.
- Mexican avocados were banned from the US. Another of our interesting guacamole facts is that one of the most popular avocados you can find – the Hass – wasn’t allowed to be imported into the United States, starting in 1914.
- The fajita craze only started in the 1970s. Mexican cowboys in Texas started eating fajitas in the 1930s. They grilled their skirt steak with veggies and served it as an appetizer with a tortilla.
- You’ll need special gadgets to whip up some Mexican dishes. Molcajete is used to grind up salsa or spices. Molinillo is a whisk that’s great to make chocolate foam.
- Tamales have been around for centuries. Fajitas may be a new thing, but tamales are ancient, dating back about 8,000 years. The word “tamale” stems from tamalii, a Nahuatl word spoken by the Aztecs that means “wrapped food.”
- Not every region in Mexico serves the same type of Mexican food. People in the northern part of Mexico prefer meat-based cuisine. Mexicans in the southern part enjoy chicken and veggies.
