2 cups coarsely crushed corn chips
1 can (16 ounces) refried beans
2 cups shredded Monterey Jack cheese, divided
1 cup salsa
2 cups shredded cooked turkey
1 teaspoon taco seasoning
1 green onion, sliced
1 medium tomato, chopped

Steps:

  • Place corn chips in a greased shallow 2-1/2-qt. baking dish. Place the refried beans in a small saucepan; cook and stir over medium heat until heated through. Remove from the heat; stir in 1 cup cheese and salsa. Spread over chips. , In a large bowl, combine turkey and taco seasoning; sprinkle over bean mixture. Top with remaining cheese. Sprinkle with onion. , Bake, uncovered, at 400° for 20-25 minutes or until cheese is melted. Sprinkle with tomato.

3 cups leftover cooked dark turkey meat, shredded
1/2 cup onion, finely diced (to taste)
4 -5 garlic cloves, fresh minced (to taste)
3 cups enchilada sauce, divided (recipezaar Texas Red Enchilada Sauce)
1 tablespoon chili powder
2 teaspoons ground cumin
2 -3 jalapeno peppers, chopped fine (optional)
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced (optional)
1/2 teaspoon salt, to taste
1/2 teaspoon pepper, to taste
1 (8 ounce) package cream cheese (any type will work)
8 -10 small flour tortillas, warmed (smaller size 6-8-inch)
1 (14 1/2 ounce) can diced tomatoes, undrained and diced
1 cup cheddar cheese, shredded (more if desired)
1 tablespoon olive oil

Steps:

  • Preheat oven to 350.
  • Heat a skillet to medium, add some oil and saute the onions for a few minutes then add the peppers and garlic and saute until the onion become translucent.
  • Add Tomatoes, seasonings, Stir to combine.
  • Add Turkey and 1 cup of enchilada sauce - stir - simmer until some of the liquid has evaporated (not too juicy any more).
  • Add cream cheese and stir until well incorporated. Simmer for a few minutes longer.
  • In a 9X13" pan add 1 cup of enchilada sauce and coat bottom of pan.
  • Add about 1/4-1/3 cup of meat mixture to each tortillia - roll tortilla and place seem side down in a baking dish (just roll, don't fold ends).
  • Pour remaining Enchilada sauce over the top of the tortillas.
  • Sprinkle cheese over the top.
  • Bake i for about 20-30 minutes until cheese is melted and side are bubbling slightly.
  • Variations - Add a can of black beans (rinsed and drained) to the meat mixture after incorporating the cream cheese.
  • Toppings (suggestions) - Salsa, lettuce, Chopped Olives, Chopped Onion, Chopped tomatoes, chopped jalapeno's.

1 tablespoon vegetable oil
1 onion, chopped
½ teaspoon ground cumin
salt and ground black pepper to taste
2 (15 ounce) cans black beans, drained and rinsed

1 cup water
1 (1.25 ounce) package taco seasoning mix
2 cups cooked rice

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onion, cumin, salt, and pepper. Saute until onion is tender, about 5 minutes. Add black beans, shredded turkey, 1 cup salsa, corn, water, and taco seasoning. Mix well. Cover and simmer until flavors meld, about 5 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).

1 pound ground turkey ( or chicken, I used 93% lean ground turkey)
1 medium yellow onion (diced)
1 cup uncooked quinoa
2 (10-ounce) cans red enchilada sauce
1 (15-ounce) can black beans (drained and rinsed)
1 (15-ounce) can fire-roasted diced tomatoes in their juices
1 cup corn kernels (fresh or frozen)
1 red bell pepper (cored and diced)
1 green bell pepper (cored and diced)
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon garlic powder
1/2 cup water
1 cup shredded Mexican blend cheese (divided)
For serving: chopped fresh cilantro (diced avocado, chopped green onion, sour cream or plain Greek yogurt)

Steps:

  • Heat the olive oil in a large skillet or Dutch oven over medium high. Add the turkey and onion. Cook and stir, breaking up the turkey as you go, until the turkey is no longer pink, about 5 minutes. Transfer to the bottom of a large slow cooker.
  • To the slow cooker, add the quinoa, enchilada sauce, black beans, tomatoes, corn, red bell pepper, green bell pepper, chili powder, cumin, garlic powder, and 1/2 cup water. Stir to combine, then cover and cook on high for 2 1/2 to 3 hours or low for 5 to 6 hours, until the liquid is absorbed and the quinoa is tender.
  • Remove the lid and stir. Taste and adjust any seasonings as desired. Stir in 1/2 cup of the shredded cheese, then sprinkle the remaining cheese over the top. Cover and cook on high until the cheese melts, about 10 to 15 minutes. Serve hot with any desired toppings.

