This recipe appeared in the September 2008 issue of 'Taste of the South' magazine and it hails from the 'Mennonite Country-Style Recipes book. It is a little different than the other posted 'Zaar recipes, saving it here for later use!! **Be sure to read my note about 'Vanilla' at the bottom of this recipe!!

Number Of Ingredients 16

3 large eggs
1 1/4 cups vegetable oil
2 teaspoons vanilla extract
2 cups sugar
3 cups flour, divided
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
3 cups chopped apples
1 cup chopped walnuts or 1 cup pecans
1 cup sweetened flaked coconut
1/3 cup butter
1 cup firmly packed brown sugar
1/4 cup milk
1 teaspoon vanilla

Steps:

  • Preheat the oven to 350*, Grease a 9 inch tube or Bundt pan and set aside.
  • In a large mixing bowl beat eggs with an electric mixer. Add the vanilla and sugar, beating well.
  • MIx 1/4 cup flour with the apples, nuts and coconut and set aside. Add remaining dry ingredients to the egg mixture and combine. Fold the fruit mixture into the batter and pour into the prepared pan. Bake for 70 minutes, remove from oven and allow to cool for 5 minutes. Remove cake from pan. Meanwhile combine topping ingredients in a saucepan and boil for 2-3 minutes, pour hot topping over warm cake.
  • **This recipe can also be baked in a 13x9 inch pan plus a 9x5 loaf pan for 40-45 minutes.
  • ** I love to bake, bake professionally, and have found Mexican Vanilla to be more aromatic and tastier than most brands in the stores. I order it my the case, yes, 12 quarts about every two years. The brand that I buy is 'LaVencedora' and I was introduced to it in Santa Fe, New Mexico. It is available on line by searching the name, try it, you will never use any other vanilla!

This is the best apple cake that I have ever eaten. It is so amazing!!! My mom has been making it for as long as I can remember. I made it for work one time and everybody that I worked with absolutely loved it. Hope you enjoy.

1 1/2 cups cooking oil
2 cups sugar
3 eggs
2 teaspoons vanilla
3 cups plain flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup chopped pecans
3 cups grated apples
1 cup packed brown sugar
1/4 cup milk
1/2 cup margarine

Steps:

  • Mix oil, sugar, eggs, and vanilla together.
  • Sift the plain flour, salt, soda, & cinnamon together and then add to the wet mixture.
  • Fold in the pecans and apples last.
  • Mix by hand as batter is very stiff.
  • Bake in a greased & floured 13x9 pan at 350 for 40-45 minutes.
  • To make topping: Mix the brown sugar, milk & margarine and bring to a boil on the stove. Boil for 3 minutes.
  • Punch holes in the cake with a wooden spoon and then pour the topping over the cake.
  • Allow the cake to sit until cool.
  • Enjoy!

1 cup vegetable oil
½ cup butter, softened
1 ½ cups white sugar
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon vanilla extract
2 cups diced apple without peel
1 cup flaked coconut
1 cup raisins
1 cup chopped walnuts
1 cup brown sugar
½ cup butter
¼ cup milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour one 10 inch tube pan.
  • Combine oil, butter or margarine, and sugar together. Beat well with a mixer. Add eggs, flour, baking soda, salt, and vanilla; mix well. Stir in apples, coconut, raisins, and walnuts. Pour batter in prepared pan.
  • Bake for 90 minutes. Remove cake from oven. Let it cool in the pan for a few minutes, and then remove from pan.
  • If desired, make glaze. In a small saucepan, heat brown sugar, butter or margarine, and milk. Bring mixture to boil, and stir for 1 minute. Pour over warm cake.

1 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
2 cups sugar
1 1/3 cups vegetable oil
3 large eggs, at room temperature
2 teaspoons vanilla extract
2 granny smith apples, peeled, cored, and cut into 1/4-inch pieces
1 cup walnuts, toasted and chopped
1/2 cup packed light brown sugar
4 tablespoons unsalted butter, cut into 4 pieces
2 tablespoons milk

Steps:

  • Position oven rack in middle position; preheat oven to 350°; grease a 16 cup tube pan.
  • Whisk the flour, cinnamon, baking powder, baking soda, and salt together in a bowl.
  • In a big bowl, beat the sugar, oil, eggs, and vanilla together using an electric mixer on medium speed until thick and glossy, about 2 minutes.
  • Decrease mixer speed to low and slowly beat in the flour mixture, in 3 additions, until just incorporated.
  • Stir in apples and nuts.
  • Scrape batter into prepared pan; smooth the top.
  • Wipe any drops of batter off the sides of the pan and gently tap the pan on the counter to settle the batter.
  • Bake for 50-60 minutes, until a wooden pick comes out with a few moist crumbs attached, rotating the pan halfway through baking.
  • Let the cake cool in the pan for 10 minutes; run a small knife around the edge of the cake to loosen, then flip it out onto a wire rack.
  • Turn the cake rightside up and let it cool completely, about 2 hours.
  • The glaze: boil all of the glaze ingredients together in a small saucepan over med-high heat until thick and syrupy, about 1-2 minutes.
  • Drizzle the thick glaze over the top and sides of the cake, let the glaze set, about 25 minutes before serving.
