MEXICAN HOT CHOCOLATE BROWNIES
Simple brownies made with Mexican hot chocolate disks. Great way to use them up! Enjoy! This recipe was borne from a desire to use up Mexican hot chocolate discs, which have a lot of sugar and some oil already. I used Ibarra® brand and the brownies were fantastic with a mild cinnamon flavor. I wouldn't try to substitute this ingredient.

IBARRA MEXICAN BROWNIES
These brownies have a little kick of cinnamon from a melted down Mexican Hot Chocolate bar (this can be found in the Mexican section of the grocery store or in a Latin American food store). I use Ibarra brand, but Abuelita or any Mexican hot chocolate bar would do. I have substitued applesauce for the butter and this is the only brownie recipe that has still turned out moist for me when doing so. My sister shared this recipe with me.

Add eggs one at a time, whisking well after each addition. Whisk in vanilla and almond extract. Stir in flour, cinnamon, baking powder, and salt until well blended.

- Mexican chocolate streusel. In a food processor or a bowl, whirl or stir 1/2 cup all-purpose flour and 1/4 cup firmly packed brown sugar until well blended. Add 5 tablespoons butter and whirl or rub in with your fingers until mixture forms coarse crumbs. Pulse in 4 1/2 ounces (about 1 1/2 tablets) coarsely chopped Mexican chocolate (some larger chunks will remain), or chop finely with a knife and stir into flour mixture. Use immediately or chill airtight for up to 1 week.

- Preheat oven to 350 degrees F. Grease and line a 9x9 inch square pan with parchment paper. Set aside.
- Add butter and chocolate chips to a microwave safe bowl. Microwave in 30 second intervals (stir with a silicone spatula after each interval), until chocolate is melted and smooth. Transfer melted chocolate to a large mixing bowl. Whisk in sugar, vanilla extract and coffee. Whisk until sugar completely dissolves.
- In a bowl, whisk eggs for 1 minute, until foamy. Pour the eggs into the chocolate mix and stir until combined. Add flour, cocoa powder, cayenne, paprika, cinnamon and baking powder. Stir until just combined. The batter should be thick and slightly running, like lava.
- Pour the mixture into the baking pan and bake for 40-45 minutes or until the edges are just cooked. The middle will still be soft, but it will firm up with the residual heat. Do not over cook these brownies or they will not be fudgy! Let the brownies cool and set, then top with flaky sea salt and enjoy.
