280g new or waxy potato , cut into cubes
2 tbsp butter
2 tbsp olive oil
1 red chilli , half sliced, half deseeded and finely chopped
1 garlic clove , chopped
1 tsp Cajun seasoning
198g can sweetcorn , drained and rinsed
200g black bean (from a can), drained and rinsed well
2 eggs
1 ripe avocado , chopped
lime wedges, soured cream and warm tortillas, to serve (optional)

Steps:

  • Cook the potatoes in boiling salted water for 5 mins, then drain and let steam-dry. Heat half the butter and oil in the pan and fry the potatoes for about 10-15 mins until golden. Add the chopped chilli, garlic, Cajun seasoning, sweetcorn and black beans, and heat through for about 5 mins, then season.
  • Keep warm in a low oven while you fry the eggs in the rest of the butter and oil until cooked to your liking. Divide the potatoes between 2 bowls and top with an egg, some chopped avocado and the sliced chilli. Serve with lime wedges, soured cream and warm tortillas, if you like.

2 lbs ground beef
6 small tomatoes
3 cups peeled and diced potatoes
4 cloves peeled garlic, finely chopped
2 medium onions, chopped
1 clean poblano chiles or 1 green pimiento
1/4 cup olive oil
1 tablespoon dark brown sugar
1/4 cup vinegar
1 tablespoon capers
1/2 cup tomato juice or 1/2 cup chicken consomme
2 teaspoons salt
1 dash pepper, to taste

Steps:

  • First, stir fry potatoes in olive oil.
  • Take potatoes out from oil, set apart.
  • Into the remaining oil in the skillet, add the ground meat, tomatoes, salt, garlic, and pepper and mix well.
  • Once the meat is partially cooked, add potatoes and rest of ingredients.
  • Simmer on medium heat for about 30 minutes.

Steps:

  • Preheat the oven to 400.
  • Wash and peel potatoes. Cut into 1 ½ cm cubes.
  • Cut onion and bell pepper into 1 ½ cm cubes.
  • Coat with olive oil and season with oregano, paprika, garlic powder, onion powder, and cumin. Add salt and pepper to taste.
  • Roast vegetables for ~30 minutes, stirring at least once. The vegetables are done when they're soft, but not crispy.
  • Serve with a soft scrambled or poached egg, if desired.

1 medium onion
1 -2 jalapeno
1/2 lb chorizo sausage
1/2 lb sharp cheddar cheese, shredded
1 teaspoon Mexican oregano
1 teaspoon fresh ground black pepper

1/4 cup vegetable oil
2 scrambled eggs (optional)
1 medium tomatoes (optional)
1 can olive (optional)
2 green onions (optional)
sour cream (optional)

Steps:

  • Put oven on broil.
  • In a large heavy skillet-I use cast iron-heat 1/2 the oil over medium high heat.
  • Mix together the shredded onions, potatoes, jalapenos, salt, pepper and oregano.
  • When the oil is smoking add to skillet and press down.
  • After 4 or 5 minutes lift the side to see if its getting a nice golden brown, and then some.
  • If so flip, and add more oil if you need to.
  • After about 3 minutes begin to top your hash brown or wait until you remove it from the skillet and put on a cookie sheet or wire rack.
  • So, on top you would place in this order, and remember, toppings are your choice.
  • Hashbrown, scrambled eggs, fried chorizo, 1/2 the cheese, tomatoes, olives, onions and remaining cheese.
  • Broil for about 3 minutes or until the cheese is bubbly and golden in spots.
  • Serve with sour cream and salsa.

2 lbs lean ground beef
2 onions, finely chopped
1 garlic clove, chopped
2 apples, peeled cored and chopped
1 lb medium tomatoes, peeled seeded and chopped

1/2 cup raisins
1/4 cup pimento stuffed olive, cut in half
1/8 teaspoon cinnamon

Steps:

  • Heat the oil in a large heavy skillet and brown the meat.
  • Add the onions and garlic.
  • When brown add all the other ingredients except the almonds.

  • Toast the almond slivers in a little olive oil until golden.
  • Place on top on the picadillo and cook a few moments longer.

This is the first recipe of my own that I've shared with anybody. This is a great, easy casserole that uses up that partial bag of frozen hashbrowns in your freezer. Tastes really good and is very flexible. Any ingredient can be substituted or omitted and quantities are flexible to taste. As a vegetarian, I made it veggie...but you can easily brown ground beef or chicken and add it to the mixture before baking. I hope you enjoy it!

4 cups frozen hash browns (cubed or shredded)
3 eggs
1 (8 ounce) can corn, drained
1 cup black beans, drained and rinsed
1/4 cup canned jalapeno, chopped into small pieces
1/4 cup green onion, chopped
1 (14 ounce) can stewed tomatoes
1 cup cheese, shredded

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl mix together the hashbrowns and the eggs.
  • Mix in all the other ingredients and half of the cheese.
  • Spread mixture into casserole dish(es).
  • Sprinkle remaining cheese on top.
  • Bake with lid on for 45 minutes.
  • Remove lid and bake for 15 more minutes.
  • Serve with sour cream on the side and sprinkle cilantro (if you like it).

This is something that I threw together with ingredients I had on hand. I thought it turned out pretty well - easy and tasty. Not fancy, but it's good comfort food!

1 lb ground beef
1 onion, chopped
minced garlic
1 (14 1/2 ounce) can whole kernel corn, drained
1 (10 1/2 ounce) can rotel, drained
4 ounces cream cheese
asadero cheese, for topping (or other cheese of your preference)

Steps:

  • Brown ground beef in large saucepan.
  • Add onions and garlic; saute until onions are soft.
  • Add cream cheese; cook, stirring constantly, until cream cheese is melted.
  • Add corn and Rotel; cook until the mixture is heated through.
  • At this point I did add some Asadero cheese (a soft Mexican cheese, good for melting - Monterey Jack would probably work if you can't find the Asadero) to the mixture and let it melt.
  • Serve over mashed potatoes or Mexican rice.
  • Top with Asadero cheese and let melt (I microwaved mine to melt the cheese).

