MEXICAN POTATO SAUSAGE CASSEROLE (GLUTEN FREE)



Mexican Potato Sausage Casserole (Gluten Free) image

This delicious and easy casserole can be made the night before and reheated in the morning for a quick breakfast treat. To make it even easier, you can use frozen O'Brien potatoes in place of raw potatoes.

1-1/2 lb raw sausage links or bulk sausage, crumbled
1 medium onion, chopped finely
1 small red bell pepper, chopped finely
1 to 2 tbsp minced green chiles, fresh or canned (drained)
2 tbsp all-purpose flour or gluten-free flour blend
1/2 tsp dried oregano
1 tsp ground cumin
2 cups milk
1 lb small red or Yukon gold potatoes, chopped finely, or frozen O'Brien potatoes (partially thawed)
1-1/4 cup grated sharp cheddar cheese or pepper Jack, divided
1 green onion, finely chopped
Fresh cilantro, finely chopped

Steps:

  • Preheat oven to 350°F. Butter a 9x13-inch baking dish. Set aside. Cook sausage in a large, heavy skillet over medium-high heat until browned, about 5 minutes. Using a slotted spoon, transfer cooked sausage to a paper towel-lined plate. Remove all but 1 tbsp of the fat in skillet. Add onion, bell peppers, and chiles and cook about 3 minutes until onion and peppers have softened. Mix in flour, oregano, and cumin and cook for 1 minute, stirring occasionally. Stir in milk. Cook until mixture thickens and comes to just under a boil, stirring occasionally, about 5 minutes. Season to taste with salt and pepper. Remove from the heat. Stir the cooked sausage and 1 cup of the cheese into the sauce. Spread the potatoes in the prepared baking dish and top with the sausage mixture. Sprinkle the top with the remaining 1/4 cup cheese. At this point you can cover and refrigerate overnight if desired. Bake, covered, until the potatoes are tender, about 45 minutes or until the casserole is bubbling around the edges and cooked through. Remove from the oven and let sit for about 10 minutes before scooping out servings. Sprinkle the tops with green onions and cilantro. NOTE: I made my version dairy-free for my husband, using a plant-based milk and leaving off the sour cream and cheese. Feel free to make adjustments to suit your family's tastes or requirements.

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup 2% milk
1/2 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups sliced peeled potatoes
2 cups shredded cheddar cheese
Minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink, breaking it into crumbles; drain and set aside. Combine soup, milk, onion, salt and pepper. , In a greased 2-qt. baking dish, layer half the potatoes, soup mixture and sausage. Repeat layers. , Cover and bake until potatoes are tender, 60-65 minutes. Sprinkle with cheese; bake, uncovered, until cheese is melted, 2-3 minutes. If desired, garnish with parsley.

2-1/2 pounds medium potatoes, peeled and thinly sliced
1 small onion, chopped
1 cup chicken broth
4 ounces cream cheese, cubed
1/2 cup heavy whipping cream
1/2 teaspoon salt
2 cups shredded Mexican cheese blend, divided

Steps:

  • In a large skillet, cook chorizo over medium heat until meat is fully cooked; drain. Place chorizo on several layers of paper towel; blot with additional paper towels. , In a greased 2-1/2-qt. baking dish, layer half of the potatoes, onion and chorizo. Repeat layers. , In a small saucepan, combine the broth, cream cheese, cream and salt. Cook and stir until mixture comes to a boil. Reduce heat; simmer until liquid is reduced to about 1-1/2 cups. Remove from the heat; stir in 1 cup Mexican cheese blend until melted. Pour over chorizo., Cover and bake at 350° for 60-70 minutes or until potatoes are tender. Sprinkle with remaining Mexican cheese blend. Bake, uncovered, 5-10 minutes longer or until cheese is melted.,

1 (10 3/4 ounce) can condensed cream of mushroom soup
3/4 cup milk
1/2 cup onion, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups sliced potatoes
1/2 tablespoon butter
1 1/2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Spray 1 1/2 quart casserole with nonstick cooking spray, set aside.
  • Cook sausage, stirring to separate, in large skillet over medium heat until no longer pink, drain fat and discard.
  • Stir together soup, milk, onion, salt and pepper in medium bowl.
  • Place half of potatoes in prepared casserole. Top with half of soup mixture, top with half of sausage. Repeat layers, ending with sausage. Dot with butter cubes.
  • Cover pan with foil. Bake 1 1/4 hours or until potatoes are tender. Uncover, sprinkle with cheese. Return to oven, bake until cheese is melted and bubbly.

Another one of my easy ones! But also another good one. If you leave out the potatoes, this is also very good served over egg noodles.

1 1/2 lbs Italian sausages, precooked
1 red bell pepper
1 green bell pepper
2 russet potatoes, precooked
1 onion, chopped
1 (28 ounce) can chopped tomatoes, undrained
1 teaspoon basil

Steps:

  • Preheat oven to 375 degrees.
  • Grease large casserole.
  • Cut precooked sausages into 2" pieces, and both peppers into 1/4" slices.
  • Cut precooked potatoes into fourths, lengthwise, then into halves.
  • Combine sausage, peppers, potatoes, onion, undrained tomatoes,and basil into large bowl.
  • Mix very gently.
  • Spoon mixture into casserole.
  • Cover with foil with slit cut into center.
  • Bake until done, about 50 minutes.

A family favorite combination of sausage, potatoes and cheese that is my most requested recipe.

3 large baking potatoes, peeled and thinly sliced
ground black pepper to taste
1 cup shredded Cheddar cheese
1 pound Polish kielbasa
½ teaspoon dried dill weed
¼ teaspoon caraway seed
⅔ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan
  • Arrange the sliced potatoes, overlapping slightly, in bottom of pan. Pepper to taste. Top with half of the cheese. Cut sausage in half crosswise and lengthwise and place, cut side down on top. Top with remaining cheese, the dill weed, caraway seed and milk. Seal edges of foil tightly.
  • Bake at 375 degrees F (190 degrees) for 1 hour.

1 pound bulk pork sausage
1 4-ounce can chopped mild green chilies
4 tablespoons chopped fresh cilantro
1/4 teaspoon hot pepper sauce (such as Tabasco)
1 1/2 cups grated cheddar cheese
1 cup grated Monterey Jack cheese
12 6-inch-diameter flour or corn tortillas

Steps:

  • Preheat oven to 350°F. Sauté sausage in heavy large skillet over medium-high heat until brown, breaking up clumps with back of spoon, about 7 minutes. Using slotted spoon, transfer sausage to 8x8x2-inch glass baking dish or other ovenproof pan. Mix chopped green chilies, 3 tablespoons cilantro and hot sauce into sausage. Sprinkle cheddar cheese, Monterey Jack cheese, then remaining 1 tablespoon cilantro over sausage mixture. Bake casserole 10 minutes.
  • Wrap tortillas tightly in foil. Place in oven to heat through alongside sausage casserole. Continue to bake casserole until cheeses bubble and sausage mixture is heated through, about 10 minutes longer.
  • Serve sausage and cheese mixture with warm tortillas.
