THE BEST CHILI
There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

Steps:
- Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
- Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
- Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
- Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
- Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
- Top with sour cream, Cheddar and scallions. Serve with tortilla chips.
MELANIE'S CHILI
This chili is so easy to make and is so good! Trust me. To make a double batch, double everything except the meat and onion. Use 1 can each of pinto and kidney beans, that is how I normally make it.

- In a Dutch oven, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in zucchini and carrots. RIDICULOUSLY EASY MEATLESS CHILI RECIPE
This meatless chili recipe is perfect for those days when you don't have time to slave over the stove while your meal simmers and doesn't require much more than opening a few canned goods to create to a delicious and healthy meal.

- In a large pot, heat the olive oil over medium heat
- Once warm, add the diced onion and saute until translucent and soft, about 5-8 minutes
- Add the vegetable broth and stir to pick up any browned onoins that might have stuck to the bottom of the pan
- Add the drained black beans, kidney beans and jar of marinara sauce. Stir to combine
- Add the cumin, paprika, and chili powder. Stir to combine and allow to simmer for an additional 10-12 minutes, stiring frequently.
- Add the can of refried beans to thicken the chili and stir well to combine. Reduce heat to low and simmer an additional 5 minutes.
- Taste and season with salt and pepper as need. Garnish with your favorite toppings like shredded cheese, a dollop of greek yogurt, scallions, chives, sliced olives or a squeeze of lime.
QUICK AND EASY MEATBALL CHILI
Kind of a "short-cut" chili. It uses premade frozen meatballs, but you can use your own homemade....it just won't be a squick and easy. ;) This can also be made in a crockpot on low for about 6 hours.

Steps:
- Cut the meatballs into quarters.
- Place the cut meatballs in a large pot. Add all the rest of the ingredients (EXCEPT CHEESE). Stir well.
- Bring to a gentle simmer.
- Cover and simmer for 30-35 minutes.
- For the Crockpot: Place the quartered meatballs in the crockpot along with everything else (EXCEPT CHEESE).
- Cover and cook on low for about 6 hours or on high for about 4 hours. (All crockpots seem to cook a little faster or slower than others.).
- Serve hot with some cheese on top, if desired.
