1 pound dry penne pasta
1 tablespoon butter
6 skinless, boneless chicken breast halves - cut into 1 inch cubes
½ teaspoon ground black pepper
¼ teaspoon salt
1 (8 ounce) bottle Caesar salad dressing
¼ cup red wine vinegar
½ cup grated Parmesan cheese
1 head romaine lettuce - rinsed, dried and shredded
1 large tomato, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a large skillet over medium heat. Add chicken, pepper and salt. Cook 10 minutes or until chicken is cooked through. Remove skillet from heat.
  • In a bowl, mix together salad dressing, vinegar and cheese. Toss together pasta, chicken, lettuce, and dressing mixture. Place in large serving bowl, and sprinkle with tomato. Garnish with croutons and Parmesan curls, if desired.

4 chicken breasts (boneless, skinless)
1 cup Caesar salad dressing ((click for homemade recipe))
½ cup sour cream ((optional))
1-1½ cup Parmesan cheese (grated)

Steps:

  • Heat oven to 375F and spray the inside of an 8" x 11" baking dish with cooking spray.
  • If the breasts are uneven thickness, pound them (placed in a Ziploc bag and on a flat surface) to an even ¾"-1" thickness using a meat pounder. Sprinkle the breasts (both sides) with grated Parmesan cheese & freshly ground black pepper, and place them in the prepared baking dish.
  • Whisk together Caesar dressing and sour cream in a small bowl. Pour the Caesar/sour cream mixture over each breasts then sprinkle grated Parmesan cheese on top.
  • Place the prepared chicken in the oven and bake at 375F for 30 minutes or until a meat thermometer inserted in the thickest part of one of the middle breasts reads 150°F.
  • Turn the oven to broil and broil the breasts an additional 2-4 minutes or until the chicken turns golden brown. It can burn quickly, so watch it closely. When done, a meat thermometer should register 165F when stuck into the thickest part of one of the middle breasts. Remove from the oven, cover loosely with foil and allow chicken to rest 5-10 minutes before serving.
  • If desired, garnish with chopped parsley.

1/2 cup KRAFT Classic Caesar Dressing, divided
4 bone-in chicken breasts (1-1/2 lb.)
1-1/2 lb. baking potatoes (about 5), cut into thin wedges
1 large red pepper, cut into strips
1/2 cup frozen peas
1/4 cup KRAFT Grated Parmesan Cheese, divided

Steps:

  • Pour 1/4 cup dressing over chicken in shallow dish; turn to evenly coat both sides of each breast. Refrigerate 30 min. to marinate.
  • Heat oven to 400°F. Drain chicken; discard marinade. Toss potatoes and peppers with remaining dressing in 13x9-inch baking dish sprayed with cooking spray; top with chicken. Cover.
  • Bake 30 min. Top with peas and 2 Tbsp. cheese; bake, uncovered, 30 min. or until chicken is done (165ºF). Sprinkle with remaining cheese.

1 pound red potatoes, cut into chunks
1/2 to 3/4 cup Italian salad dressing

  • Place chicken in a greased 13-in. x 9-in. baking dish. Arrange potatoes around chicken. This recipe is from bonappetit.com, and it's a great healthy twist on my favorite salad- Chicken Caesar. It also looks great on the plate. I add capers to this, but it's not part of the original recipe.

4 chicken breast halves
salt and pepper, to taste
1/2 cup parmesan cheese, grated
1/2 cup panko breadcrumbs
3 tablespoons olive oil, divided
2 tablespoons flat leaf parsley, chopped
4 garlic cloves, chopped, divided
2 heads romaine lettuce, halved lengthwise
4 -8 anchovy fillets, drained & chopped
2 tablespoons capers, drained (optional)
1 lemon, cut into 8 wedges

Steps:

  • Preheat oven to 450°.
  • Line a large rimmed baking sheet with foil. Season chicken with salt and pepper; place on prepared sheet. Combine cheese, panko, 2 tablespoons oil, parsley, and half of the garlic in a medium bowl; season with salt and pepper. Pat panko mixture onto breasts. Roast chicken until crumbs begin to turn golden, about 15 minutes.
  • Remove sheet from oven; place romaine around chicken. Drizzle romaine with 1 tablespoons oil and sprinkle with remaining garlic. Season with salt and pepper. Roast until chicken is cooked through and lettuce is soft & browned at edges, about 5 minutes.
  • Divide among plates. Top lettuce with anchovies and capers; garnish with lemon wedges for squeezing over.
