Yield 3 to 4 quarts

Number Of Ingredients 3

3 cups peeled, seeded watermelon, diced
1/2 cup sugar, or as needed
Lime wedges, for garnish

Steps:

  • Puree the diced watermelon with 4 cups cold water in blender. Blend until smooth, and then pour into a pitcher - any ground seeds should remain in the bottom. Add 6 cups cold water and sweeten with sugar, as needed. Garnish with lime wedges.

This watermelon sorbet can be made with or without the spice infusion and without an ice cream maker! It is so smooth and delicious, reminiscent of the popular fruit in a cup sold at soccer games and as street food.

7 ½ cups seedless watermelon, chopped into chunks, divided
1 ½ cups white sugar
3 limes, juiced, or more to taste
4 tablespoons chamoy (Mexican chili fruit condiment), or more to taste
2 tablespoons chili-lime seasoning (such as Tajin®)

Steps:

  • Place 2 1/2 cups watermelon into an electric blender and liquefy. Transfer juice to a saucepan and add sugar and lime juice. Bring to a boil; reduce heat and let simmer until all sugar has dissolved, about 5 minutes. Set aside and allow to cool, about 20 minutes. Chill and store simple syrup in a closed glass jar in the refrigerator.
  • Place remaining watermelon chunks on a cookie sheet lined with parchment paper and freeze until solid, about 4 hours.
  • Add frozen watermelon pieces, a few at a time, to the bowl of a food processor and puree. Add 1/3 to 1/2 cup of the simple syrup mixture, followed by chamoy and chile-lime seasoning; process until smooth. Serve right away or store in an airtight plastic container in the freezer.

4 cups cubed seeded watermelon
½ cup water
½ cup white sugar, or to taste
4 slices lime
24 fresh mint leaves
ice

Steps:

  • Puree the watermelon and water in a blender until smooth. Add sugar to taste. Cut the lime slices in half. Place a half lime slice into each of 8 glasses along with 3 mint leaves. Crush with a cocktail muddler, then fill each glass with ice. Pour in the watermelon agua fresca, and stir before serving.

  • Put the water and sugar in a small pan and heat gently until the sugar dissolves. Remove from the heat and allow to cool slightly.
  • Blend the watermelon chunks until smooth then add the lime juice, cooled sugar syrup and mix well.
  • Pour into a container and cover with a lid and put into the freezer. Take it out roughly every 1-2 hours to scrape down the sides that have frozen and mash them in to the rest of the mixture until it has largely frozen (you probably will mix it three or so times). Leave to freeze overnight. Alternatively, use an ice cream maker.