1 pound bag of Frozen Ore Ida Shredded Hash Browns
1 15 oz . can tomato sauce
1 pound of lean ground beef
3 cups of Mexican 4 cheese blend of finely shredded cheese (or just cheddar cheese)
1 8 oz . package of cream cheese brought to room temperature
1 medium onion chopped
1 Tbsp . butter
Mexican Spice Blend Mix:
1/2 tsp . powdered garlic
1/2 tsp . ground cumin
1/2 tsp . ground coriander seed
3 tsp . chili powder
1 tsp . smoked paprika
1/2 tsp . salt
Topping suggestions:
chopped tomatoes
chopped green onions
sliced black olives
sour cream

Steps:

  • Preheat oven to 350. In a large skillet melt butter and add chopped onions. Saute until they are translucent. Add ground beef and cook until meat is browned. Drain off any excess fat. Bring meat/ onion mixture back to the skillet and set on medium low heat. Add Mexican Spice Blend and tomato sauce and cook for 2 minutes or until warm. Add cream cheese and 1 1/2 cups of the shredded cheese. Cook until cream cheese and shredded cheese is just melted. Turn off heat and add Hash Browns. Completely mix everything together and transport to a casserole dish that has been sprayed with a little cooking spray. Bake at 350 for 45 to 50 minutes or until the casserole is browned on edges. Add the other 1 1/2 cups of shredded cheese to the top of the casserole and bake another 5 to 10 minutes or until cheese is bubbling. Serve while hot and top with toppings! Enjoy!

12 ounces uncooked chorizo sausage
¼ cup chopped onion
2 teaspoons vegetable oil
1 (16 ounce) package frozen diced hash brown potatoes
½ teaspoon seasoning salt
1 (14.5 ounce) can Hunt's® Diced Tomatoes, drained
2 tablespoons coarsely chopped cilantro
1 avocado, cubed

Steps:

  • Heat a skillet over medium-high heat. Add chorizo, breaking it apart until crumbly. Saute until it starts to brown, about 3 minutes. Add chopped onion and cook, stirring frequently, until onion is translucent, about 3 minutes. Transfer chorizo-onion mixture to a plate.
  • Pour oil into pan and heat over medium-high heat. Add frozen hash brown potatoes and seasoning salt. Stir to coat potatoes in the oil.
  • Let the potatoes brown on one side, then flip once after about 5 minutes. Both sides should be browned and crispy, about 5 minutes per side. Add the diced tomatoes and the chorizo and onion mixture; stir gently to mix evenly. Cook for 4 more minutes, stirring once to rotate the ingredients from the bottom of the pan to the top for even cooking.
  • Serve topped with cilantro and cubed avocados.

I love hash with poached eggs for breakfast, lunch or dinner. I had some leftover sweet potatoes and chicken one weekend morning and this is the end result. I love to using leftovers, and think you can make some amazing dishes with them. This is hearty rich, flavorful, and a one skillet wonder. If you don't have leftovers, a rotisserie chicken works good, or even just some poached or grilled chicken.

2 1/2 cups diced chicken
1 green pepper, diced
1 red pepper, diced
1/2 cup carrot, diced
1/2 cup celery, diced
1 large onion, diced
2 1/2 cups shredded sweet potatoes
1 cup monterey jack pepper cheese
1 chipotle chile in adobo, diced fine (you can add more if you like)
1 -1 1/2 cup chicken broth (I sometimes add a bit more)
1 teaspoon minced garlic
2 tablespoons fresh parsley, chopped
1 teaspoon chili powder (adjust to taste)
1 teaspoon cumin
1 tablespoon dried thyme
3 tablespoons butter
salt
ground pepper
6 eggs

Steps:

  • NOTE: If you are using leftover or pre-cooked chicken I add it after sauteing the vegetables; if fresh chicken, I saute the chicken first.
  • NOTE: If you are using leftover sweet potatoes, I just chop fine, if not, I grate my fresh sweet potatoes.
  • Chicken and Vegetables -- In a large oven proof saute pan. I love my cast iron for this. Melt your butter over medium high heat and add the chicken (if fresh) and cook the chicken 3-4 minutes until it starts to brown, and then add the vegetables and cook another 5 minutes until soft.
  • If using pre-cooked chicken or leftovers, melt the butter and add the vegetables and cook 5 minutes until soft then stir in the chicken.
  • Potatoes and Seasoning -- Now add either the diced leftover sweet potatoes, or the fresh shredded sweet potatoes, garlic, chipoltes, 1/2 cup cheese, fresh herbs, salt, pepper and 1 cup of the chicken broth. Now cook 2-3 minutes if using the leftover potatoes, or it may need a bit longer (4-5 minutes) if you are using fresh grated. Stir well to combine all the ingredients. Note, there should be some good moisture in the bottom of the pan from the broth, if not you can add a little bit more. Remove from the heat and preheat the oven to 400 degrees. Again, make sure there is a little broth in the bottom, not too much.
  • Eggs -- Now, I just take the bottom of a glass and make 6 indentations in the hash. One in the center and 5 around the outside of the pan. Then, crack 1 egg at a time in a small dish and put the egg into each indentation. Now sprinkle the cheese around the eggs. Salt and pepper the eggs liberally.
  • Bake -- 400 degrees, middle shelf. Place in the oven and cook about 7-10 minutes until the eggs are to your liking. Depending on the size of your pan and type of your pan and the size of your eggs it may take a bit longer - ENJOY!
