MEXICAN MESS (BEAN DIP)
This isn't very pretty. You can add another cup of cheese on top if you want and add veggies, guacamole and sour cream to make it more like nacho dip. I personally can eat the whole thing just like it is. Leftovers go well in a soft tortilla.

- Spray a pie plate.
- Mix all ingredients and place in pie plate.
- Bake at 350 degrees for about 15 minutes or hot in the center.

Steps:
- Heat oil in skillet over medium high heat.
- Cook onions until translucent.
- Add garlic, taco seasoning and ground beef, cook until brown.
- Stir in green chilies.
- Preheat oven to 400 degrees.
- Lightly grease pie plate and cover bottom with 4 tortillas.
- Layer in this order: 1/2 beef mixture, 1/2 cheese, 4 tortillas, beans, 4 tortillas, chipolte peppers, 4 tortillas, remaining beef, remaining cheese.
- Bake 30-40 minutes uncovered, or until cheese is melted.
- Serve with toppings of choice (salsa, sour cream, and guacamole).
- Leave out the chipolte peppers if you do not like spice, feel free to add black beans with refried beans for extra protein, and substitute leftover chicken or turkey for the beef with ease. Double recipe to freeze ahead for a lazy or crazy day.

- Preheat the oven to 200°C (fan bake). Cut 4 (17cm diameter) circles out of the pastry, re-rolling the pastry as necessary. Line 4 individual pie dishes (8cm diameter) with the pastry, allowing the excess pastry to hang over the sides of the dishes. Set aside while preparing the filling.
- Mix together Wattie’s Mexican Style Red Kidney Beans and Wattie’s Frozen Chuckwagon Corn Mix. Divide the filling between the pastry cases.
- Sprinkle grated cheese over the beans. Fold in excess pastry over the bean filling. Brush pastry top with a little beaten egg or milk. Bake for 20-25 minutes until pastry is golden and filling hot.