  • Heat oven to 350°F. Spray 9 X 13 inch pan with cooking spray.
  • In your bowl, stir together beans, tomatoes, cilantro and cumin.

1/2 pound lean ground turkey
1 cup finely chopped onions
1 cup finely chopped zucchini
1 envelope (1 1/4 ounces) low-sodium taco seasoning
2/3 cup frozen corn kernels
1 cup canned black beans, rinsed and drained
2 cups jarred salsa
8 (6-inch) corn tortillas
1 1/2 cups shredded reduced-fat Mexican cheese blend
1/4 cup sliced scallions (white and light green parts only)
1/2 cup fat-free sour cream (or use low-fat; optional), for serving

Steps:

  • 1. Preheat the oven to 350°F. Spray a 9 by 13-inch baking dish with cooking spray.
  • 2. In a large skillet, heat the oil over medium-high heat. Add the turkey and cook until browned, 5 to 7 minutes. Stir in the onions and zucchini and cook until tender, about 5 minutes. Stir in the taco seasoning, 2/3 cup water, and the corn. Simmer until thickened, about 2 minutes, then stir in the black beans.

3 medium poblano peppers, seeded and stemmed, chopped
1 cup chicken stock
2 cloves garlic, chopped
1 small onion, chopped
A small handful fresh cilantro leaves, plus a few leaves for garnishing
Salt and freshly ground black pepper
3 tablespoons butter
2 tablespoons flour
1 cup milk
1/2 cup heavy cream or Mexican crema
2 tablespoons EVOO
3 tablespoons butter
12 ounces sliced button or crimini mushrooms
2 cups fresh (about 4 ears) or frozen and defrosted corn kernels
2 shallots or 1 small red onion, chopped
4 to 5 cups chopped cooked turkey meat
1 cup chicken stock
Six 8-inch flour tortillas
2 1/2 cups shredded Monterey Jack or Cheddar
1 1/2 cups shredded Manchego cheese

Steps:

  • For the sauce: In a blender or food processor, combine the peppers with the stock, garlic, onions, cilantro and some salt and pepper, then puree. In a saucepot over medium heat, melt the butter, then whisk in the flour. Add the milk and cream and raise the heat a bit. Add the poblano puree and simmer to thicken and cook the sauce, 20 to 25 minutes.
  • For the casserole: Heat the EVOO in a large skillet over medium-high heat; add the butter and melt into the oil. Brown the mushrooms, about 10 minutes. Then add the corn and shallots, and cook to lightly brown the corn and soften the shallots, about 5 minutes more. Add the turkey and stock and heat through.
  • Char the tortillas over an open flame on a gas burner, or in dry skillet.
  • Layer half the turkey, mushrooms and corn in a casserole dish, and top with half the sauce, cheese and a shingled layer of 3 tortillas. Top the tortillas with the remaining turkey, mushrooms and corn, tortillas, sauce and cheese. Cool and store for a make-ahead meal, or bake to serve. Bake at 400 degrees F from room temperature until heated through and brown and bubbly.

1 tablespoon vegetable oil
1 onion (finely chopped)
4 cups cooked turkey (chopped; dark and white meat mixed is fine)
1 tablespoon taco seasoning
1 (2-oz) can sliced black olives
1 cup corn
1 (15-oz) can black beans (drained)
1/2 cup sour cream
1 (15-oz) can red enchilada sauce
12 (8-inch) corn tortillas (warmed (see notes on tortilla types and amount needed))
3 cups shredded cheese (or less to taste)

Steps:

  • Prep: Preheat oven to 360°F.
  • Sauté onion and turkey: Heat oil in large skillet over medium heat. Add onion and cook until softened, 3-4 minutes. Stir through turkey and taco seasoning, add 2-3 tablespoon water (or chicken broth). Sauté until turkey meat has soaked up all liquid, about 1-2 minutes. Take off the heat.
  • Make filling: Stir black olives, corn, black beans and sour cream through turkey mixture. Add 1/2 cup of enchilada sauce and combine well.
  • Assemble: Spread another 1/2 cup enchilada sauce in bottom of 9x13 inch casserole dish. Divide filling between warmed tortillas. Sprinkle with 1 tablespoon cheese each, then fold and arrange seam down in prepared dish.
  • Finish and bake: Spread remaining enchilada sauce on top, sprinkle with remaining cheese. Bake in hot oven for 25 minutes, or until fully heated through and bubbly around edges. Let sit on counter for 5 minutes, then serve.
