MEXICAN CHICKEN AND RICE

Mexican Chicken and Rice image

Healthy one-pot Mexican chicken and rice skillet with black beans and cheese. An easy, crowd-pleaser recipe for weeknight dinners!

Provided by Erin Clarke / Well Plated

Categories     Main Course

Time 1h

Number Of Ingredients 16

1 tablespoon extra-virgin olive oil
1 pound boneless skinless chicken breasts (or thighs, cut into 3/4-inch pieces)
1 small yellow onion (chopped)
2 small jalapenos (or 1 large jalapeno, core and seeds discarded, diced)
1 red bell pepper (chopped)
2 teaspoons chili powder
2 teaspoons garlic powder
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 can black beans ((15 ounces), rinsed and drained)
1 cup long or medium-grain brown rice
1 can diced tomatoes in their juices ((15 ounces))
3 medium green onions (chopped)
Optional

Steps:

  • Heat the olive oil in a large skillet or Dutch oven with a tight-fitting lid over medium to high heat. Once hot and shimmering, swirl to coat the pan, then add the chicken, onion, jalapeno, and red bell pepper. Cook for 3 to 5 minutes, until the chicken is browned and the onion is beginning to soften. Add the chili powder, garlic powder, cumin, oregano, salt, and pepper. Stir to coat the chicken and cook 30 seconds. Add the black beans and rice. Stir to coat once more.
  • Add the diced tomatoes in their juices and 1 1/2 cups water. Stir to combine the ingredients. Bring to a gentle boil, cover, then reduce the heat and let simmer 30 minutes. Remove the lid and stir, scraping up any rice that has started to stick to the bottom of the pot. Re-cover and continue to let simmer with the lid on until the rice is tender, 10 to 20 additional minutes, stirring the pot every 10 minutes or so to prevent sticking. If the rice begins to dry out, add a bit more liquid.
  • Stir in the green onions. Serve warm with any other desired toppings.

MEXICAN CHICKEN AND RICE

Mexican Chicken and Rice image

This Mexican Chicken and Rice features tender, juicy marinated chicken thighs and authentic Mexican rice cooked all in one pot!

Provided by Isabel Eats

Categories     Main

Time 1h15m

Number Of Ingredients 17

6 boneless skinless chicken thighs
2 1/2 tablespoons olive oil, (divided)
1 tablespoon white wine vinegar
2 teaspoons onion powder
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon coarse kosher salt
1/4 teaspoon oregano
1/4 teaspoon cumin
2 tablespoons olive oil
2 cups long-grain white rice, (rinsed and drained)
1/2 medium white onion, (diced)
2 teaspoons minced garlic ((about 4 cloves))
4 cups water
1 tablespoon tomato paste
salt, (to taste)
optional garnish: chopped cilantro and lime wedges

Steps:

  • In a large freezer bag (or bowl), add chicken, 1 tablespoon of olive oil, vinegar, onion powder, chili powder, paprika, salt, oregano and cumin. Seal the bag and shake up to completely coat the chicken with the marinade. Refrigerate for at least 30 minutes, up to overnight.
  • Heat a large oven-safe saute pan/deep skillet over medium-high heat. Add the 1 tablespoon of olive oil. Add half of the chicken thighs to the pan and cook for 2 minutes per side, or until chicken is no longer pink on the outside. Transfer the chicken onto a plate and cook the remaining chicken the same way.
  • Preheat oven to 350°F. In the same saute pan/skillet, add the remaining 1/2 tablespoon of olive oil. (If the skillet is already very greasy and has enough oil to cover the bottom of the pan due to cooking the chicken, you can omit this last addition of oil.)
  • Add the rice and saute for 10 minutes, stirring occasionally, until the rice begins to brown slightly. At this point, some grains of rice may even pop. That's okay. This step adds some nuttiness and more depth of flavor to the rice.
  • Add in the onions and minced garlic. Saute for about 30 seconds until fragrant. Add in the water, tomato paste and a generous pinch of salt. Stir together to mix until the tomato paste has fully dissolved.
  • Cover the saute pan with a lid or foil, place it in the oven and bake for 15 minutes. Remove it from oven, place the partially cooked chicken thighs on top of the rice, cover and cook for another 15 minutes.
  • Remove the lid or foil and bake for another 5 minutes uncovered. Check the temperature of the chicken thighs to make sure they're cooked through using a meat thermometer like this one or by slicing into one.
  • Remove the pan from the oven and let cool slightly before serving. Garnish with diced cilantro and fresh lime juice, if desired.

