Have breakfast ready in just 20 minutes! Filled with scrambled eggs, cheese and tomato, these tasty wraps make a great Mexican breakfast or brunch.

1 large green bell pepper, chopped (1 cup)
1 large onion, chopped (1 cup)
1 3/4 cups fat-free egg product (from two 8-oz cartons)
1/3 cup fat-free (skim) milk
1/8 teaspoon pepper
4 fat-free flour tortillas (8 to10 inch)
1/2 cup shredded fat-free Cheddar cheese (2 oz)
1/4 cup chopped tomato
1/4 cup chopped fresh cilantro

Steps:

  • Spray 10-inch skillet with cooking spray; heat over medium heat. Add bell pepper and onions; cover and cook 4 to 6 minutes, stirring occasionally, until tender.
  • In medium bowl, mix egg product, milk and pepper until well blended. Spray vegetables and skillet with cooking spray. Pour egg product mixture over vegetables; cook until set, occasionally stirring gently.
  • Meanwhile, heat tortillas as directed on package.
  • To serve, place warm tortillas on individual plates. Spoon scrambled egg mixture down center of each tortilla. Top each with cheese, tomato and cilantro. Roll up tortillas.

My husband grew up in Southern California and loves chorizo. We use the spicy sausage in these chorizo and egg wraps that our children call Daddy's Eggs.-April Nissen, Yankton, South Dakota

12 ounces fresh chorizo
6 large eggs
2 tablespoons 2% milk
1 cup shredded cheddar cheese
6 flour tortillas (8 inches), warmed
Optional toppings: Thinly sliced green onions, minced fresh cilantro and salsa

Steps:

  • Remove chorizo from casings. In a large cast-iron or other heavy skillet, cook chorizo over medium heat until cooked through, breaking into crumbles, 6-8 minutes. Drain and return to pan., In a small bowl, whisk eggs and milk until blended. Add egg mixture to chorizo. Cook and stir until eggs are thickened and no liquid egg remains. Stir in cheese. Spoon 1/2 cup egg mixture across center of each tortilla. Add toppings of your choice. Fold bottom and sides of tortilla over filling and roll up.

Make the most of leftovers from a roast chicken with these Mexican chicken and black bean wraps, which need just 15 minutes to prep. Ideal for a midweek meal

1 tbsp sunflower oil
1 onion , finely sliced
3 garlic cloves , crushed
1 tsp ground cumin
1 tsp smoked paprika
1 tsp dried oregano
400g can black beans , drained but not rinsed
about 150g cooked chicken
4 pickled chillies , chopped
3 tomatoes , roughly chopped
small handful coriander leaves , chopped
4 floured tortillas (seeded or wholemeal if you prefer)
100g cheddar , grated
100g plain yogurt
50g chipotle sauce
1 lime , quartered
guacamole (optional)

Steps:

  • Heat the oil in a frying pan, tip in the onion and fry for 5 mins until golden. Stir in the garlic, cumin, paprika and oregano and cook for 2 mins. Tip in the beans and the chicken and heat through, then stir in the chilli, tomatoes and coriander, season and keep warm.
  • Lay a tortilla in a non-stick pan, sprinkle with cheese and heat until melted. Slide the wrap onto a board, spoon over a quarter of the chicken filling and roll up tightly. Repeat to make three more wraps. Mix the yogurt and chipotle sauce and serve on the side with guacamole and lime wedges for squeezing over.

6 large eggs
2 tablespoons 2% milk
1/4 teaspoon pepper
1 tablespoon canola oil
1 cup shredded cheddar cheese
3/4 cup diced fully cooked ham
4 flour tortillas (8 inches), warmed

Steps:

  • In a small bowl, whisk the eggs, milk and pepper. In a large skillet, heat oil. Add egg mixture; cook and stir over medium heat until eggs are completely set. Stir in cheese and ham. , Spoon egg mixture down the center of each tortilla; roll up. Freeze option: Wrap cooled egg wrap in foil and freeze in a freezer container. To use, thaw in refrigerator overnight. Remove foil; wrap tortilla in a moist paper towel. Microwave on high until heated through, 30-60 seconds. Serve immediately.

  • In a large skillet add the ground beef, break it up then add the onion, chili powder, cumin, and taco seasoning. Stir well and cook for 3 to 5 minutes until the beef is no longer pink and the onion is translucent. Add the garlic and fire roasted tomatoes and cook for another 3 minutes or until all liquid is gone. Transfer to a bowl. Drain the fat if any.
  • Wipe the skillet with a paper towel. Add the eggs, season with salt and pepper and gently whisk until they start to set and are cooked. Transfer to a bowl.
  • Assemble the wraps by layering ingredients on the flatbreads. Start with about 1 or 2 tbsp of hash brown potatoes, a couple tbsp of beef mixture, 1 tbsp of black beans, 2 tbsp scrambled eggs, 2 tbsp cheese and cilantro, then roll up tightly. Repeat with remaining ingredients. You should have enough ingredients for about 14 wraps.

  • Heat a large non-stick pan to high heat. Add diced bacon, bell peppers, onion, jalapeno and olive oil. Cook on high for 3-4 minutes or until bacon is crispy. Transfer to a bowl, wipe down pan and return the pan to heat to cook eggs.
  • In a large bowl, whisk the eggs, half & half and salt. Pour 1 tablespoon olive oil or butter into the pan and heat for 1 minute. Add eggs and 1/2 cup of shredded cheese. Cook, stirring frequently for 2 minutes or just until the eggs begin to set. transfer eggs into another bowl and wipe down pan again.
  • Lay each tortilla on a clean flat Surface, fill each tortilla with scrambled eggs, some of the veggie mixture and cheese. Fold into a tight burritos shape. Toast for 1-2 minutes per side with a teaspoon of olive oil or butter in the same pan until the outside is crispy and golden. Serve warm with your favorite salsa.
