Fiesta Pasta Salad is a Mexican pasta salad loaded with corn, black beans, tomatoes, jalapeño, cilantro, and a fresh lime vinaigrette for a zesty, flavorful, summer side dish!

1/2 cup extra-virgin olive oil (or canola oil)
2/3 cup freshly squeezed lime juice
3 tablespoons red wine vinegar
2 cloves garlic (finely minced)
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
8 ounces corkscrew pasta (cooked in salted water according to package directions & drained)
2 (15-ounce) cans black beans (drained & rinsed)
16 ounces frozen corn
16 ounces cherry or grape tomatoes (quartered (OR about 2 extra-large tomatoes, seeded & chopped))
2 fresh jalapeños (seeded, all membranes removed, & finely diced, optional)
1/2 cup fresh cilantro leaves (chopped, plus additional for garnish)

Steps:

  • Make the dressing by whisking all of the ingredients together in a medium bowl until thoroughly incorporated, or shaking them in a jar with a tight-fitting lid. Set aside.
  • Place the cooked pasta and the rinsed black beans in a very large bowl. Thaw the corn by placing it in a colander and running it under warm water; drain well and add to bowl. Add the tomatoes, jalapeños, and cilantro to the bowl, and pour about two-thirds of the dressing over top. Gently mix all of the ingredients with a large spoon until well combined. Refrigerate for several hours to allow the flavors to blend. Just before serving, stir in the remainder of the dressing and garnish with additional cilantro, if desired.

This Vegan Mexican Pasta Casserole is the perfect family friendly dinner recipe that is perfectly balanced and packed with flavour! It comes together in only a few simple steps.

1 can no salt added black beans (drained and rinsed)
½ chipotle in adobo (chopped)
1 tbsp maple syrup
½ tsp cumin
½ tbsp chili powder
¼ cup vegetable stock
Salt and pepper (to taste)
2 large jars (680 ml eacPassata tomato sauce
1 chipotle in adobo with sauce (minced)
3 tbsp maple syrup
½ tsp chili pepper (or more to taste)
½ tsp cumin (or more to taste)

1 lb whole wheat rigatoni pasta
1 can no salt added black beans (drained and rinsed)
2 cups baby spinach (chopped)
2 cobs corn (kernels removed)
½ cup vegan or regular sour cream
1 ½ cups vegan or regular cheddar cheese (grated)
Jalapenos (for serving)
Avocado (for serving)
Green onions (for serving)
Diced tomatoes (for serving)

Steps:

  • Preheat an oven to 350 F and lightly grease a 13x9" casserole dish. To make the black bean layer, combine the black beans, chipotle, maple, chili, cumin, and stock in a food processor and puree until smooth. Season with salt and pepper and set aside.
  • In a bowl, mix together the passata, minced chipotle, chili, cumin, salt and pepper, to taste. Adjust depending on how spicy you like it.
  • Cook the pasta al dente and set aside.
  • Add 3/4 of the spicy tomato sauce to the pot along with the rigatoni, corn, can of black beans (non pureed), and spinach and toss to coat.
  • Spread 1/2 of the remaining sauce onto the bottom of the pan. Add half of the pasta, then the pureed black beans, the sour cream, and the remaining pasta. Top with the last little bit of sauce, and finish with the shredded cheese.
  • Place in the oven and bake for 20 minutes or until golden and bubbly. Top with avocado, jalapenos, green onions, and tomatoes and enjoy.

9 ounces uncooked whole wheat fettuccine
1 tablespoon olive oil
1-3/4 cups sliced baby portobello mushrooms
1 garlic clove, minced
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 teaspoon dried rosemary, crushed
1/2 teaspoon dried oregano
2 cups fresh baby spinach

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a large skillet, heat oil over medium-high heat. Add mushrooms; cook and stir 4-6 minutes or until tender. Add garlic; cook 1 minute longer., Stir in black beans, tomatoes, rosemary and oregano; heat through. Stir in spinach until wilted. Drain fettuccine; add to bean mixture and toss to combine.

3/4 pound fusilli or other spiral-shaped pasta
1/3 cup finely chopped onion
1 garlic clove, minced
1 tablespoon vegetable oil
a 15-ounce can black beans, rinsed and drained (about 1 1/3 cups)
a 10-ounce can mild enchilada sauce
a 3-inch pickled jalapeño chili if desired, chopped fine (wear rubber gloves)
1/4 cup sour cream
freshly grated Monterey Jack or sharp Cheddar to taste
2 scallions, sliced thin

Steps:

  • In a 6-quart kettle bring 5 quarts salted water to a boil for pasta. Cook pasta until tender, about 12 minutes.
  • While pasta is cooking, in a 2- to 3-quart heavy saucepan cook onion and garlic in oil over moderately low heat, stirring occasionally, until softened. Add beans, enchilada sauce, and jalapeño and simmer gently, stirring occasionally, until thickened, about

270g cherry tomatoes, quartered
1 red or white onion, finely chopped
½ lime, juiced
4 tbsp olive oil
2 garlic cloves, crushed
1 tsp ground cumin
2 tsp chipotle paste or 1 tsp chilli flakes
2 x 400g cans black beans, drained
small bunch coriander, chopped
4 slices bread
1 avocado, finely sliced

Steps:

  • Mix the tomatoes, ¼ onion, lime juice and 1 tbsp oil and set aside. Fry the remaining onion in 2 tbsp oil until it starts to soften. Add the garlic, fry for 1 min, then add the cumin and chipotle and stir until fragrant. Tip in the beans and a splash of water, stir and cook gently until heated through. Stir in most of the tomato mixture and cook for 1 min, season well and add most of the coriander.
  • Toast the bread and drizzle with the remaining 1 tbsp oil. Put a slice on each plate and pile some beans on top. Arrange some slices of avocado on top, then sprinkle with the remaining tomato mixture and coriander leaves to serve.

1 (15 ounce) can black beans (rinsed)
1/4 cup olive oil
1/2 red onion, diced

  • While boiling the pasta (I used elbow), mix together all ingredients except beans. When pasta is done, drain and stir in sauce and beans. I topped with shredded cheddar/mozerella.

1 (28 ounce) can chopped tomatoes with juice
1 (1 1/4 ounce) package taco seasoning
1 (15 ounce) can black beans, drained
8 ounces 93% lean ground beef
3 cups whole wheat penne or 3 cups whole wheat ziti (6 oz. dried)
1 cup fat-free ricotta cheese
1/2 cup shredded fat-free cheddar cheese

Steps:

  • Preheat oven to 425*.

3 tablespoons oil
2 medium onions, chopped
1 red bell pepper, seeded and chopped (or use green bell pepper)

3/4 cup canned corn niblet
1 (14 ounce) can diced tomatoes
3/4 cup salsa (mild or medium)