MEXICAN CHICKEN WITH BEANS AND RICE

Mexican Chicken With Beans and Rice image

This maybe the the best chicken I've ever made. The recipe is very flexible to your tastes. I preferred mine to be spicy but you can easily change to suite your tastes. I love using the Dutch Oven because you don't have to worry about scratching a coating off and the heat is continual and gentle on the food.

Provided by Erv Kosch

Categories     One Dish Meal

Time 1h40m

Yield 8 serving(s)

Number Of Ingredients 7

8 chicken legs
2 tablespoons canola oil
fajita seasoning mix
1 (14 1/2 ounce) can chili beans
1/2 cup salsa
1 cup chicken broth
1 cup long grain white rice

Steps:

  • Start your baking oven preheating to 250 degree Fahrenheit.
  • Heat a Dutch Oven on your stove burner with the Canola Oil over a low flame.
  • Dry 2-3 the Chicken Legs with a paper towel.
  • Coat the Chicken Legs with the Fajita Spice Mix in a pie tin or similar container. The heavier the coating the spicier the chicken.
  • Place the coated Chicken Legs in the Dutch Oven and cover. Brown both sides of the chicken for 3-5 minutes. Don't crowd the chicken or the chicken will burn. Also the Dutch Oven will get hotter as you go so watch your browning time.
  • Remove the browned Chicken Legs and set aside.
  • Repeat the process until all the chicken is browned. You'll need to keep a thin coat of oil on the bottom of the Dutch Oven so add Canola Oil as needed between brownings.
  • Wipe out the hot Dutch Oven with a paper towel to remove the oil and unwanted spices. Leave some extra spice if you want the dish to be hotter.
  • Place the ingredients into the Dutch Oven in this order: Chili Beans, Salsa, Chicken Broth, Long Grain White Rice, and then the Chicken Legs.
  • Cook for 1 hour and 10 minutes or until the rice is cooked and the chicken's juices run clear. Don't peak if your can avoid it.

Categories     One Dish Meal

Time 1h

Yield 6 serving(s)

Number Of Ingredients 21

2 canned chipotle chiles in adobo, minced
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lime juice
2 tablespoons dried ancho chile powder or 2 tablespoons dried chipotle powder
1 tablespoon minced garlic
2 teaspoons ground cumin
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
3 (6 ounce) boneless skinless chicken breast halves
1 1/2 cups long-grain white rice
3 cups low sodium chicken broth
1/2 teaspoon kosher salt
1/4 cup chopped fresh cilantro leaves
2 tablespoons lime juice
2 medium Hass avocadoes, cut into 1/2 inch dice
2 medium tomatoes, cut into 1/2 inch dice
1/2 cup green onion, sliced thin
1 (15 ounce) can black beans or 1 (15 ounce) can pinto beans, drained and rinsed
1 cup queso fresco (can sub shredded cheddar cheese)
2 limes, cut into wedges
6 handfuls tortilla chips

Steps:

  • In a small bowl whisk the marinade ingredients. Place the chicken in a large, resealable plastic bag and pour in the marinade. Squeeze the air out of the bag and seal tightly. Message the bag to distribute the marinade and refrigerate while you prepare the rice.
  • In a medium saucepan over medium heat, bring the rice, broth and salt to a simmer. Reduce the heat to low and cook, covered, until the rice is tender and the liquid is absorbed, about 20 minutes. Move off the burner and keep covered for 10 minutes. Stir in the cilantro and lime juice. Keep a lid on the rice until ready to use.
  • While the rice is cooking, prepare the grill for direct cooking over medium heat (350° to 450°F).
  • Brush the cooking grates clean. Remove the chicken from the bag, discarding the marinade. Grill the chicken, smooth (skin) side down first, over direct medium heat, with the lid closed as much as possible, until the meat is firm to the touch and opaque all the way to the center, 8 to 12 minutes, turning once or twice. Transfer the chicken to a cutting board and let rest for 3 to 5 minutes. Cut into 1/2-inch chunks.
  • Divide the rice evenly between individual bowls. Top the rice with small mounds of chicken, avocado, tomato, onion and beans. Sprinkle the queso fresco on top. Serve with lime wedges and tortilla chips.

  • In a large, deep frying pan, heat the oil over moderately high heat. Season the chicken with 1/4 teaspoon of the salt and the pepper and add to the pan. Cook, turning, until well browned, about 8 minutes in all. Remove. Pour off all but 1 tablespoon of the fat from the pan.
  • Add the onion to the pan and reduce the heat to moderately low. Cook, stirring occasionally, until translucent, about 5 minutes. Add the garlic and cook, stirring, for 30 seconds longer. Add the tomatoes and pimientos, scraping the bottom of the pan to dislodge any brown bits. Stir in the beans, rice, water, parsley, the remaining 1 1/2 teaspoons of salt, and the cayenne, and arrange the chicken on top in an even layer.
  • Bring to a boil and simmer until all the water is absorbed, about 12 minutes. Turn the drumsticks and reduce the heat to very low. Cover and cook until the chicken and rice are just done, about 15 minutes longer. Serve with the lime wedges, if using.
  • Wine Recommendation: A fruity red wine such as a merlot is best with this classic dish. If you can, try to find a bottle from a producer in Argentina or Chile, or open your favorite California merlot.

  • Preheat the oven to 450°F. In a medium pot, combine the rice, half the spice blend, a big pinch of salt, and 2 cups of water. Heat to boiling on high. Once boiling, reduce the heat to low. Cover and cook, without stirring, 12 to 14 minutes, or until the water has been absorbed and the rice is tender. Turn off the heat and fluff with a fork.
  • While the rice cooks, wash and dry the fresh produce. Cut off and discard the bottom 1/2 inch of the broccoli stem; cut the broccoli into small pieces. Peel and roughly chop the garlic. Cut off and discard the root ends of the scallions; thinly slice, separating the white bottoms and green tops. Drain and rinse the beans. Grate the cheese on the large side of a box grater. Stack the tortillas. Cut in half; cut crosswise into ¼-inch-wide strips.
  • Pat the chicken dry with paper towels; season with salt and pepper. In a large, high-sided pan, heat 1 tablespoon of olive oil on medium-high until hot. Add the seasoned chicken in an even layer and cook, without stirring, 3 to 4 minutes, or until lightly browned. Continue to cook, stirring frequently, 1 to 2 minutes, or until cooked through. Leaving any browned bits (or fond) in the pan, transfer to a plate.
  • Add 2 teaspoons of olive oil to the pan of reserved fond and heat on medium-high until hot. Add the broccoli pieces, chopped garlic, and sliced white bottoms of the scallions; season with salt and pepper. Cook, stirring frequently, 3 to 4 minutes, or until slightly softened. Add 3/4 cup of water (carefully, as the water may splatter); season with salt and pepper. Cook, stirring occasionally, 4 to 5 minutes, or until the broccoli is softened and the water has cooked off. Add the beans, tomatoes, and remaining spice blend; season with salt and pepper. Cook, stirring occasionally, 1 to 2 minutes, or until thoroughly combined. Turn off the heat.
