MEXICAN QUESO FUNDIDO WITH CHORIZO

1 tomato, chopped
1 serrano chile, seeds and membranes removed, chopped
2 tablespoons chopped cilantro
Salt to taste
8 ounces Oaxaca cheese, grated
4 ounces Sharp Cheddar cheese, grated
4 ounces Monterey Jack cheese, grated
1 tablespoon flour
1 teaspoon olive oil
5 ounces fresh chorizo, casings removed
1 medium onion, finely chopped
1/2 cup lager beer, plus more if necessary
Tortilla chips

Steps:

  • In a small bowl, mix the tomato, serrano chile and cilantro. Season with salt and let it stand for at least 30 minutes, while you prepare the queso.
  • In a medium bowl, toss the grated cheeses with the flour. Reserve.
  • Add the olive oil to a medium-sized skillet and bring it to the stove over medium heat. Cook the chorizo, breaking it up with a wooden spoon, until it starts to brown, about 2 minutes. Then, add the onions and continue cooklng until the chorizo is fully cooked and the onions are soft and translucent. Remove (with a slotted spoon) from the skillet into a separate bowl.
  • In a medium cast iron pan, over medium heat, add the beer and let it simmer. When simmering, start to add the cheese, slowly. Whisk constantly and only add the next handful of cheese once the previous one has melted.
  • Once all the cheese has melted and is smooth, stir back in the chorizo/onion mixture.
  • Optional: For a bubblier version with some delicious browned spots, simply pop the queso into the (preheated) broil for about 5 minutes. Check often to prevent the cheese from overcooking.
  • Using a slotted spoon, spoon the salsa over the queso.
  • Serve as a dip with tortilla chips or with soft tortillas.

There is a recipe where the cheese is melted directly on a griddle and then scooped onto a plate, another where it's baked in the oven or placed under the broiler. You can also make it in a small skillet right on top of the stove or on the grill where you make your steaks.

1 Tablespoon vegetable oil
5 ounces Mexican Chorizo (casings removed.)
12 ounces Monterey or Oaxaca Cheese (grated (2 1/2 cups))
6 Flour tortillas (or)
12 ounces tortilla chips (for serving)
1 1/2 cup of Roasted Salsa

Steps:

  • Preheat oven to 350 degrees. Place a skillet over medium heat, add the oil if using. Most Mexican chorizos have enough fat and won't need the vegetable oil. Add the chorizo and cook, stir frequently to cook evenly and avoid it from sticking to the bottom. It'll take about 6-7 minutes to cook.
  • Once cooked, remove the excess fat from the skillet or place the cooked chorizo over a paper towel to absorb the fat.
  • Place the chorizo in an oven proof dish, setting aside 2 tablespoons to garnish when ready to serve. I divided the chorizo and cheese into 2 small clay pots, but you can use a large oven proof dish.
  • Place the grated cheese over the chorizo and bake for about 10-12 minutes or until the cheese is melted and bubbling. Do not overcook or it will have a chewy texture.
  • Remove form oven and place over a heat proof surface. Serve warm with salsa and plenty of flour tortillas or tortilla chips.

2 tablespoons olive oil
1/2 small onion, chopped
1 garlic clove, minced
1 jalapeno, seeded and diced
2 ounces chorizo sausage
4 ounces mozzarella cheese, cubed
4 ounces monterey jack cheese, cubed
3 ounces goat cheese, crumbled
6 small flour tortillas

Steps:

  • Preheat oven to 400 degrees. Place an 8 inch casserole in oven while preparing the fundido.
  • Heat oil in skillet over medium high heat until slightly smoking. Add onion, garlic and pepper and cook for one minute stirring constantly.
  • Add chorizo and break up while coooking for about 10 minutes.
  • Remove the casserole from oven. Spread the cheeses over hot bottom of dish. Return the dish to oven and bake until cheese is just melted, about five minutes.
  • Remove from oven and sprinkle chorizo mixture over top. Return to oven and heat for about three minutes.
  • Serve with warmed tortillas.

2 poblano chile peppers
1 tablespoon extra-virgin olive oil
8 ounces fresh chorizo, casings removed
1/2 cup chopped scallions
2 tablespoons all-purpose flour
1/2 cup lager
2 cups grated cheddar cheese (about 8 ounces)
Tortilla chips, for serving

Steps:

  • Preheat the broiler. Put the poblanos on a broiler pan and broil, turning occasionally, until charred all over, about 10 minutes. Transfer to a bowl, cover with a plate and let steam until cool enough to handle, about 10 minutes. Scrape off the charred skin with a paring knife and remove the stems and seeds; chop the peppers and set aside.
  • Heat the olive oil in an 8- or 9-inch cast-iron skillet over medium heat; add the chorizo and cook, breaking up the meat with a wooden spoon, until cooked through, about 5 minutes. Add the scallions and poblanos and cook until the scallions are wilted, about 2 minutes. Add the flour and cook, stirring to coat, 1 minute.
  • Add the lager and bring to a boil; cook until thickened, about 1 minute. Add the cheese, a handful at a time, stirring until melted before adding more. Transfer the skillet to the broiler and broil until browned and bubbling, 1 to 2 minutes. Serve with chips.

Vegetable oil, for oiling the baking dish
6 ounces chorizo or spicy Italian sausage, casings removed
1/4 cup chopped onion
1 large clove garlic, minced
2 cups grated Oaxaca or mozzarella cheese
6 flour tortillas or soft tacos, warmed

Steps:

  • Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.
  • In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onions and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.
  • Put half of the cheese in the baking dish and sprinkle with half of the chorizo mixture. Repeat with the remaining cheese and chorizo mixture. Bake until the cheese is bubbling, about 20 minutes. Serve with flour tortillas for soft tacos.

16 ounces spicy pork sausage
1 shallot, diced
1 1/2 cups diced white onions
1 1/2 cups shredded cheddar cheese
3 garlic cloves, minced
2 cups shredded queso fresco
1 green onion, thinly sliced
1 diced tomato
cilantro (to garnish)

Steps:

  • Preheat oven to 450 degrees.
  • In an 8 inch skillet, brown chorizo and sausage over medium heat, breaking up into tiny pieces. Transfer meat to plate and wipe skillet clean. Add onions and shallot to pan and cook until translucent. Add garlic and cook 1 minute. Transfer mixture to bowl and toss with sausage until combined.
  • Allow skillet to cool for a few minutes. Spread half the cheese in the bottom of skillet. Top with sausage and onion mixture and then spread remaining cheese on top.
  • Bake for 20 minutes until melted and bubbling. Sprinkle with green onion, cilantro and tomatoes. Serve immediately with tortilla chips.

Easy appetizer or even light meal. Melted chihuahua cheese over fresh pico de gallo. Can buy fresh salsa or pico de gallo from deli. We have probably all had those melted cheese dips that are so popular in Mexican restaurants. This is a much more authentic version yet still simple and yummy. This makes a complete meal that is tasty and FUN! Soyrizo is the Soy based vegetarian version of chorizo. If you have an aversion to cooking with beer you can use some broth in place of the beer. The beer really does impart a special flavor that is unmatched. You could probably use a non-alcoholic beer as well. You could also su the canned chilies and fresh tomatoes with a can of Rotel undrained.

1 cup beer, anything but dark beer
1/2 lb oaxaca cheese, grated or 1/2 lb mozzarella cheese
1 lb asadero cheese or 1 lb muenster cheese, grated
4 ounces green chilies, chopped (you can find these in a can- for authentic Mexican use poblano's- you can get these canned too)
1/4 lb chorizo sausage (optional) or 1/4 lb soy chorizo (optional)
1/2 cup tomatoes, chopped
4 garlic cloves, minced
salt & freshly ground black pepper

Steps:

  • If using sausage: Cook sausage to release as much grease and oil as Drain well on paper towels and crumble or chop sausage. We like to grill the sausage outside and let the grease drip off. Plus you get rewarded with a smokiness!
  • Meanwhile, in a microwave safe bowl or the removable crock of a small crock pot, heat beer for about 2 minutes or just to a simmer. Add half the cheese, stir well and microwave 1 minute. Add the rest of the cheese and microwave again until everything has melted completely. Stirring and checking at one minute intervals, of half minute if you have a powerful microwave.
  • Add remaining ingredients, including chorizo if using, and return again to microwave for about 2 minutes, stirring after each minute.
  • Serve with chips , tortillas, bread or veggies for dipping.

1 large onion, thinly sliced
1 jalapeno, diced (seeds removed if desired)

Steps:

  • Heat a medium skillet over medium heat. Add 1 tablespoon of the butter, the onion, jalapeno and garlic. Cook, stirring occasionally, until the vegetables soften and begin to caramelize, about 20 minutes. Remove from the heat.
  • Heat 1 tablespoon of the butter in a large saucepan over medium heat. Add the chorizo and cook, breaking it up with the side of a spoon, until well browned, about 5 minutes. Add to the cooked vegetables in the skillet using a slotted spoon. Set aside.
  • Wipe out the saucepan the chorizo cooked in and return it to medium heat. Add the remaining 2 tablespoons butter. When the butter has stopped foaming, stir in the flour, chili powder, and cumin and stir until the flour is absorbed. Whisk in the beer and milk. Bring to a simmer and cook, stirring frequently, until slightly thickened, about 5 minutes. Remove from the heat and stir in the cheese, stirring until completely melted.
  • Transfer the cheese deep to a warmed serving dish, fondue pot or a small slow cooker set to warm or low. Stir the chopped cilantro leaves into the chorizo-onion mixture and dollop it on top of the melted cheese. Garnish with more cilantro leaves. Serve with tortilla chips.
